And let me tell you – this is easily one of my favorites. It’s so perfect for fall with cozy flavors like pumpkin pie spice and rich coffee, but it’s also packed with good-for-you ingredients like collagen, protein, fiber-rich pumpkin, and coconut butter for healthy fats! So even though they’re a treat (with a touch of caffeine!), you definitely don’t have to feel any guilt whatsoever if you eat a few😊

The recipe here is adapted from this one and you’ll see that I used Ancient Nutrition’s Cold Brew Coffee Multi-Collagen Protein powder. You’re more than welcome to use any collagen or protein you choose if you don’t have this on hand – just know it may change the flavor just a touch!

And one more thing! These donuts can be kind of crumbly when you first take them out of the donut pan so 1) be sure to spray that coconut oil or ghee or whatever you’re using before each batch, and 2) let them cool for about 5-10 minutes before removing them from the pan. Gently take a spoon to insert around the edges, then lift up slowly.

Pumpkin Spice Latté Donuts

1/2 tsp salt

1/2 tsp vanilla

2 tsp pumpkin pie spice

1 2/3 cups whole wheat or all-purpose flour

1/3 cup Ancient Nutrition Cold Brew Collagen Protein (or more flour)

1/2 cup Swerve Sweetener (or brown sugar)

2 tsp baking powder

2 eggs

1 cup pumpkin purée

1/2 cup cashew or almond milk

1/4 cup ghee or butter (soft, but not melted)

2 tbsp espresso (optional)

Pumpkin Frosting

equal parts coconut butter and pumpkin purée

(I did about 4 tbsp each for 1/3 of the donuts)

1. For the donuts: Preheat the oven to 325 degrees fahrenheit. Grease a donut pan with ghee or coconut oil (a spray works easiest for this!).

2. In a large bowl, combine the dry ingredients: flour, collagen powder if using, sweetener/sugar, baking powder, pumpkin pie spice, and salt. 

3. Add in pumpin purée, eggs, milk and ghee and stir to mix completely until batter is thick.

4. Using a spoon or piping bag, fill the donut trays almost to the top (about 3/4 of the way). 

5. Bake for about 12-14 minutes or until a toothpick is inserted and comes out dry. Let cool for 5-10 minutes before gently pressing a spoon around the edges of each mold, and lifting up slowly.

6. For the frosting: Melt the coconut butter in a bowl in the microwave in 20 second increments until soft. Stir in the pumpkin purée until completely combined. Spoon onto donuts and press down firmly to coat. *Frosting will be pretty thick and maybe even hard to handle! Coconut butter softens with touch, so I used my fingers to press it down onto the donuts.

Grandma Dottie’s Mandel Bread

My grandma was a fighter.

She was the sassiest person I know, my biggest supporter, she always spoke her mind (and said things like, “don’t let the door hit you in the ass on your way out,”), and she made a mean batch of mandel bread.

Earlier this week, my mom said to me while she was standing in our kitchen, “all i want to do is bake. This is my happy place,” and after a few hours of mixing & kneading dough, she told me that she had more energy that she’d had in days. We ate a few pieces of mandel bread together (kind of like biscotti, but better!) and remembered my grandma.

And THAT is the power of baking, cooking, and food in my opinion. It’s the memories, its ability to bring people together, and joy that comes from a good recipe, even when you thought there was no joy to be felt. So grandma, this one’s for you.

Grandma Dottie’s Mandel Bread

1/2 cup vegetable oil

3/4 cup sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking powder

1 cup mixed nuts and raisins

1. Preheat the oven to 350 degrees Fahrenheit.

2. In a large bowl, mix together the oil and sugar. Then add the eggs and vanilla, and mix until fully combined. Fold in the flour, baking powder and nuts.

3. Flour the bottom of a baking pan and pour dough into an even layer in the center of the baking sheet (about 1/2 inch thick) *it won’t cover the whole pan, not even close!

