Chocolate Zucchini Smoothie (that Actually Tastes Like a Milkshake) | Dancing for Donuts | Green Smoothie

Believe me when I tell you guys that I’ve been making this smoothie EVERY single day for a week…and the pictures are here to prove it😂 I know it sounds ~super~ weird to add zucchini to your smoothies, but here’s why I love it so dang much.

  • you cannot taste it. at ALL.
  • it adds a TON of volume so your smoothie will feel more satisfying
  • the texture gets SO creamy without having to add any added sugar (ie. more frozen bananas)
  • the texture gets SO creamy without having to add any extra fruit/sugar
  • it’s cheap as heck and you don’t have to go crazy preparing it – just add in a big chunk completely raw and peeled (but unpeeled is fine!)

Eat it plain or top it with your favorites – I love something crunchy like cacao nibs, Magic Spoon Cereal (pictured at the top!), granola, my new favorite Nutsola, or even a mix of both (like down below!).

Here’s what’s in my morning “milkshake:”

1/3 large frozen banana

1 cup packed spinach

3 ice cubes

1/2 cup raw, peeled zucchini (pic below for reference!)

1/2 tsp spirulina

1 scoop chocolate protein powder (I love this one and this one!)

1/3 cup filtered water

1/2 cup coconut milk

1 tbsp chia seeds

It goes without saying that everything pretty much just goes into a blender until it’s creamy! Depending on the strength of your blender, you may need to add just a touch more of filtered water or coconut milk to move it along.

Friday Finds

Okay I know the days don’t totally matter anymore, but Happy Friday nonetheless!

Even if it just means lighter e-mails, I’m still excited for the weekend😊 Although, I’m definitely pretty bummed that they’ve officially closed our hiking trails and beaches because this weather is the *ideal* for being outside. That pic up there was taken last Saturday, and I miss it already.

Though this week has been filled with high highs and low lows for so many, I do think there are a few silver linings to the situation we’re in:

  • more virtual connection with others through FaceTime/Zoom
  • time to experiment and get creative in the kitchen
  • quality time spent with loved ones if you’re co-quarantining
  • slower, more simpler living

That being said, I know I have it soooo much easier than most. If you are someone who is alone or taking care of a family, jobless or working hard to protect and serve the rest of us, a business owner, or literally just anyone at all, I’m thinking of you and I’m here for you. If there is any way this blog or I can support you, please let me know❤️

I’ve also been snacking like a monster and baking up a storm, which isn’t necessarily helping my waistline but definitely making me happy…so all in all, it’s just a weird time😂

To be honest, the day I documented here (last Friday), was half decent in the health department! I had made a successful trip to Trader Joe’s in the morning, so we actually had some fresh produce and a solid dinner. I also had to shoot content for Instagram, so that kind of dictated what I ate throughout the day.

And, as always, this post is meant to serve purely as inspiration and even a peek into my day-to-day. I’m not a nutritionist or RD, and definitely don’t suggest anyone follow my habits! They just work for me, but we are all different😊 Alright enough chatting, let’s just get into it!

These Are Crazy Times, My Friend (But I’m Still Staying Positive)

I haven’t been on here in awhile and I think it’s pretty obvious why…

I was going to write a Colorado recap post about my trip there with my family last week, and *then* I was going to finally post my Vietnam travel guide, but with pretty much the entire country on lockdown, that just didn’t feel right.

The last thing I want my little corner of the internet to be is a place of negativity or anxiety, and I’m sure you’re all already well-informed about social distancing, so I’ll just keep it at this: I’m not panicking, but I do have a LOT of energy bars, boxes of chickpea pasta and cans of bone broth😅

I think the biggest two things that are hitting me right now are the fact that 1) we still got to go on our big trip to Southeast Asia and I feel insanely lucky but 2) that things have escalated so unbelievably quickly since then and to be honest, I have no idea what’s going to happen to the world’s economy.

