FOOD:

Coconut Wraps: Not gonna lie, at first I was skeptical about these but they’re so yummy and an awesome alternative to wheat wraps or tortillas!! They don’t break like tortillas either (y’know when they rip and everything falls out? The worst. These don’t!) and I love putting a little avo + hummus in ’em with turkey or veggies. I bet they’d be amazing with nut butter and banana too for a sweet snack!

SmartSweets: GUYS. To say these are my newest obsession are an understatement. Alex keeps wanting some too and I’m having a hard time sharing…😅 The whole bag is only 90 calories (and that are a lot in there!), they have fiber, and zero sugar alcohols which can give me a stomach ache. Better Almond Butter: If you are an almond butter fanatic like me, you HAVE to try this stuff guys. The texture is out of control perfect and the flavor is even better. It’s made from sprouted almonds too (which are easier to digest!) so it’s better than you’re average store-bought stuff if ya know what I’m sayin’. Highly recommend!

Ellie’s Nut Milk Bag: You’ve seen me use this before (when I made my Lavender Vanilla Almond Milk!), but this bag has seriously changed the game for me. They send you a brochure with recipes and everything you need to get started making your own nut (r oat!) milk, as well as cold brew! I love having fresh nut milk on hand since I know exactly what’s in it, plus you get the nut pulp afterwards too, which is great for adding to smoothies or oats for extra protein! If you’re interested in making your own non-dairy milk at home, this (and a blender) are pretty much all you need!

Beyond Yoga Leggings: Ok y’all, I have tried about 67 different brands of workout pants and I can officially say I have zero interest in wearing anything other than Beyond Yoga. They’re the softest, most comfortable and flattering pants I’ve ever worn and you can get some seriously incredible deals when they go on sale (that’s when I got them!). They have a zillion gorgeous colors and they’re perfect for everything from running to yoga to sittin’ on your couch watchin’ Netflix.

Outdoor Voices Crop Bra: So you need a good sports bra to go with your perfectly-fitting yoga pants and OV is the move. I can’t say enough positive things about this bra – it’s high-neck so the girls won’t fall out in down dog or bounce on the elliptical, thick enough to hide when you’re cold, but thin enough to breathe. I can promise you I will be ordering this in at least 2 more colors😅

Sudio Headphones: When I tell you that I’ve been looking for a good pair of gym headphones for years now, I am not exaggerating. I apologize for the late post today, I actually broke my elbow rollerskating at an event Tuesday night and my week has been a bit thrown off ever since! Thank goodness it was my left one and not the right, otherwise I’d be totally screwed (I’m a right-y)! I’ve got about 5 more weeks of down time, but the pain isn’t too bad, it’s mostly just annoying!

Now that we’ve got that life update out of the way, let’s get to the good stuff! It’s the start of a long weekend here in the US and I’m soooooo freakin’ excited to have an extra day off! My best friends from college are in town about an hour away, so I’ll be spending time with the, at the beach, and hopefully laying low!

Here’s what I’ve been reading this week:

I’m one of those people that actually really, truly enjoys salad, but with a catch: it needs to have texture (aka usually something crunchy), possibly something sweet (like fruit) and most likely cheese. If it has those things then I will shovel it in faster than you can say ‘starving.’ If not, I’m probably going to eat it in anyway because I know it’s healthy, but I probably won’t LOVE it, y’know what I mean?

This salad has every single element I love and the best part is the butter lettuce base. I started using Pete’s Living Greens for my salads because I swear to you they just taste BETTER. I think it’s because they’re still like, attached to the root when you buy them, so they’re fresher (and can seriously last up to 18 days which is awesome). And you know how greens from the farmer’s market always taste better than the ones from the store? YEAH. It’s like that! But if you can’t get to a farmer’s market on a Tuesday (because hello, #responsibilities), you can still get the same high-quality greens from the grocer because Pete’s gives you the actual freakin’ root of the thing and then you get to “pick the leaves” yourself. So, if you’ve been assigned as the ‘salad person’ for the party you’re heading to this Memorial Day (or any day really), I can promise you that this one is going to be a crowd-pleaser. It’s mostly sweet, which is always a win for people who don’t usually like healthy things, and it’s super refreshing. The blueberry vinaigrette is one of my new favorites, too. I’m trying to figure out what else I can actually put it on, but this salad is the perfect vehicle! Plus, it’s red, white and blue, aka v festive for American holidays😉

Summer Butter Lettuce Salad

1 head of butter lettuce (Pete’s Living Greens is my go-to!)

