5 Things You Can Do Tonight for a Healthier, More Productive Tomorrow

Hey y’all! I’m currently freaking out over the fact that Thanksgiving (and my trip home!) is THIS week. So. Freakin’. PUMPED.

As you know, I recently moved in with the boy to a new apartment that I am absolutely loving. To me, moving into a new home means more than just having a new place to sleep. I’d like to think of it as almost a fresh start, a good time to set goals, and create new routines. Since I won’t be going from place to place each night anymore (not that I did that every single night, but you feel me), it’s been so much easier to get into a healthy morning and evening routine. I sort of had one already, but it’s been so wonderful being able to implement my old routine with some new elements on a more regular basis.

I think having an evening routine not only helps minimize things like the Sunday Scaries (which may happen on any given day of the week, let’s be real), or frantic mornings that result in forgetting a packed lunch or gym sneakers at home once you’ve already left for the day. I know I’ve definitely had days like that, but I want to give you some ideas so that you and I both can help prevent them, and in case you’re feeling like you need to get your sh*t together. *raises hand*

So here’s a list of the things I like to do each night (or as much as possible) that help me de-stress, sleep a little better, and head into the next day feeling more confident.

1. Make a to-do list for tomorrow – Okay y’all, this tip is #1 because it is my number one. Every single night I write down in my planner my schedule for the next day and anything I need to remember to do. This helps eliminate that late night panic that sets in when you think about all the things you need to do the next day but aren’t sure you’ll be able to do. If you’ve never felt this way, then I applaud you because man that is not a fun feeling. When you plan your day ahead of time, you can see that yes, you can in fact accomplish everything you need to and life is far more manageable than it seems when you’ve got eight thousand thoughts bouncing around in the darkness. It also makes it easy to not forget to a) pay your credit card bill or b) call your grandmother to wish her a happy birthday…just two examples of things that may slip your mind when you’re in the throes of a busy day.

2. Pack your bag for the next day – Whether it’s your gym bag, your backpack or your briefcase, get everything in there that you think you’ll need. Your plans can’t get derailed if you’re ready to go and it’s easier to space and forget your gym socks in the morning when you’re rushing than it is as night with a clear head. I like to make sure I’ve got my wallet ready (in case I took out my ID or any credit cards over the weekend to put in a clutch), my water bottle, a gym outfit, sneakers, and my laptop if I need it. I’ll also put any snacks in my purse that don’t need to be refrigerated, so that I don’t find myself hangry at the office in the afternoon and reaching for cheez-its that I don’t actually even like…know what I mean? Life is just so much easier when you can get up and get ready in the morning without running around like a crazy person.

3. Prep your breakfast & lunch – You’ve probably heard me say this before, but I’m a firm believer in packing a lunch every single day to save money and stay on track with my health goals. I don’t necessarily do a full meal-prep sesh on Sundays, but I do like to pack my lunch bag the night before so that it’s ready to grab and go before I head out the door. Usually I’ll mix some leftover from dinner with some veggies I’ve roasted, maybe a grain I’ve prepped like brown rice or quinoa, and a sauce like hummus. Additionally, since I now like to eat my breakfast at 9am when I get into the office, I may prep some overnight oats or a yogurt parfait the night before, too. I can assure that on days I don’t do my meal prep the night before, I most definitely find myself running late trying to put my tupperware together in the morning.

4. Pick your outfit – Okay have you ever been trying to fall asleep but can’t because you find yourself thinking of that absolute dumbest sh*t like what you’re going to wear the next day to work or school or dinner? Yep, guilty. It’s so frustrating because you literally just want to fall asleep but you’re thinking about something so silly, yet also essential. My remedy for this is simply to pick out your outfit either in your mind or physically lay it out on your dresser/in your closet before you even lay down to go to sleep. I know it seems like a quick no-brainer, but trust me, if you wake up in the morning and don’t know what the weather is or what you’re going to put on your body, you could waste 15 minutes staring at your clothes instead of getting on with your morning. Been. There.

