I don’t know why this week felt so long (although I’m still adjusting to not working from home on Fridays so that could be it…) but I’m VERY happy the weekend is near! I have a pretty jam packed few days coming up but like 70% of it is fun stuff and even the work part should be fun, too😊 I’ve got lots of stuff in the works both on the blog and on Instagram, so make sure you’re following me there if you aren’t, already!

I’m also kind of counting down to my trip to Paso Robles next weekend with my best friend and have been spending some of my free time researching wineries and fun things to do. I’ve been loving these little weekends away – it’s kind of amazing how much you can drive to in a few hours from LA! If you have any recs for Paso Robles and wine country up there, please let me know! I’ve never been but it’s looks suuuuper cute.

But alright, I’ll stop blabbing (you know me, sometimes it’s hard to stop😅). Let’s get on with the usj – Friday Finds!

Hi friends! I can’t remember the last time I blogged two days in a row but hey, there was a lot to say this week😊

Apologies for getting this post out to you late, my morning took a strange turn when I got into my first car accident…tooootally not that big of a deal. I mean, I’m fine, but my car has some hideous damage. Basically the other person didn’t stop at their stop sign and ruined the entire right side of my baby, but hopefully insurance will come through! Otherwise, this week has been pretty fantastic and all of the incredible positivity that I saw online and in person for Women’s Day has me feeling hopeful, happy, and motivated.

Two things before I get into our usual Friday Finds – 1) my friend Danielle was so kind as to feature me on her blog! You can find that here. And 2) I have been absolutely looooooving yoga lately. I have a back injury from ages ago and I’m not technically supposed to do yoga, but I know when to hold back now (no back bends or up-dogs for this girl) and have been going to classes after work at a studio called Red Diamond Yoga. I never thought I’d like yoga after work at night, but honestly it’s so relaxing and really calms me down after a crazy day. Maybe I should go tonight actually…

How is it actually the end of February already, guys?!

This month absolutely flew by, even faster than January, I honestly can’t believe it. I guess I had a few notable things happen – I left my old jobs (and friends! Miss you guys so much), took a few days to re-group, started my new job, and left to meet my parents in Colorado for vacation. It’s my last day here and tomorrow I go back to reality, so I’m going to try and soak up as much time in the snow as possible!

Since it was a short month that was full of changes and running around, I don’t have too many foodie favorites to share with you like I usually do! Instead, I figured I’d just share some of my recent notable eats since I’ve eaten a ton of really delicious things this month! Hopefully this can give you some ideas if you’re in a food rut😉

English muffin with mashed avocado, pink himalayan sea salt + TJ’s Everything But the Bagel Seasoning – I’d be lying to you if I said I didn’t eat this at 3/7 days a week (and usually with an egg on top). I am obsessed with this combo and that is not an exaggeration! I’ve always been a fan of avocado toast (like the true millenial I am), but on a soft and fluffy english muffin with seasonings it is NEXT. LEVEL. If you don’t have a Trader Joe’s near you, I found this recipe so you can make their everything bagel seasoning at home!

Kale salad with sriracha greek yogurt dressing (a slightly watered down version of this dip recipe), leftover tri-tip, mini peppers, 1/4 avocado and a slice of garlic bread  – So I’m making a pact with myself to eat one salad a day in March and my lunch at work is generally a good time to make this happen. After indulging hard over Valentine’s Day, I threw some leftover tri-tip (it was on sale and holy smokes was it good) over some kale and peppers. We’d eaten the tri-tip the night before with some air-fried tater tots, so naturally I made my spicy greek yogurt mustard dip. We had some leftovers of that too, so I watered it down and poured it over the salad as a dressing. I am 100% doing that again – SO good!!

SquareOrganics plant-based protein bars – I am allllll about the bars and I’ve pretty much tried every bar under the sun, but these are different!! I love the texture so much – a little crunchy as opposed to some of the bars that are really soft and gooey, and the flavors are to die for. I also love that they’re plant-based (something I’m trying to be more of!) and they donate part of their proceeds to fight human trafficking. SO awesome. Rubio’s wild-caught red shrimp bowl – You know me guys, I don’t usually eat “fast food,” which I totally thought Rubio’s was, but to be honest it’s more just fast casual like a Panera. I went for lunch with my boyfriend recently and tried their new red shrimp bowl and it. was. GOOD. I was so impressed by how fresh their ingredients are and I was able to get my bowl with their ancient grain mix instead of white rice. I’m alllllll about healthy options and they make it really easy to customize the dishes. You can even get a BOGO at Rubio’s with this coupon, which’ll save you about $10 on their delicious and fresh food. Highly recommend!!

