I’m not sure where this week went, but hey happy Friday!

The past few days have been filled with milestones that were well-documented – celebrating one full year as an entrepreneur + 6 months as a dog mom – lots of fun workouts (I co-hosted a 5 day workout challenge with friends on Instagram!) and fun things like getting a new couch, catching up with friends and getting back into a real dance class!

I was also featured on SD Voyager in an interview for their “Trailblazer” series, which is kind of cool😊 I have to say, the start of January had me feeling kind of meh, but I’m getting excited for this year and what’s to come. It’s kind of crazy to think that we’re already halfway through the month!

Anyway, let’s jump into Friday Finds ’cause it’s been a minute since we’ve posted one of these!

Chocolate Raspberry Cassava Flour Muffins (GF, Dairy Free & Sugar-Free)

First recipe of 2020 let’s gooooooo!!

I haven’t really talked about it on here yet, but I’m working on being on an anti-anflammatory diet (gluten free, dairy free, sugar free). As of now, I can tell you that it is *not* going well😂 But I am trying! And admittedly I don’t have all that much gluten and dairy anyway, but ohhhh sugar has my heart, y’all know that!

So in an effort to…make a better effort, I’m trying to take my sweet tooth and turn her into an actual friend as opposed to an enemy. Enter: monk fruit and stevia – yes, even in baking, ALWAYS.

These muffins are made with cassava flour to leave out the gluten, and a mix of mashed banana, Lakanto Foods Maple Syrup made with monk fruit and Lily’s Chocolate Chips (ok I’ll admit that I didn’t use them here because I forgot I was out), but that chocolate is my go-to! Keep scrollin’ for the recipe which was inspired by this one by Clean Eating Kitchen.

Chocolate Raspberry Cassava Flour Muffins

1 1/2 cups of Cassava Flour (I used Otto’s Naturals)

1/2 tsp baking powder

1/2 tsp baking soda

1 egg

1/2 cups mashed banana (about 2 medium)

1/2 melted coconut oil

1/2 cup monk fruit maple syrup (I used Lakanto Foods!)

1 tsp vanilla

1 cup Lily’s Sweets Chocolate Chips (or any, if sugar isn’t a concern!)

1/2 cup fresh raspberries

  1. Preheat the oven to 350 degrees fahrenheit. Spray a muffin tin or silicone muffin liners (these are my favorite!) with avocado or coconut oil.
  2. In a large bowl, whisk together the cassava flour, baking soda, and baking powder.
  3. In a small bowl, combine the egg, coconut oil (let it cool first!), maple syrup, mashed banana and vanilla.
  4. Add the wet mixture to the dry, then stir in the chocolate chips until well-combined.
  5. Fill each muffin cup about 3/4 of the way full and then press down 1-2 raspberries on top of each. I split the raspberries in half to make them fit better!
  6. Bake for 20-25 minutes (until the tops start to turn golden brown) and eat when warm or store in an airtight container. I highly recommend microwaving these for 10 seconds if enjoying later!

DFD at Home: Current Routines & Favorites

I’ve got a little somethin’ different for you today!

I saw The Chalkboard Mag interview Sophie Jaffe for their At Home With series and I thought it would be kind of fun to answer the same questions myself! Since let’s face it, they’re not going to be interviewing me anytime soon😂

So a little bit about me if you’re new around here – I’m an LA-based entrepreneur and former professional dancer originally from New York. I now run my own female-focused digital marketing consulting company called DFD Creative and this blog/Instagram, Dancing for Donuts! Here’s a little peek into what I’ve been doing and loving lately from my wellness must-haves to current workouts and pantry essentials.

DAILY BREAKFAST: A green smoothie in the summer (frozen banana, spinach, vanilla protein, pb + almond milk) and a yogurt bowl in the winter (plain greek yogurt, nut butter + sliced banana, granola if we have it!)

DREAM BREAKFAST: A donut (duh), or to be honest, a big fat bagel with lox and cream cheese and maybe a side of an Almond Croissant straight from France. Yep, veryyyy healthy😂

HOW I TAKE MY COFFEE: with frothed non-dairy milk (oat or hazelnut), stevia and a touch of cinnamon.

DAILY SUPPLEMENTS: Megafood Elderberry Gummies + a pack of my Binto vitamins + my WTHN Gut Check herbs if I need a digestive boost (code DFD10 to save!)

KITCHEN TOOL OBSESSION: My Zulay milk frother! I literally almost sent another one home to NY so I could have it for the month…

FAVORITE DAILY WORKOUT: Megaformer pilates, hot yoga, or just chillin’ on the elliptical while watching HGTV. True story.

3 STAPLES IN MY PANTRY: Nut butter, chia seeds & chickpea pasta

FOOD PHILOSOPHY IN ONE SENTENCE: Eat what makes you happy because life is too short, just make sure you’re treating your body the way it deserves to be treated.