But this post is about positivity! Because at the end of the day, this is all TEMPORARY. Yeah, I know, it might last awhile and it might honestly last a lot longer than we thought it would, but this self-quarantined social distancing thing isn’t going to be our forever. And to be honest, I’m kind of leaning into this temporary “new normal.”

As someone who has been working from home for over a year now and LOVES it, I can tell you that there are soooo many perks once you get used to it! And I’m so, so lucky to be here with Alex, I know that, although it wasn’t easy at first navigating how to work in this small space together😂

But if you’re alone right now in your home, I can’t tell you how amazing FaceTime really is. Have a dinner date, coffee or drink with a friend and call them up – it’s the BEST. I’ve lived far from loved ones for awhile now too, and I promise there’s a way to make it work and feel less lonely😊

Other than that, here’s how I’m staying sane, hopeful, busy and focused on the good:

Gratitude

I’ve been reminding myself how lucky I am to be in good health, have a home, have people I can call when I need to talk all this chaos out, a job that I can work from my living room, food, my dog, and a boyfriend who makes sure we have plenty of hand sanitizer and toilet paper *before* it all gets sold out. If you haven’t tried using the 5 Minute Journal or even that method before, just take a moment each morning and night to write down 3 things you’re grateful for.

Hobbies

Coloring, journaling, doodling, baking, and even knitting have been taking up my free time the past few days and I’m super into it. I’d like to think of this “forced rest” as time to do all of those things we always say we’re too busy to make time for. Other things I want to do include reading, updating my blog design, and making more videos!

Work

I’m blessed as heck to have my regular full-time job right now, but my “influencer” income has definitely dropped. I was actually supposed to go on my first blogging trip today but it go cancelled, of course. So in the meantime, I’m focusing on brushing up on skills, getting my taxes in order, and even getting creative on how I need to pivot in order to keep my business thriving.

*If you’re someone who isn’t able to work right now, I’m sending you all my freaking love. I can only imagine what you’re feeling, but if you do feel up to it, I know I always feel my best when I’m learning something new. Skillshare and even YT have so many free resources if you want to take a course or expand your resumé!

My boyfriend and I have this tradition where before either one of us starts a new job, we go someplace to celebrate for a little getaway first. Our first trip was to Joshua Tree about two years ago, then there was Palm Springs last year for the weekend, Laguna Beach, and this year, even though we didn’t have time to do a big trip, we knew we wanted to do something different, something FUN. Turns out, Palm Springs is close enough to LA for a pretty solid day trip🌴

It’s only a couple hours each way (less if you don’t hit traffic, but good luck with that😉), and if you listen to a podcast/bring some snacks + coffee for the road, you’re good to go!

The day before we left, I did some quick research on where to go and used VisitPalmSprings.com as my main point of reference. Even though there are tons of places I know I already love there, I wanted to take this trip to find some hidden gems and cool local businesses. Turns out, there are LOTS of those in Palm Springs. It’s seriously the coolest and so, so beautiful. Here’s how our spontaneous little getaway went down…

The Broken Yolk Café

Our first stop on the trip, The Broken Yolk Café is literally all the things I want in a morning: a diner-esque ambiance, incredible service, huge portions of delicious food, and free refills on coffee. We splurged BIG time and got eggs benedict, a skillet with chorizo, and buttermilk pancakes. The skillet and pancakes were standouts, for sure.🙌

Moorten Botanical Garden

This was probably my favorite part of the entire day, just because it was something so different! They give you a map at the beginning so you know what you’re looking at, which I love, and there’s so much to see both outdoors and indoors. The indoor cactarium is especially stunning because there SO many different types of plants. I recommend walking around it super slowly to really notice all it has to offer!

