Hellooooo Friday! Ugh, aren’t Summer Fridays the best?!

It’s not like I get actual Summer Fridays (y’know when you have a half day of work), but since I’m my own boss, I’ve decided that I’m going to do them once in awhile, anyway😏

I purposely made this week more low key than usual with fewer plans and workouts scheduled in. My time in NY was so hectic and since I wasn’t actually on vacation, I definitely didn’t get enough work done😅 Luckily I’m feeling nice and relaxed, and more importantly, back in the groove! Here’s what I’ve been reading…

Cassava Flatbread – What’s pictured up at the top of this post! I actually subbed garbanzo flour for the cassava flour and you guys I am BLOWN away. This bread has zero sugar in it yet somehow tastes slightly sweet? And has a ton of fiber/protein, too!

Not gonna lie, this week felt like pretty much the longest week ever.

It was a great one, don’t get me wrong, but MAN am I tired😂 There are two things I want to share with you before diving into this week’s Friday Finds (…is this the second week in a row for one? I think so…oops).

First off, I put up another YouTube video and my first one where I really share more about my business/what my life is like on a day to day basis now that I’m really doing my own thing blogging and business wise! You can find that here!

Friday Finds | Dancing for Donuts

I know I sort of had a short week because of Texas, but the truth about having your own business is that you don’t actually get to take days off… which means that for the days you SLACK off, you end up just having to catch up HARD afterwards😅

That being said, I know that being busy is a blessing, so I will stop complaining! Besides, I’m gearing up for a weekend of fun with friends and family, and I hope you are too, whether you’re celebrating Passover, Easter, or hey, just life in general!

Here’s what I’ve been reading this week…

18 Trader Joe’s Products Always in Our Freezers – Ugh, TJ’s for LIFE. I definitely haven’t tried some of these before so I know what I’ll be doing this afternoon…

Salted Citrus Bars – WHAT. EVEN. I actually used to not be a fan of citrus-y desserts but lately I’ve been all about lemon and orange flavored treats!

30 Minute Dance Workout with Aubre Winters – You guys Aubre is legit one of my favorite teachers in LA, PLUS she used to be a dancer. I’m low key freaking out that I can do one of her workouts at home now!

The Things You Should Invest in During Your 30’s – Maybe you’re in your 30’s (or almost like me!), maybe you’re not, but I still think advice like this is valuable! Plus Jacey is quite possibly the classiest woman alive, so that helps.

February Favorites

You guys it’s already almost March and I literally just realized I never even did a January Favorites roundup…THAT’S how quickly time is passing😮

That being said, it’s been an incredibly exciting month filled with change (#entrepreneurlife), events (because that life also requires lots of networking), and fun, too! In fact, I’m actually in Colorado right now for our annual family ski trip, and have been to both Ojai and the Santa Ynez Valley in the past couple of weeks, so fun might be an understatement…

Since I’m technically rounding up my favorites from the last two months instead of just one, I can tell you that the products listed below are for real some of the foods or things I enjoy on a regular basis after having had time to really evaluate what got to make the cut😉

Banza Chickpea Rice – You guys this RICE holy crap. It’s made out of chickpeas…like WHAT?! HOW. It tastes like orzo and only takes about 6 minutes to make, plus it has 11g of protein and 5g of fiber. I turned mine into “fried rice” by sautéeing garlic and ginger, then adding shitake mushrooms, carrots, coconut aminos, avocado and TJ’s ETBT seasoning!

Ona Cookies – When I tell you guys that I try a lot of little healthy treats/bars, I mean a LOT. I haven’t fallen in love with a snack like these Ona Cookies in quite some time and it’s safe to say that I’m full on hooked. They’re gluten-free and kind of taste like macaroons, but so much better and the flavors are to die for. I think the Coconut Shortbread is my favorite!

Trader Joe’s Cauliflower Gnocchi – Listen. I would be straight up lying to you if I said I didn’t have this at least twice a week for dinner. Maybe three times…it’s just THAT good and that easy! I usually sauté mine in a pan with ghee and spinach, add in a tablespoon or two of pesto, and some parmesan. Well, that or my vegan mac and cheese sauce!