FAVORITE THING TO COOK FOR FRIENDS: Gluten free pasta with veggies and/or baked chicken thighs

LATELY I’M ALWAYS WEARING: Sweats! I swear by these from Abercrombie.

AT LEAST ONCE A WEEK I COOK: the Trader Joe’s cauliflower gnocchi with their vegan kale pesto

MY BEST HEALTH ADVICE: Drink water, move your body, and eat your greens.

HEALTHY RECIPE I LOVE TO MAKE AT HOME: I love baking healthy donuts – it’s kind of my thing and you probably already knew that already😊 I love making my Chunky Monkey Protein Donuts and Birthday Funfetti Donuts the most!

Fall Favorites

You guys I can’t even remember the last time I did a monthly favorites roundup🙈

But we are back in business today, y’all! I’ve actually had a hard time narrowing everything down since I’ve tried and loved so many things in the last few months. From food and drinks to skincare and clothing, there’s SO much out there…I think I may actually just do a separate green beauty post!

Anyway, here are some things I’ve really, truly been loving and enjoying (not including the turtleneck I’m wearing above, aka my actual favorite thing about fall)…😂

Cover Girl Active Python Leggings – So admittedly I did a (very small) campaign with this company on Instagram and had NO idea I was going to fall so in love with their clothes!! I’m truly blown away that these leggings are just $48 in a world of extremely over-priced activewear. The quality is insane, they suck you in but have a thinner material, have the perfect high waist, and feel like a second skin. IN LOVE.

Snacklins – I tried these at the All Things Go Fall Classic back in October and then immediately went home and ordered them from Thrive Market. A whole bag (which is pretty big!) has only 80 calories but the flavor is amazing and they’re so few ingredients!! The perfect snack when you need to munch.

CAP Beauty Matcha and Coconut Butter – I’m going to be real with you, I’m not the biggest matcha snob, I kind of just take what I can get and as long as it’s got a bit of sweetness, I’m here for it…until now. CAP Beauty has raised the freakin’ bar, y’all👏🏻 You can totally taste the difference in quality and then the coconut butter elevates the whole thing to be a rich, delicious and creamy treat. I never want another matcha again!

Trader Joe’s Chocolate Hummus – I got my hands on this ONCE and they’ve been sold out ever since, but I think about it everyday and that is not an exaggeration😂 The nutrition facts on this stuff are pretty dang impressive and it is the closest thing I can find to chocolate frosting without actually being chocolate frosting.

Real Good Foods Cauliflower Bread Breakfast Sandwiches – I try not to have frozen food too often, mostly because I work from home and can make pretty much whatever I want, but sometimes mornings are HECTIC and it’s nice to have options!! I tried these breakfast sammies for the first time and hot damn are they good!! I can’t get over that the bread is paleo/gf/made with cauliflower and the inside with the sausage, egg and cheese was delish. They’re on the small side, but perfect for a quick breakfast or even snack!

Sun Basket – Okay for the first time EVER, I tried a meal prep kit service and it was good. I admit, I haven’t been the most innovative in the kitchen in quite awhile, so it was really cool having someone else come up with the meals! Everything you need (save for oil/salt/pepper) is right in the bag and it’s all super high quality ingredients (organic when possible!). We tried three meals and loved them all!

Buff Bake Protein Cookies – I’m not gonna lie to you, I have had a LOT of protein “cookies” in my day and 90% of the time they’re not foolin’ me with that cookie business. This is the other 10% though because WOW. I tried the Birthday Cake flavor and the Sweet & Salty flavor and both were phenomenal. They’re filled with just a touch of nut butter and are so yummy. There are 4 mini cookies to a pack!

Friday Finds + November Intentions

And just like that, October was over and she broke out her Christmas candles…😂

No, but seriously, I don’t know where time went and the fact that 2019 is coming to a close soon(ish) is actually kind of scary/weird. Luckily the holiday season is my FAVORITE and I live for all things Christmas, so there is a lot to look forward to!

I shared this on my Instagram today, but instead of making a list of a bunch of intentions I’ll never accomplish or remember, I want to manifest just a few things for the end of year. It’s always so beyond hectic, especially as someone who works in social media for clients in the retail space (helloooo Black Friday/Holiday sale chaos), so I manifest:

Autumn Salmon Salad with Maple Dijon Vinaigrette

Somehow Los Angeles still hasn’t gotten the memo that it’s fall, but I’m taking that as an excuse to eat this seasonal salad as much as possible while I’m still craving fresh, cooling foods!

As you all know, I don’t follow any specific diets and love all kinds of food, but when I’m home cooking for myself, I have mostly leaned towards plant based proteins in the past. One of the main reasons is that I want to make sure that when I do choose animal proteins and fish, they’re high quality, sourced sustainably and wild/free-range as possible.