5. Take a minute for yourself – This right here is a BIG one, my friends. I’m a firm believe in self-care because it’s really, really hard to pour from an empty cup. What I mean by that is if you spend all day working, and then maybe you go to the gym, or meet a friend for dinner, you haven’t actually had time to settle your mind. Have you ever gotten home from a dinner with friends at 10pm and even though you were exhausted before you met them, you’re too wired now to pass out? It’s because your brain is still going. Everyone has different ways they like to unwind, but some of mine include browsing Pinterest or watching one of my favorite tv shows with a cup of tea and a face mask on. Whatever you need to do for you, I think taking at least 15 minutes to do a mini re-set can be so valuable for heading into the next day with a rested mind and happy heart.

Oh, hey! It’s been a minute, huh?

I’m sorry I went MIA for a bit, we finally moved and to say it was chaotic would be a massive understatement! But I’m happy to say that 4 days, 2 trips to Bed, Bath and Beyond, and 2 trips to Ikea later, we are nearly settled! Sort of…there are still lots of boxes to unpack, but I’m confident we can tackle it by the weekend 🙂

Since I haven’t had time to put together a recipe for you just yet, I did want to share something that I get asked about often – my favorite podcasts! If you know me at all, you know I am absolutely addicted to walking outside and listening to a good podcast. I’ve even started listening to them at the gym, and they make my commute soooooo much better, too. Sometimes I realize I’ve actually gone days without listening to music, just because I’m so engrossed in the podcasts I’m listening to. It’s safe to say I’m obsessed, guys.

I’ve put together this list of my 13 favorites in hopes that you’ll find something new you might like whether you’re looking for something lighthearted, educational, or inspirational!

For wellness, inspiration, and all things healthy living:

Almost 30 – Guys. THIS podcast is my favorite. I mean that. They have everything from female entrepreneurs to healthy living bloggers to comedians and I never ever fail to laugh during an episode. I’ve been listening to this podcast since it first started and I look forward to it each week. I’ve learned so much and found myself incredibly inspired by Lindsey & Krista so if you haven’t listened to an episode yet, now’s the time!

That’s So Maven – Another amazing podcast for anyone interested in the health and wellness space, That’s So Maven is by one of my all-time favorite bloggers, The Healthy Maven. She’s so honest and real, and I find that she asks questions most other podcasters don’t ask their guests. There’s a ton of variety here, so you can really find the topics you’re interested in and want to learn more about!

The Balanced Blonde Podcast – This podcast right here is the first one that actually got me hooked on podcasts! Jordan is someone I really admire, particularly in how she’s grown her brand and who she is as a person, and she always has the best guests on. I met her in person at an event this year and totally fangirl-ed out, but yeah. She’s unbelievably inspiring, kind, and authentic. I love that she has a mix of the healthy living, but also some business, spirituality (not totally my thing, but I know tons of people that love it!) and just how to live a full life, in general!

Let it Out with Katie Dalebout – So I’ll be honest, I haven’t gotten a chance to listen to too many of Katie’s episodes, but the ones I have listened to are wonderful! This podcast feels different to me, maybe more casual? She’s such a chill hosts that her interviews, if you even want to call it that, feel more like a regular conversation that you happen to be listening in on. I’d say this one’s mostly health and wellness based from what I can gather, but I think it’s just all-around therapeutic to listen to!

For a solid laugh & pure entertainment:

LadyGang – If you want the definition of a boss babe, just listen to this podcast. These ladies, and every single one of their guests, is absolutely killing it. From healthy living tips to entrepreneur inspiration and dating advice, this podcast has a little bit of everything. It’s hosted by Becca Tobin (one of the Cheeri-O’s from Glee!), Jac Vanek (total bada$$) and Keltie Knight (kind of obsessed with how awkward she is), so it’s a bit more dynamic than podcasts with just one host. Definitely give this one a listen, I know you’ll love it!