4. Bake for 30 minutes then remove from the oven. Slice into 1 inch thick bars (like biscotti) and flip. Bake for another 10 minutes.

5. Let cool and store in an airtight container for up to 5 days – or eat them immediately with a loved one and remember how important family is, how lucky we are to have good people in this world that support us, and how precious life is.

2 Chocolate Recipes for Your Raging Sweet Tooth: Chocolate Cookie Cups & Spiced CBD Truffles

I’m going to share something with you and if you know me at all in person, it probably won’t come as much of a surprise…

But I literally eat dessert every single night. If we’re being honest here, I probably eat dessert multiple times a day, but most days I try to limit it to once😅

I used to bake a lot, like a whooole lot, and since I’m no longer an athlete for my day job, I’ve had to cut back a bit. That being said, I’ve found some other ways to make treats for myself without going HAM on a loaf of banana bread or eating 6 cookies at once. These days, I’m trying to make desserts that are slightly less sweet (so I can work on curbing my sugar addiction…) and also don’t tempt me to eat the whole batch at once. Luckily I live with my boyfriend, which means I always have someone who can share with me😊

The good thing about the following two recipes is that 1) there’s portion control built into the first one (since you can actually make them one at a time!) and 2) the CBD truffles actually aren’t super sweet, so you’d probably want to stop after a couple, anyway. Both are delicious, insanely easy to make, and not a ton of ingredients. The first is definitely sweeter, and definitely less healthy, but so worth every calorie (we don’t count those here) and the second has a little twist with some CBD coconut oil, although you could easily swap that out with regular! And now, onto the recipes!🍫

3-Ingredient Chocolate Cookie Cups

2 cups chocolate chips (regular or vegan!)

2 tbsp 4th and Heart Vanilla Bean Ghee (or coconut oil or regular ghee!)

4 Emmy’s Organics Cookies (or your favorite soft cookie/cookie dough)

1. In a microwave-safe bowl, heat the chocolate chips with the ghee in 30 second intervals until completely melted (mine took about 75 seconds!)

 2. Pour a tbsp or so of melted chocolate into silicone cups and pop in the freezer for about 10 minutes to harden.

3. Take your cookies and using using your hands, form into little discs that will fit into the silicone cups (I halved each Emmy’s Organics cookie and it was the perfect size). Press those into the hardened chocolate until they form a nice even layer.

4. Pour another tbsp or so of chocolate on top, put them back in the freezer for another 10, and then dig in!!

Spiced CBD Truffles

(inspired by this recipe)

1/2 cup CBD Golden Spice Coconut Oil (or regular coconut oil + 1/8 tsp each cinnamon, turmeric & cardamom)

1/2 cup dark cocoa powder or cacao powder (I did half and half!)

5 tbsp honey or maple syrup

pinch of sea salt

1/4 cup raw, shredded coconut (the unsweetened kind!)

1/2 tsp cinnamon

2 tbsp coconut sugar

1. Melt the coconut oil in the microwave (should take less than 30 seconds) and stir in the cocoa & cacao powders, liquid sweetener and sea salt until smooth.

2. Place the bowl in the fridge for at least an hour, or in the freezer for 20 minutes until it hardens to a ganache-like consistency.

3. While the chocolate is in the fridge, make the truffle coating by mixing the coconut and spices in a small bowl or on a plate.

4. When the chocolate has hardened, form small 1/2 inch or so balls with your hands. Then, coat in the balls in the spice, coconut & sugar mix.  *This step is messy, just fyi! I’d definitely do it near a sink 🙂 

5. Let harden again in the fridge until ready to eat. Store in an airtight container for up to 5 days.

To say I am excited would be the understatement of the century. I’m literally counting down the minutes until I get to see family and friends, bake a crap ton of cookies with my mom, and spend my first holiday ever with my boyfriend. PUMPED.