Just Fabulous

After breakfast, I wanted to walk around and visit some of the cute shops in the area. If you’ve never been, Palm Springs has a pretty vibrant downtown area with all kinds of little boutiques and even some bigger stores, now that it’s becoming more developed! I knew I wanted to go to Just Fabulous – they have the CUTEST stuff. They were actually decorated for Christmas too, so they had a bazillion pretty & colorful ornaments! There were donuts, cereal bowls, popsicles, all kinds of things, but since we don’t actually have a tree here, I couldn’t justify the purchase😅

Thick As Thieves

Another adorable shop, Thick as Thieves is really my style. It’s just…COOL. It’s one street over from the main one and the vibe is like…bohemian hipster, if that makes sense. I honestly wanted everything. They had some ceramics, local crafts, cute clothes, hats, crystals, jewelry, the works! I’ll 100% be back – it’s a great place for gifts, too!

Kreem

This adorable ice cream shop was the last place we hit in Palm Springs before heading home for the day. The inside is beautiful, but they have the coolest flavors! I tried the vegan coconut and peppermint latté, but ended up going with the latter. If you follow me on Instagram, you know I am obsessed with peppermint lattés, so I had to do it! Alex had the raspberry cheesecake I think – that one was incredible, too!

Other Places in Palm Springs I Love:

Ice Cream and Shoppe – A ridiculously Instagram-worthy ice cream shop attached to a cute boutique hotel. I remember their birthday cake ice cream being one of the best things on the planet.

Koffi– Alex and I went here for coffee and breakfast one morning last time we were there! The vibes are awesome, the breakfast sandwiches are tasty and reasonably priced, and the coffee was delish!

El Jefe at The Saguaro– We came here for late afternoon drinks before dinner once and the margaritas were fantastic!! I loved checking out the hotel afterwards, although I probably wouldn’t stay there during a busy time…lots of partying😅

Cabazon Outlets – So we actually DID hit the outlets on the way home this time, I just didn’t take any photos of our shopping! Alex needed a new wallet and even though I held back (go me for having willpower for once💪🏼), the sales were fantastic. They have a ton of good stores and it’s a good place to stop on the way home!

I hosted my first event this past weekend!! Oh man, it was so chaotic but SO much fun.

One of my goals for this year was to host an event and I kind of just assumed that it wouldn’t happen until I met my friend Charlotte at a wellness event early on in the summer. As someone who has thrown events in the past and truly enjoys doing it, Charlotte asked me if I would co-host a donut baking workshop with her and of COURSE I had to say yes!

So for the past month of so, we’ve been working together to plan a sort of baking class with sponsors, swag bags, cute decor, and other fun things. I think all in all about 17 people showed up to bake with us and though it was a little crowded, everyone successfully baked a batch of their own donuts!! It was so fun to see their creations😍

We started out by making announcements on both of our Instagram pages and the event quickly filled up! It’s actually pretty awesome to be able to bring people together that are literally just from the internet. It makes me want to have a bazillion events just so that I can finally meet & hang with all my insta-friends!! Maybe someday🙏🏼

Anyway, from there, Charlotte put together a spreadsheet (because she’s THE most organized person ever) and we started to keep tabs on who was attending, if they had any food allergies, and what kind of donut pan they wanted! For $15, we provided a donut pan, a mini spatula (courtesy of one of our sponsors, GIR!), all the ingredients to bake and frost a batch of donuts, a little swag bag, and some light bites/drinks! We had some mimosas and asked people to bring their own mugs for coffee – I really loved that idea!

The event went for about 2 and a half hours and even though it ended with me shattering my phone screen trying to take a photo, it was SUCH a blast. I seriously want to hold these events all over the country, how cool would that be?! Maybe that’s the goal for next year😊

Colorado Recap + Vlog!

Hi friends! It’s been a minute, huh?

I’ve been back from Colorado since late last week, but getting back into the swing of things took it out of me and to be honest, I had a small case of the post-vaca blues. It happens to me every time! I think I just had such an amazing time with my parents that coming back to LA and work felt so anticlimactic…but in any case, I made a short vlog about my trip so y’all can see it! I also just really like the thought of documenting moments with video for myself so that I can look back on them in a few months or years. It’s nice to see things in action, so you can find that at the bottom of this post!