Green Smoothie with Huel – I won’t go into too much detail about this one since the full post can be found here, but this smoothie has been a go-to for me since it legitimately keeps me satiated until lunch time! And, if you’ve been reading my blog for awhile, you know that I’m usually someone who needs a snack at 11am to calm my growling stomach…these days I don’t have to do that, which is nice😊

Air-fried donuts – So I was suuuper excited to make these since I’ve been looking for all kinds of yummy things to make in my new air fryer, but I accidentally picked up the wrong kind of biscuits! Essentially, you just take biscuit dough from the refrigerated section at the grocery store and cut a hole in the center, but make sure it’s NOT the flaky kind! I’ll put an actually recipe up here soon once I’ve got it down perfectly, but regardless, these were delicious. They were pretty much just biscuits that I covered in butter, cinnamon and sugar, so what’s not to like?😂 P.s. My air fryer can be found here and it is magical!!

Dark Chocolate Eclipse Cake with cream cheese frosting – When I tell you that my boyfriend had to hold me back from getting thirds (yes, thirds) of this every night after Valentine’s Day, I am dead serious. This cake is THAT good. I grabbed the cake recipe from Chocolate Covered Katie (looooove her stuff!), which is fairly healthy for a chocolate cake, and then smothered it in cream cheese frosting (which is essentially just butter, cream cheese and sugar…oops!). While I have zero regrets of covering this cake in frosting, I will say that if I made this again in the near future, I’d probably try to come up with a healthier frosting😅 I can tell you that the cake itself was super fudgy, regardless of it being dairy free. Obsessed!!

Green juice from Kreation – I know most of you probably don’t live in Los Angeles, but if you do, run don’t walk to the nearest Kreation (there are a few around town!). They’re a little pricey but literally everything tastes delicious, which is pretty impressive when it’s packed with vegetables and all kinds of healthy things. The one I had, Green #2, tastes AMAZING and you can see up there that it has all kinds of greens (hence the name…) and my friend had one of their green smoothies, which was also delish. I’m kind of glad I don’t live too closely to one of these, they’d take all my money for sure!

Perfect Bar in Dark Chocolate Almond – Told ya I was a bar girl😏 I’d only tried one of these bars previously and I have NO idea why it took me so long to try another!! These are definitely different than the Square Organics bars, but I love them both! You can find them in the refrigerator section, which actually appeals to me since it means they’re not  packed with preservatives. They’re also higher in calories, so they’re the perfect mid-afternoon snack when you need to say full until a late dinner or even pre-workout if you’re getting ready to sweat it out hard. This flavor was phenomenal, but they honestly all sound good. Can’t wait to try more!

Oh man, I had so many things I wanted to do in the few days I had off in between jobs, and only about 1/3 of it got done😳 HOW DOES TIME MOVE SO QUICKLY?! But you know what, it’s okay, because I actually was decently productive and more importantly, was able to hit the re-set button a little. I’ve been trying a bunch of different workouts and meeting new people in the process, so that’s been fantastic. I also got to spend some quality time with friends and my boyfriend, so that’s always a plus. I feel like you can’t always check off every single thing on your to-do list, y’know? You have to prioritize and get the super important stuff done first…

Anyway, I digress! I think my point was going to be that I meant to write this post weeks ago but am only getting around to doing it today. I know a lot of people tend to fall off the wagon with resolutions for the year and what not, but I feel like consistency and routine helps sooooo much. Since my life is going to be changing starting today (with my new job!), and things have been busy regardless, I have one constant that’s helping me stay on track with my health and fitness goals and that’s my daily smoothie. I’ve raved about smoothies before on here, but let me reiterate again just how incredible these things are because you can literally pack an entire meal’s worth of nutrients into one little blender and make it taste AMAZING. Like how crazy is that?!

The smoothie I’ve been having almost every single day since the start of the new year looks a little something like this (depending on what’s in my fridge/freezer/pantry):

1/2 cup unsweetened almond, cashew or coconut milk

1/4 cup cold water

2 handfuls greens (kale or spinach)

1/4 cup fruit (mix of frozen banana and berries)

2 scoops HUEL

1 tbsp nut butter

1 tbsp ground chia seeds

It literally takes me all of 4 minutes to make since I throw everything in my NutriBullet and blend it for 30 seconds. That’s IT. I swear. And this thing will last me through until lunch at about 12:30 which is saying a looooot for this girl since my metabolism is usually through the roof in the morning. I used to have breakfast, a mid-morning snack at 11am, and then be hungry again by noon. That is no longer the case! Granted, this smoothie has a ton of calories and protein, but they all come from good stuff. I don’t count calories ever, I’m more concerned with the quality and nutrients of what’s going into my body.

