I’ve got one more holiday recipe for you guys and this one might be my favorite one of the whole year…

Of all the flavors I love during the holidays, I think chocolate peppermint takes the cake for me. I’ve been have a LOT of peppermint hot cocoa, and for about a month there I was even putting chocolate peppermint creamer in my coffee at least once a day…how am I not sick of it yet?! Haha

If you’re a fan like me, then you’ll love this recipe! These donuts are insanely fluffy, and both gluten and dairy free. I used chocolate protein powder in them, which I’ve been using in a lot of my recipes lately just because it’s an easy way to add some nutritional value without a ton of sugar! You can pretty much swap out up to 1/2 cup of flour for any protein powder in most recipes, but I like to keep it at max 1/4 cup per recipe just because I know too much can be hard on the tum!

If you do decide to use flour instead of chocolate protein, I would just add an extra tablespoon or so of cocoa powder and maybe a touch more granulated or liquid sweetener. Otherwise, these make the perfect sweet treat over the holidays, or any time of year! If you’d like a video tutorial, I shared a reel over on my Instagram 🙂

CHOCOLATE PEPPERMINT DONUTS

3/4 cup almond flour
1/4 cup chocolate protein powder
2 tbsp coconut flour
3 tbsp cocoa powder
1/4 cup granulated sweetener (I like the Whole Earth blends!)
1 tsp baking powder
1/4 tsp salt
2 eggs
4 tbsp melted coconut oil
1 tsp vanilla
1/8 tsp peppermint extract
1 tsp maple syrup or honey
2 tbsp almond milk (optional, only if batter is too dry!)
1/4 cup chocolate chips (these are my favorite!)
dairy free white chocolate + crushed candy canes for topping

  1. Preheat the oven to 350 degrees and spray coconut oil on a donut pan
  2. In a large bowl, whisk together all of the dry ingredients up to the salt
  3. In a small bowl, whisk the eggs, liquid sweetener, vanilla and peppermint extracts, and coconut oil, then mix well into the bowl of dry ingredients. *Add almond milk here if necessary!
  4. Fold in the chocolate chunks, then spoon into donut mold filling each to the top.
  5. Bake for 15-20 minutes or until slightly firm to the touch, then let cool completely before removing, drizzling with melted white chocolate and topping with crushed candy canes!