Okay now that I’ve exploded with holiday cheer, let’s move on to more pressing matters: these COOKIES. Let me express to you just how good they are – I’m rationing them so that I don’t run out before I go home for the holidays. Like instead of shoveling them all in my mouth at once, I’m actually savoring them bite by bite and THAT is saying a lot. And before you go thinking I’m all full of myself and stuff because I made a recipe that is full on inspiring me to possibly open up a bakery someday, I just want you to know that I legitimately set out to make these as an experiment and thought they might turn out terrible and crumbly and dry like lots of healthy desserts are…but! Thank cookies could not be more opposite of that.

I don’t even know how these have zero dairy in them…it’s kind of mind-blowing. And they 110% do NOT crumble. Isn’t that nuts?! That’s like my biggest pet peeve with some shortbread recipes. I think the best thing about these guys, aside from them being vegan friendly, is that they’re just the riiiiight amount of sweetness. Apparently there are people in this world that don’t love desserts and sugary things (WHO ARE YOU PEOPLE AND WHERE ARE YOU FROM), but these are the perfect cookies for those people.

And I know these are super Christmas-y or seasonal or what have you, but I think that’s what makes them perfect for the holidays. I think we all tend to OD on the rich stuff, the peppermint and chocolate and pecan and all that, so to have something a bit lighter as an option is nice! I know lavender isn’t something people always have on hand, but this recipe coupled with my lavender almond milk latté should give you enough reason to stock up now😉

Vegan Maple Lavender Shortbread Cookies

1/2 cup coconut oil (cooled & hard – pop it in the freezer for a sec if you need to!)

1/3 cup natural powdered sugar (*check this list for vegan sugar brands!)

1/4 tsp sea salt

1/2 tsp Lavender Flowers *go for culinary grade!

1 1/3 cup all-purpose flour

3 tbsp maple syrup

3 tbsp non-milk – coconut, almond, soy, etc.

1. Preheat the oven 350 degrees fahrenheit and line a baking sheet with parchment paper (ideal, but if you don’t have any just use lots of coconut oil!).

2. In a large bowl combine the coconut oil, powdered sugar and sea salt with a fork until all the sugar is combined and light & fluffy (might take a minute or so depending on your arm!).

3. Add the lavender flowers, then the flour 1/3 cup at a time and use your hands or the fork to combine. Don’t use an electric mixer for this one!

4. Finally, add the non-dairy milk and the maple syrup one tablespoon at a time and be careful not to not overmix! The dough may seem dry but try not to add any extra liquid here as it will mess with the consistency of the cookies.

5. Lightly dust a cutting board or clean surface with flour. Form the dough into a ball and then roll it out until it’s about 1/4 inch thick. Use a cookie cutter, mason jar, or glass to form the cookies into shapes.

6. Place the cookies on the parchment paper and bake for 10-12 minutes. *Check on them at 10 minutes just in case! You’ll want to take them out when they’re juuuuust starting to brown on the edges. They overbake quickly!

7. Let cool completely before noshing – I promise they’ll taste better this way! Store in an airtight container for up to 5 days.

Made with the Immaculate Baking Co organic crescent roll dough, these pumpkin-pie rolls come together in just a few minutes and all things considered, aren’t all that bad for you! I love that the dough is organic because certain family members of mine really value eating organic foods, and in comparison to other crescent roll doughs I’ve tried, these are super soft and ever-so-slightly sweet. Paired with organic cream cheese, canned pumpkin, and coconut sugar, these make the perfect treat for breakfast, a mid-afternoon snack, or post-dinner sweet. If you have a ton of guests, or just want extras for seconds, this recipe is also really easy to double or even triple!

Easiest Pumpkin-Pie Crescent Rolls 

1 tube of Immaculate Baking Organic Crescent Roll Dough (makes 8)

2 oz. organic cream cheese (can be low-fat if you really want, but also #treatyoself)

1/2 cup organic canned pumpkin – not pumpkin pie mix!