And this is why I have been absolutely loving the fish from Blue Circle Foods – it’s a company I can get behind and the fish is incredible. I swear you can taste the difference! At Blue Circle, they never (ever) use antibiotics, GMO’s, growth hormones, or synthetic pigments (which is common in farmed fish). Their products are:

  • Sustainably sourced using up to 12x fewer resources than other meats
  • Sourced from family farmers or fisherman following fair labor practices
  • “Just” fish
  • High in Omega-3’s for optimal heart and brain health
  • And wild caught from certified sustainable fisheries (including their Atlantic Cod, Haddock, Yukon Keta and Yellow Fin Tuna)

For this recipe in particular, I use their salmon that’s sourced from Kvarøy, a farm on a tiny island off the coast of Norway (how cool is that?!). And I can tell you that when I bite into it, I legitimately can’t believe that I, ME, made it in my own kitchen because it tastes like it’s from a fancy restaurant, NO. JOKE.

This salad comes together in just 10 minutes (the key is to not overcook the salmon), uses fresh autumn produce like honeycrisp apples and brussels sprouts, and is topped with an ever-so-slightly sweet maple dijon vinaigrette. Keep scrolling for the recipe!

Autumn Salmon Salad

2 Salmon Filets

1/4 cup crumbled goat cheese

1/3 cup pomegranate seeds

1 honeycrisp apple, sliced

1/4 cup candied or regular walnuts

4 cups of kale

2 cups of shredded brussels sprouts (or sliced & pulsed in a food processor)

  1. Heat skillet (if you have one!) or pan over medium heat for 3-5 minutes. Dry the salmon with a paper towel for the ultimate crisp, and season the skin lightly with salt.
  2. Add a tablespoon or so of oil (I like avocado oil) to the skillet and then lay the piece of salmon down away from you so that the oil doesn’t splash. It should make a sizzling noise – that’s how you’ll know the pan is hot enough!
  3. Cook the salmon on the skin side for about 5 minutes and while that’s searing, toss together the kale, sprouts and Maple Dijon Vinaigrette (recipe below). I like to massage the dressing into the kale and sprouts with my hands to help soften them.
  4. After 5 minutes, turn the salmon over and give it a quick 1-2 minute sear on the other side.
  5. Plate the salad for two and top each with a salmon filet. Add the apple, pomegranate seeds, walnuts and goat cheese and a pinch of salt on top if desired.

Maple Dijon Vinaigrette

1/2 lemon, juiced

2 tbsp Lakanto Maple Syrup (or traditional Maple Syrup)

2 tbsp Dijon mustard

1/4 cup Extra Virgin Olive Oil

1/2 tsp cinnamon

Sea Salt & Black Pepper

In a medium-sized bowl, whisk together all the ingredients. Add salt and pepper to taste and store in an airtight container in the fridge.

Friday Finds

Oh hey, y’all! This is apparently my first post of October…oof🙈

I totally dropped the ball on my blog – the past few weeks have been filled with transitions, work, events, catching up with friends, and self-care. Plus, if I’m being totally honest, I’ve been feeling slightly unmotivated, but I know that’s on it’s way out (thank goodness).

I’m actually on a plane to Washington D.C. right now – my boyfriend’s brother has his own music festival called All Things Go and the lineup this weekend is absolutely INSANE. My (potentially all time) favorite band is playing, LANY, and I might even get to meet them…plz pray for me that I don’t a) say anything weird b) start giggling uncontrollably c) pee just a little bit in my pants or d) all of the above😂

Oh! And I uploaded another YouTube video (really hoping to be more consistent over there) – it’s a vlog and it shows what a regular day in my life usually looks like! You can watch it here. Anyway, let’s get into the finds of the week!!

An Update From NC + Friday Finds!

Hi from North Carolina, where we are potentially in the line of fire for Hurricane Dorian😅

I’ve been a lil MIA because last week, I flew with my from LA –> NYC and then drove down to NC on Friday, when we somehow got the dates confused and realized our beach house was actually rented until SATURDAY…so we all had to stay in a hotel which wasn’t dog friendly but Ovi isn’t very sneaky because he barks at everything.

The two of us “slept” in my car in the parking lot and finally settled in on Saturday for a wonderful Labor Day Weekend, and that’s the gist of it! Always an adventure😂

Other than that, things have been a bit of a cluster fk because I signed on quite a bit of new work and was thrown into that fire. To say I was stressed would be the understatement of a century, but luckily I’m in my favorite place in the whole world and look out my window at the ocean if I need to be instantly calmed!

It’s crazy to think we’ve already been here almost a week, but we’ve had so much fun and Ovi LOVES it here. He’s such a beach boy and was starting to go into the ocean before they shut the beach for the hurricane!

We’ve been eating all kinds of yummy things (my brother and his friends love to cook!) like a shrimp boil/bake, bbq, and bagels – my FAVE. I’m so looking forward to when my bf gets here on Saturday, I’m just crossing my fingers that his flight isn’t delayed or that we can’t get over the bridge to the mainland because of flooding!