Elmhurst 1925 Plant Based Milks – I know everyone and their mother makes nut milks now, but I recently tried Elmhurst 1925 and was blown away. First of all, the ingredients are always just the nut (or oat) plus water, that’s IT. And lemme tell ya, next time you’re grocery shopping just take a look at the nutrition label on your almond milk. I can almost guarantee you’ll see a longer list of ingredients! These milks are also nice and creamy, especially when you froth them before pouring in your hot coffee😍

Lavva Plant Based Yogurt – Okay I’ve clearly formed many obsessions this month because I swear to you I could survive off this stuff. I’ve tried a ton of different non-dairy yogurts and truly have hated them all…until now!! Lavva is thicker than any others I’ve tried (they’re usually so soup-y!) and the flavors are incredible. I also love that there’s no added sugar!

Mad Fit YouTube Workouts – What’s that you say, you didn’t know about my YouTube obsession? Yep, welcome to my life folks. I don’t even watch tv anymore really😂 One of my favorite things about the platform though is access to free workouts!! Mad Fit posts all kinds of amazing workouts that vary in time and work all different parts of the body. They’re home-workout friendly and require little to no equipment, too!

Osso Good Bones Signature Bone Broth – So it’s come to my attention that not many people know what bone broth is! I think I must just live in an LA bubble because I feel like everyone I know is drinking this stuff – it’s insanely high in protein and nutrients, but fairly low in calories (not that I’m counting, but y’know!). And more importantly, it’s amazing for gut health! If you want to hear more about it, and why I love Osso Good Bones so much, you can watch my YT video from my broth cleanse!

True & Co. Bras – Okay I know this isn’t for everyone, just my ladies, but I had to share it with you. I’ve been searching high and freakin’ LOW for a solid strapless bra that doesn’t dig into me or fall down, and I’ve finally found a winner. I actually might be even more obsessed with the True Body Seamless V Neck Bra, which I was definitely not expecting. It seemed a little grandma-y when I first got it and now that I’ve worn it for the past 5 days, I can confirm that it is straight up seamless magic.

WHEW, sorry that was a long one! I wish I could add at least 5 more things, but those might have to wait since I know you probably have a zillion things you have to do today.

Sausage Pancake Muffins – I didn’t really follow much of a recipe on this one, but I did whip together a batch of Birch Benders pancake mix (as instructed), and then tossed in some Jones Dairy Farm pork sausage to bake in muffin cups at 350 degrees fahrenheit for about 15 minutes. Make these and then dip them in maple syrup. YOU’RE WELCOME.

Ambitious Kitchen’s Corn Pasta Salad with Cashew Cilantro Pesto – Make this immediately. Trust me. And if you use Banza Chickpea Pasta (aka my favorite pasta of life) it’ll be packed with protein and fiber!

Pinch of Yum’s Best Soft Chocolate Chip Cookies – Made these for a dinner party last weekend and MAN they were a hit. Definitely making them again veryyyy soon!

Easy Raspberry Chia Jam – All you need to do to make this is heat up a few frozen raspberries in the microwave (I do about a quarter cup!), throw in about 1/2 tbsp chia seeds (ground or whole) and a sprinkle of coconut sugar. BOOM. 20 seconds later: chia jam!

Vegan Cashew Cheese with Chickpea Pasta – So I didn’t fully follow a recipe for this one, but I did take a 1/2 cup soaked then drained cashews (in water for about 15 minutes), 1/4 cup unsweetened almond milk, 1/2 cup vegetable broth, 6 tbsp nutritional yeast, 2 gloves garlic, sea salt + peppa, and 2 tbsp brown or dijon mustard then blend it all up and voila! Creamy, dreamy vegan cheese 🙂

Egg White Stovetop Oats – For this, I just took 1/2 cup of oats, 1/2 cup almond milk and 1/2 cup water, then stirred it together over the stove on medium for about 7 minutes. Once the liquid was almost completely absorbed, I took them off the heat, poured in an egg white and stirred veryyyy quickly so that it wouldn’t all cook together like an actual egg! This just adds some extra protein and a lotta fluff. Highly recommend!