7 tbsp coconut sugar – 4 for the filling, 3 for the topping

1 tbsp cinnamon (+ 1 tsp for the topping)

1 tbsp pumpkin pie mix (+1 tsp for the topping)

1. Preheat the oven to 375 degrees fahrenheit. Roll the crescent roll dough onto an un-greased baking sheet covered in parchment (if you have it!) and separate the triangles.

2. In a medium sized bowl, beat together the cream cheese, pumpkin, 4 tbsp of coconut sugar, and spices until creamy. Spoon one tbsp of filling onto each triangle of dough and spread into an even layer in the middle.

3. Roll the triangles up from the wider end to the skinnier end. Don’t be afraid if some of the filling seeps out, it’s all good!

4. In a small bowl, combine the remaining spices and coconut sugar. Using a tablespoon, carefully shake the topping mix onto each roll (about 1/2 tablespoon of coating for each).

5. Pop ’em in the oven for 15 minutes then remove and let cool for 5 minutes. Enjoy immediately, or store in an airtight container in the fridge for up to 1 day. *I’d reheat them for 10 seconds or so in the microwave if they’ve been chilled!

As someone who used to have a non-traditional job for 5 years, it’s still weird for me sometimes to think of weeks as Monday through Friday, and weekends as actual weekends… but anywho, where I’m going with this is that sometimes you need a lil somethin’ somethin’ to spruce up a weekday since counting down the minutes until the weekend is no way to live, y’all.

I made these donuts last Sunday when I had some extra time to myself, and having them as a mid-week treat has seriously brightened up an otherwise fairly boring day. I recently got my hands some of the Rootz Nutrition paleo protein superfood in Chocolate Banana Nut and I can confidently say that I have upped my smoothie game. Since this stuff has so many awesome benefits, I’ve been trying to find new ways to incorporate it into my diet because as much as I would love to have smoothies for breakfast, lunch and dinner, that’s probably not actually the most nutritious option. After browsing Pinterest for allllll the donut recipes, I kind of mushed some of them together to come up with this one. I’ll be honest, I did a pretty good job guys. These have the perfect amount of sweetness, stay moist for days when you keep them in the fridge, and are just the right size for when you want a little treat. Plus, they’re DONUTS which makes them feel extra special, y’know?

Chunky Monkey Protein Donuts

1 egg

1/4 cup peanut or almond butter

1 large ripe banana

2 1/2 tbsp melted coconut oil

3 tbsp coconut flour

2 tbsp Rootz Nutrition Paleo Chocolate Banana Nut Protein (or any protein powder)

1/2 tsp baking powder

1/2 tsp vanilla extract

pinch of cinnamon

1/2 cup mini chocolate chips (optional)

 

1. Preheat the oven to 350 degrees fahrenheit and coat the bottom of a donut tin (mini or regular) with coconut oil.

2. In a large bowl, mash the banana and stir in the nut butter, melted coconut oil and egg until completely combined and mostly smooth. *You can put the ingredients in a blender if you’d prefer, but sometimes I like not having to do the extra dishes!

3. Add the coconut flour, protein powder, baking powder, vanilla and cinnamon, and stir until well-combined, but careful to not overmix! If you’d like, you can fold in the chocolate chips here, or use them later as a drizzle on top like I did.

4. Using a spoon (and a wet finger), fill each donut cavity about halfway with batter. I like to fill mine just slightly over half so they’re a bit bigger 😉 Bake for 12-15 minutes, or until dough is firm.

5. Let donuts cool for at least 10 minutes before removing from the pan. You’ll want to run a spoon along the edges to make sure the donut hasn’t stuck to the pan, then carefully spoon each donut onto a plate or wire rack to finish cooling.

6. If you’d like, you can melt the chocolate chips in a bowl with a touch of coconut oil (I’d heat them for about 20 seconds at a time), and then drizzle the melted chocolate over the donuts once completely cooled. Store in an airtight container in the fridge for up to 3 days and pop in the microwave for 15 seconds before eating!