If you’re wondering what HUEL is, it’s a nutritionally complete food that’s 100% vegan, contains 27 essential vitamins and minerals, plus protein, carbs and fats to power you through your day. So yeah, it’s about 10x better than a protein powder guys. It’s made from a blend of oats, pea protein, flaxseed, brown rice protein, MCT’s from coconut, and a vitamin & mineral blend. I chose the vanilla flavor, so it is flavored with vanilla and stevia, but the ingredient list is unbelievably clean. I also love that there’s minimal packaging and that HUEL has a shelf life of 12 months. It’s also super affordable, which I find impressive for a product that packs such a nutritious punch. They also make a gluten-free version, so that’s a plus for people that need an allergen-friendly option!

I think what I love so much about smoothies, especially now that I add HUEL to mine, is that they’re hella convenient. For someone who has to run out the door every morning and either eat breakfast in the car on the way to work or at work, being able to have a complete meal that I can simply drink is key. That being said though, I truly do not believe you need to spend more than $5 per smoothie to make it nutritious or delicious. If you invest up front in a few great items for your pantry, you’ll be good to go, making these meals absolutely perfect for #BabesOnABudget!

Now without further ado, here are my five must-have add-ins for healthy, tasty & filling smoothies!

1. Maca Powder – I love maca because it honestly just tastes really good, but it also is known for reducing stress hormones as well as the fiber and minerals it contains. It also boosts libido, so that’s always good😉

2. Spirulina Powder – I don’t know what it is, but just having spirulina makes me feel instantly healthier😂 It has a vey strong flavor so I use no more than half a teaspoon at once, but it’s 60% protein and a rich source of phytonutrients. It’s an all-around superfood that provides a huge boost in vitamins A, K1, K2 and B12.

3. Kale – This is another one that just makes me feel healthier when I do it, but I can say with 110% confidence that you will not be able to taste this stuff at ALL. I’m all about adding veggies wherever I can and being able to hide some in my breakfast is pretty sweet.

4. Nut Butter or Powdered Peanut Butter – I think nut butter is that one component that helps the smoothie keep me fuller for that extra hour. I know it’s added fat, but it’s also added protein AND tastes amazing. I could probably survive off peanut butter, so adding it to my smoothies makes them taste like such a treat while also providing me with some added protein and fat.

5. Ground Chia Seeds – If there’s one thing that’s in my pantry at all times, it’s ground chia seeds. I like to have flax seeds too, but chia somehow always takes priority for me. Again, they’re pretty much un-tasteable yet somehow provide added fiber, omega 3’s, antioxidants and calcium and all you need is a tablespoon. That’s pretty freakin’ magical, don’t you think?

The past few days have been a bit different for me since I wrapped up my current job on Tuesday, but I still somehow have been crazy busy the rest of the week…like I had all of these plans to clean the house, organize myself, work on my blog, shoot another video, and see friends, but only about 1/4 of those things happened😂 I did have a nice, productive Valentine’s Day, though – it started with a solo trip to Ikea, then I had lunch with a friend, took a LIT Method (class thanks to Suja!) – that place is AWESOME if you haven’t been yet, by the way. It’s such a great workout! Then I just had a homemade dinner + dessert in with my love.

I hope you were able to celebrate love in some way this week, even if it was just by treating yourself! Before we head into the weekend, which may be a nice long one for some of you, I wanted to share my usual Friday Finds! Here’s what I’ve been reading this week…

I’m going to be honest with you, I could kind of care less about Valentine’s Day. I mean, for like 95% of my life I was single for it, and even if I did have a boyfriend, it felt like any other day. I think my number one thing about it is just knowing that someone thought about me, but the truth is that if you’re dating someone who you’re truly meant to be with, that person is going to show you they’re thinking about you every damn day, y’know? Last year, Alex and I just made dinner at home and this year we’re planning on doing the same thing. I’ll definitely be whipping up something sweet, which I’m veryyyyy excited for (!), but otherwise it’ll be low key!