I just figured, okay I love to grocery shop and I love to cook, so why would I need someone to take care of those things for me, right? Wrong.

Here’s the thing, while I do love shopping/cooking and I don’t actually mind spending time doing them, I never realized just how much time they took out of my daily life. I don’t know about you, but I make about 80% of my meals each week at home, which means I’m prepping breakfast and lunch ahead of the work day, and then cooking when I get home at night.

If you can’t relate to me on that, I bet you can relate to me on this – do you know the feeling when you get home from a vacation and you’re exhausted AF so the thought of going to the crowded grocery store let alone standing in the kitchen long enough to put something together just sounds terrible? YEAH. I know you do. That was me last week when I got back into town after 4 days on the east coast with very minimal sleep.

My savior? Territory Foods. The week before I went out of town, I remembered that I’d probably have that sinking feeling when I got home and had nothing in the fridge. Not to mention, I’m trying to be good about my eats these days since my broken elbow has caused quite the disruption in my workout routine!

So, I went onto the Territory Foods website and decided to place an order for breakfast and lunch for the three days following my trip. They would be delivered to my door the day I got back into LA and the best part? There’s no subscription – which is a game changer for me since my schedule never looks the same day to day.

Here’s what appealed to me most about Territory Foods: everything is made by local chefs who take input from a nutritionist to create balanced meals and the menu changes week to week. The ingredients are sustainably and locally sourced, and you can even choose filters to match your diet preferences (like Whole 30, Paleo, or low carb). All of their meals are free of gluten and dairy ingredients, which is also nice if you’re sensitive to those! You also get to customize your order to choose exactly which meals you’d like and there are a tonnnn of delicious options. I was actually super impressed with the selection!

And, as I mentioned, there’s no subscription/regular commitment requirement, but it is slightly cheaper if you choose a recurring plan and makes sense to opt into the recurring discount, since you can skip/pause/cancel anytime.

The Process

The Thursday before I got back from my travels, I went onto the Territory Foods website and placed my order. Since deliveries come Mondays and Thursdays, and my flight landed on Monday, I knew I’d be okay in terms of timing/getting the food in the fridge as quickly as possible. There were two size options: Standard (between 400 and 600 calories) or Boost (between 250 and 400 calories).

I chose to pick Standard, since I know myself and 250 calories ain’t gonna cut it for me, which came out to $13.95 a meal. I know this might sound like it’s pricey, and the Boost meals only cost $10.95 a meal if you’re trying to save, but I’ll tell ya – my breakfasts were enormous, I was able to share with my boyfriend, and two lunches actually lasted me for three days. So if you break it down, it’s probably around $10 a serving, which isn’t bad! Not to mention that I wasn’t snacking at all since I was full, so I didn’t have to worry about bringing energy bars or anything like that. I’d say that’s pretty cost effective, especially when you factor in the time saved!

Pulled Pork with Butternut Squash and Brussels – Such a hearty but nutritious meal. The veggies were seasoned and cooked perfectly!

After having three days and six meals prepared for me ahead of time with Territory Foods, I can honestly say that I might be a meal delivery service convert…so much so that I actually ordered three lunches again for this upcoming week since I’m going out of town yet again and it doesn’t make sense to stock up on groceries.

SO. Is this the most frugal option for someone looking to eat real, home-cooked meals? No. Is this a ridiculously convenient and delicious option for weeks when you’re busy, coming home to an empty fridge, or tired AF? YES.

I don’t know what other meal delivery services are like, but I can tell you that the two most important things about Territory Foods to me personally are the following: 1) it’s not subscription based and 2) there is an unbelievable amount of variety no matter what diet you’re on or health goals you have. I honestly cannot recommend it enough!

Homemade Lavender Vanilla Almond Milk (How-To + Recipe)

Let me introduce you to one of my new favorite things to do: making nut milk!!!

Guys I had been sooo intimidated to try making my own nut milks at home, even though I have friends who do it and they’ve told me how simple it is! Idk what was up with me, but I will tell you, it is SO simple, quick, and honestly just makes me feel better knowing that I made it myself. Have you ever looked at the ingredients list of most non-dairy milks?! Tons of additives. It makes sense though because fresh almond milk only lasts for about 3 days before going bad, so you can only imagine what they need to put in the milks at the store to make them last as long as they do!