The Bitch Bible – I cannot even begin to express how freakin’ hilarious the host of this podcast is. Jackie Schimmel is completely unfiltered and I am obsessed. Like I want to be her friend. A lot of her episodes are solo episodes, which just means it’s even more of her hilarity to listen to, but the ones with guests are amazing, too. She tends to talk about the Real Housewives a lot, which I don’t actually watch, but I even find THAT lol-worthy so that’s saying a lot. If she’s not your cup of tea I get it, but if you haven’t given her a shot yet, you MUST.

For bloggers, entrepreneurs, and business-minded babes:

Women, Work and Worth – This podcast is the epitome of women supporting women. If you couldn’t tell, I’m alllllll about bada$$ female business women (probably because I grew up around them – hay mom!!). The incredible women of Mavenly + Co started this podcast as a free resource for those looking to “design a career & lifestyle with purpose.” If that doesn’t sound like an absolute dream, I don’t know what does.

The Skinny Confidential Him & Her Podcast – I cannot even express to you how much I have learned just listening to Lauryn, her husband Michael, and every single guest they bring on this podcast. There’s a fair bit of beauty/health/lifestyle in this one, but the reason I love it so much is for the business aspects of it. I look forward to this podcast every single week and know that I’m going to finish each episode feeling inspired, motivated, and full of new ideas. You know when you’re reading a book that you love so much that you stay up extra late reading it and have a hard time putting it down? Yeah. That’s how I feel about this one.

The Influencer Podcast – This is the most recent podcast I’ve discovered (after hearing Julie on The Skinny Confidential ^ ) and I. Am. Obsessed. This podcast is kind of all I want to listen to these days as I’m trying to build my blog, but also as someone who works on the brand side in social media. Julie is a New York Times Best-Selling Publicist, but is now also an uber succesful podcaster/blogger/influencer, so she has tons of experience in both the “regular” working world and the blogging world. I cannot say enough about how smart and insightful she is!

The Goal Digger Podcast – If you are in marketing, or blogging, or have your own business and need to market that, you NEED this. First of all, Jenna Kutcher’s voice is just plain soothing, so sometimes when she’s talking about a topic that I may not relate to directly, I’ll straight up just put this on to hear her voice. Is that creepy? Cool. Thought so. Buuuuut seriously, I have learned SO much from this podcast and this woman. She’s phenomenal.

For a good spook or story:

The Vanished – If you’re a fan of Law And Order (particularly SVU), you will LOVE this one. Each episode explores a different missing persons case, from all around the country, and some are even super recent which is kind of cool since you can help be a part of the investigation if you have any insight. The woman who narrates is great, too (so important when listening to anything!) and each story is really unique. My only qualm is that these are obviously all unsolved, so there isn’t any closure, but again, this podcast could even help find a missing person. Pretty awesome.

Lore – So I’ve only listened to a few episodes of this, only because I’ve been so hooked on the others, but it’s kind of a fun one when you’re on a roadtrip or something. It’s mainly historical anecdotes about different places around the world that may be haunted, or just have an interesting past, and sometimes digs into the human psyche. If you like reading mysteries, I think you’ll like this because it’s super interesting but also snackable. They just turned it into a show too, and I cannot wait to watch!

Serial – Alright alright, I know you’ve probably listened to this one since it was kind of the podcast to start all podcasts, but season 1 of Serial literally got me through a 6 hour cross-country flight without even a hint of restlessness. Another great one for mystery lovers, it explores the story of a murder and is brought to us by the people from This American Life. I didn’t totally love season 2, but maybe that’s just me!

As someone who used to have a non-traditional job for 5 years, it’s still weird for me sometimes to think of weeks as Monday through Friday, and weekends as actual weekends… but anywho, where I’m going with this is that sometimes you need a lil somethin’ somethin’ to spruce up a weekday since counting down the minutes until the weekend is no way to live, y’all.