Regardless of who you’re with (or not with) this V-Day, I think the most important thing you can focus on is showing love to yourself and those around you. Call your parents, your siblings, your best friends, and tell them how much you care about them. Maybe write a card, or bake them something sweet you know they’ll love. And if it’s just you at the end of the night, treat yourself to some self care – a face mask, glass of wine (or kombucha), an episode of your favorite Netflix show, and a lil’ dessert. You deserve it! If you’re looking for something extra to do for yourself, your bae, or just the ‘gram, I’ve got some ideas for you guys that I’ve either done myself or have found across the web during my V-Day research!

Heart-Shaped Food – This one is probably the easiest, cheapest, cutes thing you could possibly do! All you need is a heart cookie cutter and the possibilities are endless. Last year I made us heart-shaped avocado toast (basic b meets overrated holiday😂) and this year I’m planning on making heart-shaped pancakes! The ones in the photo at the beginning of this post were just made from the Birch Benders mix I had on hand and I added an easy chia-berry jam on top.

If you wanted to be reaaaaal cute, you could do pink jam so instead of using mixed berries like I did, do only raspberries or strawberries! To make it, put frozen berries of whichever variety you’d like in a microwave safe dish for about 30 seconds, add a tablespoon of either whole or ground chia seeds, and stir to combine. Let it sit for a couple of minutes and then you’re good to go! I like to use ground chia seeds, which are nice since you can’t even taste them, but they still help bring the jam together like whole seeds do.

White Chocolate Valentine’s Day Popcorn – This one is so perfect if you’re doing a galentine’s party or having a movie night in! I originally made this recipe two years ago, but if I were making it today I’d probably swap out the candy hearts for pink, white and red m&m’s! I know that might be overkill on the chocolate, but like, is there such a thing? The answer is no. Plus they might melt a little and be all soft and chewy and magical. Highly recommend.

Pink Puppy Chow (Vegan!) – I originally found this recipe here, and proceeded to pin it immediately because HOW cute. The only reason I didn’t make it this week is because I can’t actually be trusted with a bowl of this stuff, but 1) Valentine’s Day is for sharing and 2) this recipe seems to be slightly better for you, so I really should…but I think it would be SO stinkin’ cute to put a bag of this in your honey’s work bag so that they have a sweet treat during the day. How cute are these lil succulents that my co-worker and I made?! We ventured to this cute flower shop called Sweet Blooms Atelier down in Hermosa Beach and I want to live there so badly!!!

Anyhoo, I apologize for taking a mini break this week, it’s been a bit hectic since I’m actually wrapping things up at my current job and randomly got super sick on Tuesday. This week really took it out of me guys, I’m so happy it’s the weekend!! And also, in case you didn’t know, apparently it is also National Tater Tots Day…obvs one of the most important holidays ever. To celebrate, I broke out my new air fryer from ToBox and made some insaaaaanely delicious and crispy tater tots with this easy peasy greek yogurt dip on the side. It. Was. AWESOME.

But I’m not going to lie to you, I was honestly really nervous to use my air fryer for the first time. I realize how irrational this is, considering air fryers are like 10x safer than regular fryers, I was slightly nervous that I’d burn down my kitchen or something😂

Well, I could not have been more wrong because you literally just put your noms in the fryer basket, set it to a certain temperature and time, and then BOOM. Out pops your crunchy, crispy, air-fried goodness. I was kind of in shock at how simple it was and am now officially obsessed! I’ve been thinking of all the things I can air fry like chicken, and cauliflower wings, and hand pies…UGH the list just goes on! I decided to make a dip on the side because, let’s face it, most things taste better with a lil somethin’ somethin’, you know? I’ve never been much of a ketchup girl (I know, don’t hate me), but mustard is one of my favorites! I figured pairing it with some cool & creamy greek yogurt would be the perfect contrast to the warm tater tots, and then the sriracha was just a fun addition. I think I might make this dip pretty often just for veggies, too! OH and if you have a Trader Joe’s nearby and can get your hands on their Everything But the Bagel Seasoning, DO that. And then put it on absolutely everything. You can thank me later…

Spicy Greek Yogurt Mustard Dip

1/2 cup plain greek yogurt

2 tbsp mustard (I mixed dijon & spicy brown!)

3-6 dashes of Sriracha depending on your affinity for spice

pinch of sea salt

1-2 shakes TJ’s Everything But the Bagel Seasoning (optional)

1. In a medium sized bowl, combine all ingredients and stir well until yogurt turns completely yellow from the mustard.

2. Serve with hot tater tots and/or veggies!