3-5 strawberries, sliced

1/4 cup blueberries

1/4 cup candied or toasted walnuts

1/4 cup crumbled goat cheese

1. Add all ingredients to a large bowl and toss to combine. Let sit in the fridge until ready to eat, and dress just before serving.

Blueberry Vinaigrette 

1 cup fresh blueberries

1/4 cup olive oil

1/4 cup balsamic vinegar

1/4 cup warm water

1. In a blender, pulse together all ingredients until smooth. Pour dressing on top of salad when ready to eat and store any leftovers in an airtight container in the fridge.

Homemade Lavender Vanilla Almond Milk (How-To + Recipe)

Let me introduce you to one of my new favorite things to do: making nut milk!!!

Guys I had been sooo intimidated to try making my own nut milks at home, even though I have friends who do it and they’ve told me how simple it is! Idk what was up with me, but I will tell you, it is SO simple, quick, and honestly just makes me feel better knowing that I made it myself. Have you ever looked at the ingredients list of most non-dairy milks?! Tons of additives. It makes sense though because fresh almond milk only lasts for about 3 days before going bad, so you can only imagine what they need to put in the milks at the store to make them last as long as they do!

To make the actual milk, you only need two ingredients (almonds + water), but I wanted to flavor mine with a touch of natural sweetness, vanilla and lavender. Also, you’ll want to be sure you leave yourself enough time to soak the almonds for 8-12 hours because that is the key! In terms of equipment, this requires a blender, nut milk bag and something to pour the milk into. I use a nut milk bag from Ellie’s Best and it has freakin’ changed my life👏

In terms of money, I think making your own milk at home can be super economical if you 1) get your almonds or whatever base you’re using from bulk bins or when they’re on sale and 2) make sure you don’t make so much that you waste it. I’m pretty sure one cup of almonds cost me about $3 (not on sale because I wanted to make it asap for this post!), but then I made enough milk for 3 days (for smoothies + coffee), plus the cup of almond meal that came out of it. You can do so many things with almond meal, and that’s something you definitely don’t get when you just buy the milk in store.

So yeah! It’s better for you since there’s less crap in there, you can customize it to be whatever flavor you’d like, it can be super cost-effective if you get your almonds in bulk/on sale, and there’s less waste overall since you’re not buying cartons on cartons. What you’ll need:

1 nut-milk bag or cheesecloth – I’ve been using Ellie’s Best nut milk bags and I’m in LOVE.

A blender – I have a NutriBullet, but any should work fine!

A pitcher (or even vase if you’re desperate) to strain the milk into

An airtight container for storing the milk (like a mason jar or bottle)

Lavender Vanilla Almond Milk

1 cup raw almonds

3 1/2 cups filtered water

2 pitted dates (optional, but recommended!)

1 tsp vanilla extract

1 tsp culinary lavender (feel free to add more, but a little goes a long way!)

1. Soak the nuts in water in a large bowl for 8-12 hours (but no longer than 12 ’cause they can actually go bad!).

2. Drain the almonds then add them to your blender with the filtered water, dates, vanilla extract and lavender. You may need to do two batches depending on your blender size! Pulse/blend for 1 minute on high.

3. Take an Ellie’s Best nut milk bag and put it 3/4 of the way inside a pitcher, making sure that the top is secure. I tie the string, but you can also use a rubber band.

4. Pour your nut milk blend into the bag over the pitcher. You’ll see that most of it will drain straight through, but there’s still a ton left in the bag surprisingly! Using your hands, hold the bag over the pitcher and squeeeeeze!!! It takes me about 3 extra minutes and some muscle power to really get the rest of the liquid out of the bag.

5. Transfer the nut milk to an airtight container (unless it’s already in one!) and empty the almond meal from the nut milk bag into another airtight container, if you’d like. You can use this in smoothies, oatmeal, and a ton of other recipes! Note: Your fresh almond milk will only stay fresh for up to 3 days because it doesn’t have preservatives like store-bought brands! Be sure to drink it before then 🙂

Easy Air-Fried Tofu & Peanut Shirataki Noodles For One

My friends, please let me introduce you to my new favorite thing to air-fry: tofu.

Look, I get it, I thought tofu was gross for like 27 years of my life, but now I’m a freakin’ fan. I seriously think the key is just to make a good sauce and cook it so that it’s not soft and weird and gross – which THIS is not. This? Is awesome.