To make the actual milk, you only need two ingredients (almonds + water), but I wanted to flavor mine with a touch of natural sweetness, vanilla and lavender. Also, you’ll want to be sure you leave yourself enough time to soak the almonds for 8-12 hours because that is the key! In terms of equipment, this requires a blender, nut milk bag and something to pour the milk into. I use a nut milk bag from Ellie’s Best and it has freakin’ changed my life👏

In terms of money, I think making your own milk at home can be super economical if you 1) get your almonds or whatever base you’re using from bulk bins or when they’re on sale and 2) make sure you don’t make so much that you waste it. I’m pretty sure one cup of almonds cost me about $3 (not on sale because I wanted to make it asap for this post!), but then I made enough milk for 3 days (for smoothies + coffee), plus the cup of almond meal that came out of it. You can do so many things with almond meal, and that’s something you definitely don’t get when you just buy the milk in store.

So yeah! It’s better for you since there’s less crap in there, you can customize it to be whatever flavor you’d like, it can be super cost-effective if you get your almonds in bulk/on sale, and there’s less waste overall since you’re not buying cartons on cartons. So many perks you guys! What you’ll need:

1 nut-milk bag or cheesecloth – I’ve been using Ellie’s Best nut milk bags and I’m in LOVE.

A blender – I have a NutriBullet, but any should work fine!

A pitcher (or even vase if you’re desperate) to strain the milk into

An airtight container for storing the milk (like a mason jar or bottle)

Lavender Vanilla Almond Milk

1 cup raw almonds

3 1/2 cups filtered water

2 pitted dates (optional, but recommended!)

1 tsp vanilla extract

1 tsp culinary lavender (feel free to add more, but a little goes a long way!)

1. Soak the nuts in water in a large bowl for 8-12 hours (but no longer than 12 ’cause they can actually go bad!).

2. Drain the almonds then add them to your blender with the filtered water, dates, vanilla extract and lavender. You may need to do two batches depending on your blender size! Pulse/blend for 1 minute on high.

3. Take an Ellie’s Best nut milk bag and put it 3/4 of the way inside a pitcher, making sure that the top is secure. I tie the string, but you can also use a rubber band.

4. Pour your nut milk blend into the bag over the pitcher. You’ll see that most of it will drain straight through, but there’s still a ton left in the bag surprisingly! Using your hands, hold the bag over the pitcher and squeeeeeze!!! It takes me about 3 extra minutes and some muscle power to really get the rest of the liquid out of the bag.

5. Transfer the nut milk to an airtight container (unless it’s already in one!) and empty the almond meal from the nut milk bag into another airtight container, if you’d like. You can use this in smoothies, oatmeal, and a ton of other recipes! Note: Your fresh almond milk will only stay fresh for up to 3 days because it doesn’t have preservatives like store-bought brands! Be sure to drink it before then 🙂

Recent Eats

How is it actually the end of February already, guys?!

Version 2

This month absolutely flew by, even faster than January, I honestly can’t believe it. I guess I had a few notable things happen – I left my old jobs (and friends! Miss you guys so much), took a few days to re-group, started my new job, and left to meet my parents in Colorado for vacation. It’s my last day here and tomorrow I go back to reality, so I’m going to try and soak up as much time in the snow as possible!

Since it was a short month that was full of changes and running around, I don’t have too many foodie favorites to share with you like I usually do! Instead, I figured I’d just share some of my recent notable eats since I’ve eaten a ton of really delicious things this month! Hopefully this can give you some ideas if you’re in a food rut😉

English muffin with mashed avocado, pink himalayan sea salt + TJ’s Everything But the Bagel Seasoning – I’d be lying to you if I said I didn’t eat this at 3/7 days a week (and usually with an egg on top). I am obsessed with this combo and that is not an exaggeration! I’ve always been a fan of avocado toast (like the true millenial I am), but on a soft and fluffy english muffin with seasonings it is NEXT. LEVEL. Kale salad with sriracha greek yogurt dressing (a slightly watered down version of this dip recipe), leftover tri-tip, mini peppers, 1/4 avocado and a slice of garlic bread  – So I’m making a pact with myself to eat one salad a day in March and my lunch at work is generally a good time to make this happen. After indulging hard over Valentine’s Day, I threw some leftover tri-tip (it was on sale and holy smokes was it good) over some kale and peppers. We’d eaten the tri-tip the night before with some air-fried tater tots, so naturally I made my spicy greek yogurt mustard dip. We had some leftovers of that too, so I watered it down and poured it over the salad as a dressing. I am 100% doing that again – SO good!!