I made these donuts last Sunday when I had some extra time to myself, and having them as a mid-week treat has seriously brightened up an otherwise fairly boring day. I’m also not one of those people who like, waits until Sunday to treat themselves (food wise), because screw that, I deserve to treat myself whenever I want to and SO DO YOU. I recently got my hands some of the Rootz Nutrition paleo protein superfood in Chocolate Banana Nut and I can confidently say that I have upped my smoothie game. I’ve mentioned this in the past, but I absolutely hate when protein powders have a chalk-like taste (as does everyone, I’m sure), but when I find a protein powder that actually tastes incredible, I obviously have to share it with you. Besides taste though, I love that the Rootz products are paleo-friendly so even though I’m not actually paleo (because #labelfree), the ingredients are crazy clean. This particular powder also contains completely undetectable greens like chlorella, spirulina, kale, broccoli and spinach. Since this stuff has so many awesome benefits, I’ve been trying to find new ways to incorporate it into my diet because as much as I would love to have smoothies for breakfast, lunch and dinner, that’s probably not actually the most nutritious option. After browsing Pinterest for allllll the donut recipes, I kind of mushed some of them together to come up with this one. I’ll be honest, I did a pretty good job guys. These have the perfect amount of sweetness, stay moist for days when you keep them in the fridge, and are just the right size for when you want a little treat. Plus, they’re DONUTS which makes them feel extra special, y’know?

Chunky Monkey Protein Donuts

1 egg

1/4 cup peanut or almond butter

1 large ripe banana

2 1/2 tbsp melted coconut oil

3 tbsp coconut flour

2 tbsp Rootz Nutrition Paleo Chocolate Banana Nut Protein (or any protein powder)

1/2 tsp baking powder

1/2 tsp vanilla extract

pinch of cinnamon

1/2 cup mini chocolate chips (optional)

 

1. Preheat the oven to 350 degrees fahrenheit and coat the bottom of a donut tin (mini or regular) with coconut oil.

2. In a large bowl, mash the banana and stir in the nut butter, melted coconut oil and egg until completely combined and mostly smooth. *You can put the ingredients in a blender if you’d prefer, but sometimes I like not having to do the extra dishes!

3. Add the coconut flour, protein powder, baking powder, vanilla and cinnamon, and stir until well-combined, but careful to not overmix! If you’d like, you can fold in the chocolate chips here, or use them later as a drizzle on top like I did.

4. Using a spoon (and a wet finger), fill each donut cavity about halfway with batter. I like to fill mine just slightly over half so they’re a bit bigger 😉 Bake for 12-15 minutes, or until dough is firm.

5. Let donuts cool for at least 10 minutes before removing from the pan. You’ll want to run a spoon along the edges to make sure the donut hasn’t stuck to the pan, then carefully spoon each donut onto a plate or wire rack to finish cooling.

6. If you’d like, you can melt the chocolate chips in a bowl with a touch of coconut oil (I’d heat them for about 20 seconds at a time), and then drizzle the melted chocolate over the donuts once completely cooled. Store in an airtight container in the fridge for up to 3 days and pop in the microwave for 15 seconds before eating!

Fall Foodie Haul!

Aaaaand we’re back to Monday, just like that.

I had a rather productive weekend, to be honest. I did my fair share of Netflix-ing for sure, but I also accomplished a lot of things on my to-do list (ie. grocery shopping, organizing, getting some work done, etc.). And a quick life update – we got the apartment of our dreams!!! I signed the lease Saturday and we move in at the end of the month so I am PUMPED. Know what else I’m pumped for? This weather to stop being 90 degrees. Like I kid you not, I drove to east LA this weekend and it hit 98 degrees on my way. That is not October weather, people!! Looks like it’s going to cool down soon though, and I just did a massive pumpkin-themed haul so things are getting festive UP. IN. HERE.