If you’re rolling your eyes at the fact that I’m posting yet another air-fryer recipe, I also get that. Not everyone has one, let alone the space in their kitchen to have one (these things are BIG). The good news is that you really don’t need an air-fryer for this, you can just as easily make it in your oven, so fret not😉

There are two things, however, that you will need to make this recipe awesome: 1) extra firm tofu that you strain the excess water out of (directions below) and 2) these shirataki or “miracle noodles.” They are gluten-free, vegan, super low-calorie, and zero carb. They sound super bizarre and I’ve known about them for years but was hesitant to try them, but you GUYS. These are GREAT!

I promise they don’t taste weird, my only suggestion would be to rinse them and then let them soak up whatever sauce you’re using. I can’t imagine they’d taste great by themselves, so don’t try that…unless you really want to, of course. And by all means, if regular or whole wheat or chickpea pasta is more your speed, just swap it out for that, but I will say that I feel much better eating this big noodle dish for lunch or before bed since it’s not super heavy. But your call! We don’t judge here😊

Oh! And one more thing – before you go all crazy thinking I’m a liar for saying this recipe is super easy when you see that the ingredients list and directions are kind of long, I promise you this dish requires very minimal actual effort. It just takes a bit of time to do the tofu sitch and the air frying, but the ingredients are mostly the same for the marinade and the sauce, anyway. The really good news, though? The air-fryer (or oven) really does all the work for ya, I promise.

Air-Fried Tofu & Shirataki Noodles

1 package shirataki noodles

1 package extra firm tofu

Tofu Marinade:

1/4 cup coconut aminos

1 tbsp sesame oil

1 tsp garlic powder

1 tsp sea salt

pinch coconut sugar (optional)

Peanut Sauce for the Noodles:

2 tbsp hot water

1 tbsp natural peanut butter

1/2 tbsp sesame oil

2 tbsp coconut aminos

1/2 tsp garlic powder

1/4 tsp red pepper flakes

1 tsp coconut sugar

sea salt to taste

green onions, sriracha or any other toppings you might like!

1. Press the water out of the tofu by cutting into thinner strips, placing it between paper towels on a plate, and then using weight to drain the excess water for at least 10 minutes. (I usually do this by putting a cutting board and a bunch of cookbooks on top!)

2. While the tofu is draining, mix together all the ingredients for your marinade in a medium sized bowl.

3. Once the tofu is done, cut it into small cubes. Toss the cubes in the bowl with the marinade and gently shake or use a spoon to coat it completely.

4. Air-fry the tofu for 15 minutes at 390 degrees fahrenheit, taking it out every 5 minutes to shake it up. **If you don’t have an air-fryer, bake your tofu for 20 minutes at 375 degrees fahrenheit.

5. While the tofu is frying, make your peanut sauce by putting all ingredients in a small bowl (or the one you’d like to eat your noodles in!) and whisk until as smooth as possible.

6. Open your shirataki noodles and drain them with a strainer. If you’d like your dish hot, simple put them in a pan and sauté them until warm (or microwave), otherwise put them in the bowl with the peanut sauce and toss to coat.

7. Once your tofu is done aka crispy on the outside by still slightly soft, add it to your bowl. Top with anything you’d like and dig on in!

These women inspire me on a daily basis to chase my dreams, and I know they’ll inspire you, too! We’re kicking it off this week with my friend Kayla, founder of Kayla in the City, the healthy living and fitness blog, as well as the podcast WELL-Rounded (which I was featured on in Episode 7!). I’ve actually known Kayla since we were in the single digits as we grew up in the same hometown in NY, but we also went on to go to NYU together. Kayla is kind of an all-around super woman in my eyes – she’s a certified yoga teacher, runs her blog, podcast and a side business called Holistic Happening where she hosts wellness events in NYC, and is about to graduate grad school for social media marketing.  Keep reading if you want to hear more about how she does it all!

Tell us a little bit about Kayla in the City & WELL-Rounded! When did you start it and why?

Oh man…I created my blog, Kayla in the City, a little over 6 years ago as a way for me to share my own fitness journey, and also honestly because I felt super alone in this journey. At the time I was a senior in college studying theater and hadn’t found many “like-minded” people yet. I didn’t have anyone to discuss trendy group fitness classes with or what the best dairy-free milk option was. Granted it was 2011 and almond milk wasn’t even available at Starbucks yet…

One day, senior year of college, I stumbled upon a few fitness blogs. People who wrote reviews of workout classes in NYC, achieving fitness goals, and yes, recipes with almond milk. Suddenly I didn’t feel so alone, I wasn’t the only fitness loving weirdo out there! Around this time my college friends started catching on to the fact that I was pretty into this wellness thang. They’d ask me questions about the workouts I was doing and how I managed to wake up before class to hit-up a yoga class. So I figured why not start a blog about it — I love writing and sharing my opinion on anything and everything.

