If I could only choose one flavor combo to get me through the winter, it would have to be apple cinnamon!
I know banana bread is usually all the rage, but apple bread takes the cake for me! (Pun intended, because this is basically just a healthier version of cake.)
If you’re looking for an easy quick bread that pairs perfectly with a mug of coffee or tea, and is *extra* delicious when enjoyed under a cozy blanket on the couch, look no further. I might even add a schmear of almond butter on top honestly, or coconut ice cream…now we’re talking!
This cinnamon apple protein bread is made with protein powder (for added protein of course, but also flavor!), and is both gluten free and dairy free. It’s moist the way baked goods should be, but not so much so that it falls apart…you know what I mean? I hate when that happens! I also used allulose, which is what I use in pretty much all of my recipes, because it’s low glycemic, contains zero sugar and tastes amazing, but you can use anything you’d like!
Cinnamon Apple Protein Bread
3 eggs
3/4 cup allulose or any granulated sweetener
1 tsp vanilla
1/3 cup melted coconut oil
1/4 cup vanilla protein (I used this one)
1 cup oat flour
1/2 cup coconut flour
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp ground ginger
1 cup finely diced apples (I used honeycrisp!)
- Preheat the oven to 375 degrees and line a loaf pan with parchment and/or spray with coconut oil.
- In a large bowl, whisk together eggs, sweetener, coconut oil and vanilla.
- Add in oat flour, coconut flour, protein powder, baking soda, baking powder and spices and stir to fully combine.
- Fold in apples, then pour into an even layer in the loaf pan. Bake for 35-45 minutes, or until slightly firm to the touch.
- Let cool for at least 30 minutes before slicing, otherwise it’ll get too crumbly and dry out! i know it’s hard, but patience is a virtue 😉