I wanted to share with you some of the most delicious fall foods I’ve tried lately because damn they are good. I did buy a few other things, but they unfortunately didn’t make the cut because I wasn’t all that big of a fan. So, I’ll just leave those out and tell you what I am absolutely LOVING right now that’s getting me in the mood for my favorite season…

FitJoy Homemade Pumpkin Pie Protein Bars (Gluten-Free) – Guys if you could’ve SEEN my face when I bit into one of these for the first time…like a kid on Christmas because yes, these are THAT good. I will be honest with you, so many bars I’ve tasted that claim to be “birthday cake” or like, “red velvet” flavored have not made my taste buds very happy, so I was slightly skeptical of these holding up their name. But I will tell you right now, you need to order these asap because once word gets out, they are going to sell out immediately. I think these are so perfect for a sweet treat mid-afternoon or pre/post-workout, but if you’re tempted to reach for dessert after dinner, you could totally just eat half of this and be super satisfied!

Organic Canned Pumpkin – I think this one’s pretty self explanatory, but there is SO much you can do with this can. My greek yogurt pumpkin pasta sauce is a good place to start, or my pumpkin spice golden milk latte, but also in oatmeal, pancakes, smoothies, pumpkin bread, pumpkin cookies…I could probably go on forever. Just grab a can of this stuff (or 5) and you’re set for the season!

Kodiak Cakes Pumpkin Flax Pancake Mix – Is there anything better on a cozy fall morning than pancakes?! No. The answer is always no. And if you’re really trying to step up your breakfast game, I highly suggest you pick up some of this superfood pancake mix from Kodiak in pumpkin spice. The pumpkin flavor isn’t overwhelming at all, but it’s just the right amount of spice for a seasonal breakfast. I love that these are absolutely guiltless too (not that food should ever make you guilty, but you know what I’m sayin’). They have 10g of protein and 5g of fiber in each serving, and are made with 100% whole grains. I put a touch of maple syrup and Fourth & Heart Vanilla Bean Ghee on top and was in absolute heaven.

Figs – So I’ll be honest, I always thought figs were like, super expensive, and so I kind of never bought them even though I LOVE them. But the last time I went to the grocery store, I saw that they were only $3.99 for a big container, which may be more than bananas or apples, but was sooooo much less than I thought they’d be! And trust me, they are so worth it. I’ve been putting them on my oats, on top of my smoothies, and straight up eating them standing up in front of my sink. It’s safe to say I’m obsessed…

TJ’s Pumpkin Ravioli – If I could have one thing for dinner every single night for the next two months, it would be these. If you couldn’t tell already, I’m definitely more of a sweet person rather than a savory person, so these ever-so-slightly-sweet little pillows of goodness are riiiiight up my alley. I’ve tried these both with olive oil/sea salt and butter/cinnamon, and both versions are incredible. If you served these with a side salad you might just be able to pass them off as a balanced meal 😉

Trader Joe’s Pumpkin Spice Almond Beverage – Guys. I would not be lying to you if I said I have been putting this almond milk in EV-ER-Y-THING. In my coffee, in my oats, in my smoothies, in baked goods, tea, you name it I’ve tried it. I can’t get enough, which may actually be a problem since I know TJ’s has been selling out of this stuff like crazy. I think it’s probably 12x better than people expected it to be too – just the perfect amount of pumpkin flavor, spices and sweetness, plus it’s a bit thicker than plain almond milk. My only qualm is that there is added sugar in there, so I may actually try to make my own version. Until then, you can find at least 2 cartons of this in my fridge at all times.

Honeycrisp Apples – Pumpkin is wonderful and all, but fall is definitely not complete without apples. Autumn makes me miss apple picking and getting cider donuts with my family in the northeast, but the closest thing I can get is to buy the best apples I can find and pretend I’m not in 90 degree LA. I obviously eat apples all year round, but they seem extra special in fall. They’re another great oatmeal topping, but you can also saute them in some ghee with cinnamon and brown sugar and you’ve got a fairly healthy fall dessert!