Nutty Whole Grain Chocolate Chip Cookies [Gluten-Free!]

I apologize for being semi-MIA these past few days, I’ve been out on the east coast hanging with my family in my all-time favorite place in the entire world, the Outer Banks in North Carolina!! I’ve been coming here since I was a toddler and I have so many wonderful memories of coming here with friends and family, and being here instantly re-charges my batteries.

One of my favorite things to do while I’m on vacation, especially when it’s with my mom, is cook or bake! Since we stay in our beach house down here, we have access to a full kitchen (which can be rare on vacations), so home-cooked dinners & desserts are easier and more fun to make. My mom recently came across this recipe for whole-grain chocolate chip cookies in the Wall Street Journal and we knew we needed to make them. I’ll be honest, we don’t usually opt for healthier versions of anything while we’re in OBX (because hey, we’re on vacation!), but we do have someone new joining our family very soon, and she has Celiac’s, so we’re working on incorporating more gluten-free foods when we’re all together. (Wait…did I tell you my brother was engaged?!?!)

Anyway, these cookies are slightly healthier than normal chocolate chip cookies since they’re made with oat and buckwheat flour – both of which are packed with fiber and help improve heart health. A couple of tips: I’d let them cool completely before putting them into a tupperware (unless you’re eating them immediately when they’re warm, which I definitely condone!) otherwise they’ll crumble. Also, if you can remember, leave the butter out the night before you want to bake so that it’s super soft and you won’t even need to use an electric beater! That’s one less dish to clean aka a win-win.

In any case, I totally suggest making these the next time you need to bring or have dessert for a group, since this recipe makes about 2 dozen good size cookies and I can promise you that they are a crowd-pleaser! Even my very skeptical bf enjoyed them, and that is saying a LOT. They’re the perfect amount of sweetness and have so much more flavor to them than regular cookies. They also have a cool texture too, like a bit crunchy on the outside, but also fluffy on the inside? It’s hard to explain, which essentially means that you’ll just need to make them for yourself and see 🙂

Nutty Whole Grain Chocolate Chip Cookies

1 cup oat flour

1 1/2 cups buckwheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp cinnamon

1 egg

1 cup coconut sugar

1 cup softened butter

1/4 cup peanut or almond butter

3/4 cup dark chocolate chips

1/4 cup chopped pecans (optional)

1. Preheat the oven to 450 degrees fahrenheit. In a medium bowl, combine the flours, baking powder, baking soda, salt, and cinnamon. Mix well.

2. In a large bowl, beat the butter, sugar and egg until smooth either with an electric beater or wooden spoon and strong arm. Add the dry mixture slowly and continue to mix until well-combined. Fold in the chocolate chips and pecans, if including.

3. Form the dough into 1 to 1 1/2 inch balls and place on an ungreased cookie sheet. I did a dozen per sheet since they don’t spread too much, but definitely err on the side of caution when leaving room for them! Bake for 12-14 minutes or until starting to brown on the sides. Okay so I guess it’s like, legitimately summer now, huh?

This is my first summer in 3 years that I’m not on break from grad school, and it honestly feels pretty weird. Like I still have to go to work everyday and nothing actually changes at all, especially because it’s pretty much summer in LA all year round, #letsbehonest. The one thing I do every single summer though, is go visit my family’s beach house in the Outer Banks of North Carolina. I’m constantly counting down the days until I get to go to my favorite place on the planet and just take all of the summer-y, beachy bliss.

One of my favorite things to do there is sit by our pool in the afternoon (after some beach time, of course) with a cold drink and some snacks. Since ice water gets a little old, we like to stock our fridge with flavored sparkling water so that it’s still healthy, but feels fancy. And then you can feel gangster AF on your unicorn float, know what I mean?