I then launched my podcast, WELL-rounded in the beginning of 2018. I like to think of it as an extension of Kayla in the City. I created WELL-rounded because one, I absolutely LOVE podcasts and think it’s such an awesome medium for creating content. And two, I just wanted to have interesting conversations with interesting people about wellness, entrepreneurship, and mindfulness.

What inspired you to start working on your own business, whether full-time or as a side hustle?

I definitely didn’t create Kayla in the City with the intention to make money. And I don’t think anyone should start blogging for that reason alone. I created it because I felt like I had something to say about fitness, healthy living and wellness and if I didn’t say it on the internet I’d basically burst. Once I started spending more and more time, energy and money on Kayla in the City I was ready to start monetizing and doing partnerships.

What’s the best piece of advice you’ve ever been given in regards to being an entrepreneur?

It honestly applies in life but a friend of mine who is also an amazing health coach, Michelle Cady, always says “if it’s not a hell yes, it’s a hell no.” Every day I’m making decisions about partnerships, opportunities and events to attend. It can be overwhelming to figure out what to say yes to. I’ve been really challenging myself to take a second to really think of it’s a “hell yes” before I say yes to anything.

What are three personality traits you think are key to being a successful business owner?

Creativity, even if your medium is not in the creative field. Grit. Motivation.

What’s your favorite part of running a business?

So many things. I’m so freaking grateful for the amazing people I’ve connected with thanks to Kayla in the City. I’ve legit met some of my closest friends on Instagram. I also love that I get to be creative and choose my own adventure when it comes to Kayla in the City. I write about what I’m passionate about and follow my own rules for building my brand.

And what’s your least favorite part?

Answering emails. It’s never ending.

What advice can you give to others looking to start pursuing their passions?

Just do it. Start a blog. A podcast. A business. Be loud about what you’re passionate about. You’d be surprised how many opportunities start coming your way.

How do you prioritize time for yourself when you’re super busy with your business? Do you have any de-stressing techniques or self-care routines you can share?

This is something I’m always working on, I definitely struggle with taking care of myself when I have a lot going on. I’m a huge fans of walks and try to take an hour long walk every day. It helps me decompress, it’s where I get my best ideas, and it keeps my energy level up when I feel myself crashing. Since I’m home for lunch most days, I use that time to step away from my computer and veg out for a bit. I also read every night before I go to bed – usually novels because I love me some self-help, but lately I just want to get lost in another world, not my own brain, ha.

Where do you find inspiration?

In whatever content I’m consuming. Lately that’s a lot of podcasts.

I’m doing something a little different today guys…I’m sharing a video instead of the usual wordy blog post, I hope that’s okay with you! I’ve said this before, but I feel like it’s so much easier to feel like you know someone when you can see/hear them speaking, so hopefully this is a more entertaining and personal way to hear about what I’ve been loving this month.

Blue Diamond Nut Thins – I’m not usually the biggest crackers person (since I prefer sweets, you know me!) but these are a game changer!!

Artisana Coconut Butter/Manna – Actual crack, you guys. Makes me feel like I’m on an island or something.

Primal Kitchen Ranch – The only real “dressing” I’ll put on my salads!🙌

Earth Balance Coconut Peanut Butter – I lied, THIS one is actual crack. Seriously.

Friday Finds

Good Morning and Happy Friday!

I just want to mention two quick things before we dive into today’s link roundup –

1) Yesterday I had the privilege of attending the 3% Conference in LA that spoke about inclusion and diversity in the workplace, and it was quite possibly the most empowering, inspiring day ever. Thank you to my agency, Campbell Ewald for sending me – I learned so much about how we can take action to get people of all walks of life represented in business, and how to truly get closer to equality not only in gender, but in race, sexuality, and more.

2) This second one actually makes sense following that first one, although it’s been in the works for quite awhile! I’m going to be starting a bi-weekly series on here called the DFD Babe Feature where I highlight women I know who are absolutely killing it not only with their businesses, but in life in general. I know so many of these women and I feel like it’s super important to share their amazingness with you all! So yeah, the first one will start next week and I am SO. Freakin’. Excited!!!

I know talking about these things sometimes can feel like a stretch from what this blog is all about – ‘healthy living‘ – but to me, these things are all connected. Health is not only physical, but mental, and inclusion/kindness/fairness can only lead to better mental health for us as a whole. We talked a lot yesterday about how this world is hurting, and all I can think about is how I want to help heal it, one person at a time.