As you’ll learn in the video, I’ve been going to Colorado for my family’s annual ski trip since I was about five years old. I grew up learning to ski in Keystone and then started snowboarding in 7th grade since my brother was doing it and that meant it was the coolest thing ever. Turns out, I still think it is😏 We now stay in Breckenridge because the town is so stinkin’ cute and the food is unbeatable. I also love the mountain (Peak 7 is where it’s at, in my opinion!), but we usually venture to Beaver Creek or Vail once during our vacation, as well.

This time around, we actually spent one day in Boulder walking around, shopping, and grabbing some bites (it’s my FAVORITE town in Colorado. I hope to live there someday!) and then went up to the mountains on the second day. Though my trip only lasted 5 days, I wanted to share some of my foodie recommendations for Boulder and Breck, in case you find yourself there someday! I really hope you do because they are two really incredible places with so much to do. And as I mentioned earlier, you can catch my vlog at the end of this post if you’re more of a video person! It’s only 3 and a half minutes long, so I promise it won’t take up too much of your time😉

Boulder: 

Brasserie Ten Ten – Hands down my favorite restaurant in Boulder. When my mom lived there we’d go here allllll the time. They have such a variety of delicious food for breakfast, lunch or dinner and the price points are fantastic!

Jax – Best. Seafood. Eva. Seriously though, this place has a meaaaaan happy hour with incredible oysters, calamari, and drinks! They have incredible service, too – it was my dad’s bday and they brought over desserts without us asking. So sweet!!

The Buff – Another old favorite, the Buff has an insaaaaane breakfast. I’ve gotten the omelettes and skillets before, but literally everything on the menu looks B.O.M.B.

Breckenridge:

Clint’s Bakery – Our favorite place in town for coffee and breakfast on-the-go! Their pastries look absurd, but we usually go for the bagel or wrap breakfast sandwiches before heading out to another mountain for the day!

Hearthstone – This one’s on the fancier side with reservations defffinitely recommended. We’ve been coming here as long as I can remember and it never disappoints!

Twist – *Pictured above! To say this place has the greatest happy hour on earth is not an exaggeration. Their food is so unique and the menu is always changing with new innovations and flavors. Our favorites this time were the philly cheese steak egg rolls and smoked ham mac n’cheese. Come hungry!

The Canteen – We finally tried this place this year (after hearing good things from locals!) and you GUYS. You have to go here. They smoke their own meat and UGH is it good. We had the wings to start and I’m still dreaming about them a week later. My dad got the brisket and that was awesome, too. Highly recommend!

Giampietro Pasta & Pizzeria – Three words: white clam pizza. They only have it on Mondays, so be sure to plan your entire week around it, but if that’s not your jam/you’re not there on a Monday, allllll of their food is amazing. Authentic, hearty, delicious Italian food!

Columbine Café – Our favorite sit-down breakfast place in town! Be sure to get there early or you might have to wait (but it’s worth it) and don’t skip the biscuits – they’re a must!

Breckenridge Tap House – So this place actually used to be called Oscar’s up until this year and we thought it closed, but it just changed names! They have awesome tacos and sides, plus the margaritas are good😉

Dancing for Donuts | Friday Finds

MAN this week was a long one! I’m super looking forward to having some me-time this weekend…anyone else?! I’ve been seeing people taking baths with those gorgeous and colorful Lush bath bombs a lot lately, which may be good motivation to clean my tub and then hop in there! I’ve never tried using one, but they seem glorious.

I don’t know why, but this week not only felt long, but kind of hard to get through, and not even because work has been overly stressful or anything. I think after the holidays I have a bit of a slump, just because the excitement of Christmas is obviously gone and there’s not much on the horizon. I kid you not, I literally looked up last-minute tickets for a Hawaii getaway at the end of the month randomly during my lunch on Tuesday…who knows if I’ll actually pull the trigger but it sounded SO lovely in the moment!

Anyway, back to the usj! Here’s what I’ve been reading this week:
