GF/Vegan Brownie-In-A-Mug

I’ve been making this gluten free and vegan brownie-in-a-mug for us at least twice a week, so it only seems right to share it on the blog at this point!

Since I usually have this for dessert at night when the lighting isn’t amazing, I admittedly don’t have a ton of photos of this recipe! I’ll just tell you that it comes together in about a minute and 30 seconds, and somehow always hits the spot when I have a sweet tooth. It’s also relatively healthy and has protein and fiber in it, so you’ll feel satisfied afterwards. One of these days I’ll make it in the daylight, but until then, here’s a super short and sweet one for you!

Gluten Free/Vegan Brownie-In-A-Mug

3 tbsp cocoa powder

3 tbsp almond flour

1 tbsp coconut flour

2 tbsp granulated sweetener (I use Whole Earth Monk Fruit and Allulose most!)

1/4 tsp baking powder

pinch of salt

1/2 tsp vanilla

1 tbsp applesauce (or drippy nut butter or melted coconut oil)

3 tbsp almond milk

chocolate chips and/or sprinkles

Combine all ingredients in a bowl, ramekin or mug and stir well to fully combine. Microwave for one minute total, stopping at 30 seconds just so that the mug doesn’t get too hot! Let cool for at least two minutes before digging in.