SquareOrganics plant-based protein bars – I am allllll about the bars and I’ve pretty much tried every bar under the sun, but these are different!! I love the texture so much – a little crunchy as opposed to some of the bars that are really soft and gooey, and the flavors are to die for. I also love that they’re plant-based (something I’m trying to be more of!) and they donate part of their proceeds to fight human trafficking. SO awesome. Rubio’s wild-caught red shrimp bowl – You know me guys, I don’t usually eat “fast food,” which I totally thought Rubio’s was, but to be honest it’s more just fast casual like a Panera. I went for lunch with my boyfriend recently and tried their new red shrimp bowl and it. was. GOOD. I was so impressed by how fresh their ingredients are and I was able to get my bowl with their ancient grain mix instead of white rice. I’m alllllll about healthy options and they make it really easy to customize the dishes. You can even get a BOGO at Rubio’s with this coupon, which’ll save you about $10 on their delicious and fresh food. Highly recommend!!

Green Smoothie with Huel – I won’t go into too much detail about this one since the full post can be found here, but this smoothie has been a go-to for me since it legitimately keeps me satiated until lunch time! And, if you’ve been reading my blog for awhile, you know that I’m usually someone who needs a snack at 11am to calm my growling stomach…these days I don’t have to do that, which is nice😊

Air-fried donuts – So I was suuuper excited to make these since I’ve been looking for all kinds of yummy things to make in my new air fryer, but I accidentally picked up the wrong kind of biscuits! Essentially, you just take biscuit dough from the refrigerated section at the grocery store and cut a hole in the center, but make sure it’s NOT the flaky kind! I’ll put an actually recipe up here soon once I’ve got it down perfectly, but regardless, these were delicious. They were pretty much just biscuits that I covered in butter, cinnamon and sugar, so what’s not to like?😂 P.s. My air fryer can be found here and it is magical!!

Dark Chocolate Eclipse Cake with cream cheese frosting – When I tell you that my boyfriend had to hold me back from getting thirds (yes, thirds) of this every night after Valentine’s Day, I am dead serious. This cake is THAT good. I grabbed the cake recipe from Chocolate Covered Katie (looooove her stuff!), which is fairly healthy for a chocolate cake, and then smothered it in cream cheese frosting (which is essentially just butter, cream cheese and sugar…oops!). While I have zero regrets of covering this cake in frosting, I will say that if I made this again in the near future, I’d probably try to come up with a healthier frosting😅 I can tell you that the cake itself was super fudgy, regardless of it being dairy free. Obsessed!!

Green juice from Kreation – I know most of you probably don’t live in Los Angeles, but if you do, run don’t walk to the nearest Kreation (there are a few around town!). They’re a little pricey but literally everything tastes delicious, which is pretty impressive when it’s packed with vegetables and all kinds of healthy things. The one I had, Green #2, tastes AMAZING and you can see up there that it has all kinds of greens (hence the name…) and my friend had one of their green smoothies, which was also delish. I’m kind of glad I don’t live too closely to one of these, they’d take all my money for sure!

Perfect Bar in Dark Chocolate Almond – Told ya I was a bar girl😏 I’d only tried one of these bars previously and I have NO idea why it took me so long to try another!! These are definitely different than the Square Organics bars, but I love them both! You can find them in the refrigerator section, which actually appeals to me since it means they’re not  packed with preservatives. They’re also higher in calories, so they’re the perfect mid-afternoon snack when you need to say full until a late dinner or even pre-workout if you’re getting ready to sweat it out hard. This flavor was phenomenal, but they honestly all sound good. Can’t wait to try more!
