Hello, hello! Apologies for being MIA this week, it’s been a crazy one.
While I’ve been eating pretty clean lately (to make up for all the pizza and donuts), I’ve also been craving sweets like it’s nobody’s business. I don’t know about you, but I’m 100% a stress-eater. To make sure I don’t undo all my hard work at the gym and in the kitchen, I’ve had to get creative with my treats!
I made this healthified banana split this morning and it definitely started my day on the right foot. It’s a light meal (or perfect snack), but full of nutrients nonetheless and easily customizable to your favorite flavor combos!
Today I chose to go with a coconut greek yogurt for a punch of summer. I’ve recently gotten into the Oikos Triple Zero brand – I know a lot of flavored greek yogurts have a ton of sugar (beware!) but this one doesn’t have any added artificially and is only 120 calories. Not bad!
I topped my banana split with some crushed up Peanut Butter Puffins, since they’re my fav and I treated myself yesterday. I’m making a very conscious effort to not eat the whole box in 3 days, and you can quote me on that! These things are addictive, but in the realm of cereal they’re also really not that bad health-wise. If you have some on hand, I’m sure granola would be just as, if not more, delicious, as well as unsalted almonds, cashews or coconut flakes. The toppings can be as crazy or simple as you’d like, but I like to add some texture and crunch!
Breakfast (Or Dessert!) Banana Split
one ripe banana
1/2-1 individual container greek yogurt (your favorite will do!)
4 sliced strawberries
1/4 cup crushed cereal, granola or nuts
1. Place banana on a plate. Spoon greek yogurt on top.
2. Top with strawberries and crushed cereal. Enjoy!