Sparkling Ice has been an old favorite of ours, since it comes in a bajillion flavors and has zero calories (!!). Now that I live in a place where it’s warm enough to drink cold drinks all the time, I like to keep it on hand for when I want something that’s more refreshing than water but isn’t soda. Trust me, I know it sounds crazy to think there could be something more refreshing than water, but sometimes it just doesn’t hit the spot. Especially when you’re also kind of hungry, which is generally me always…

I wanted to find a way to combine my favorite summertime beverage with my other favorite thing in the world: DESSERT. And can you literally come up with anything better than an ice cold popsicle when you’ve just come back from a sweaty a$$ workout or just need an afternoon snack to cool you down? Didn’t think so 🙂

I think the absolute best thing about these popsicles, aside from the fact that they’re insanely refreshing and the perfect amount of sweetness with zero-added sugar, is that you can customize them with any of Sparkling Ice’s 15 flavors, which are all available on Amazon Prime (in case you decide that you need to make these in no more than 48 hours  because trust me, you do). You essentially just take half a bottle of your favorite Sparkling Ice flavor, some canned coconut milk, and whatever frozen fruit you’d like and mix ’em together.

AND if you’re feeling extra fancy, you can even throw some liquor in there (Strawberry Daquiri popsicles, anyone?). Okay last point though for real, if you don’t have a popsicle maker, just put the mixture into ice cube trays and blend that sh*t up with a few tablespoons of water to get things going. Then BOOM, slushies.

Fizzy Mango Pineapple Coconut Popsicles

1/2 Bottle of Sparkling Ice Coconut Pineapple (save the rest for a drink!)

1/2 cup canned lite coconut milk

1/2 cup frozen mango chunks

1. Combine all ingredients in a blender and pulse until mango has completely broken down.

2. Pour mixture into a popsicle maker (or ice cube trays to blend up into slushie!) for at least 2 hours. If you’re blending your ice cubes for a slushie, just add a couple of tablespoons of water to get things moving, and keep some ice cubes whole to keep your drink cold! Dig in and pretend you’re on a tropical island in a giant sun hat being fabulous (unless you actually are, and then no need to pretend. Get it, girl.)

Fizzy Strawberry Lemonade Popsicles

1/2 Bottle of Sparkling Ice Lemonade (save the rest for a drink!)

1/2 cup canned lite coconut milk

1/2 cup frozen strawberries

1. Combine all ingredients in a blender and pulse until strawberries have completely broken down.

2. Pour mixture into a popsicle maker (or ice cube trays to blend up into slushie!) for at least 2 hours. Enjoy!

My thesis is OVER and I go home in less than a week. I cannot wait! I’m trying to pack these last few days in with some holiday activities and last minute Christmas shopping in between jobs. I have to say though, working in social media is kind of fun around the holidays and incorporating  holiday cheer into brand messaging is much more enjoyable 🙂

Anyway, enough about me! Today I’m bringing you a super easy, healthy holiday treat to make it through this last full work week before the holiday break. It’s small batch too, so you don’t need to worry about indulging too hard before the full-on Christmas cookie madness begins! But, if you’re like me, you need a little somethin’-somethin’ after dinner to satisfy your sweet tooth, know what I’m saying?

4-Ingredient Dark Chocolate Peppermint Truffles

(makes 5 large truffles)

1/2 cup unsweetened cocoa powder

1/4 cup unsweetened applesauce

1/8 tsp peppermint extract

1 tbsp honey

powdered sugar to coat (optional)

1. In a medium sized bowl, combine all ingredients.

2. Mix until the ingredients are well-combined and all the cocoa powder is moistened. This should take about 2 minutes, so keep going even if it doesn’t look like anything is happening! Feel free to add an extra teaspoon or so of applesauce if it’s not coming together.

3. Tablespoon by tablespoon, roll the cocoa mixture in your hands until a ball forms. Continue until the mixture is completely rolled into truffles.

4. Roll in confectioner’s sugar if desired and freeze for at least 20 minutes before eating or store in the fridge for up to a week in an airtight container.