Fall Flowers – Ok guys, I know this isn’t like, a fooooood, but i think treating yourself to flowers every once in awhile is an absolute must and fall flowers are so perfect for setting the mood! Like lots of things on this list, I bought this bouquet at TJ’s since I think they have some of the best deals on flowers. I also love getting fresh flowers from the farmer’s market (one of my favorite things to do on a cool fall weekend!), and they usual have more unique flowers for a great price, too!

Trader Joe’s Pumpkin Spiced Pumpkin Seeds – These are the one item not pictured in that first photo, and they weren’t my absolutely favorite, but I wanted to include them on this list because I’ve been adding them to my oatmeal for a bit of crunch! They’re a little too sweet to enjoy on they’re own, but they’re absolutely delicious and would be amazing on top of a pumpkin smoothie or in fall trail mix!

Why I Don’t Own a Scale (and Never Plan to in the Future)

Can I tell you something? I’m like, soooooo beyond exhausted of thinking about weight.

And to be frank, I’m tired of hearing other people talk about it, too. Now that’s not to say I don’t support you in your weight loss journey because I absolutely 100% do, but I think what’s really been bothering me is the focus on our actual “weight,” as in the number on the scale, versus how we treat our bodies. I’m no nutritionist or trainer (y’all know that), but I’d like to think of myself as a health-conscious human. I try my hardest to eat whole, un-processed foods as much as possible, I move my body and strengthen my muscles on a regular basis, and I take care of it when it needs to rest. I’m by no means perfect, and I pay waaaaay too much attention to how my stomach looks in the mirror, but I can tell you that I’m not a slave to the scale. I feel incredibly lucky that my main hobby growing up (and then my job) was a sport, and that body positivity was something promoted by those around me.

I know a lot of women, or people in general, have an obsession with weight, as do I most of the time, but I think we all need to shift gears a little bit. That number on the scale (which also varies depending on which one you’re using so which one is even accurate anyway?!) is exactly that: just a number. It fluctuates when you drink a lot of water, or when you don’t and you’re dehydrated, when you’ve had a few indulgent days on vacation, or a few extra salads when you’re feeling motivated, when you’re on a juice cleanse, or when you go off of it.

I guess what I mean is, what’s the point of even looking at it if it’s going to change depending on whether you weigh yourself first thing in the morning or 14 hours later before bed? Not to mention, muscle weighs more than fat, so that number can be even MORE misleading than you thought. And please keep that in mind – sometimes when that number goes up, it just means you look like a bada$$ and your guns are busting out of your t-shirt because you’ve been lifting and are therefore burning more calories on the reg without even trying (because that’s how muscle works). It may NOT mean that you gained a bunch of fat because you had 3 squares of chocolate last night.

I know this message isn’t for everyone because yes, it is unhealthy to weigh over a certain amount, and I get that, but the majority of people who become slaves to the scale in their bathroom or gym shouldn’t actually need to weigh themselves, right? Like if you just busted your butt for 45 minutes lifting weights or pounding on the treadmill, you’re kind of kicking a$$. And if you’re going to go home afterwards and have a balanced snack or meal with some greens and protein and healthy fat, you’re kicking even more a$$.

So here’s what I’m saying, I just feel like we’ve all gotten a tad obsessive with the weight talk, and I’m fully including myself in that. I think what we should be focusing on instead is what we’re putting inside of our bodies and how we’re maintaining optimal health. Because a certain number of pounds does not equal a level of “health.” We feel guilty when we come back from a vacation that may have involved a touch too much ice cream and fewer workouts than usual, when the reality of it is, if we come back from that trip, fuel our bodies with some extra goodness and focus on getting enough nutrients, it shouldn’t matter what the scale says.

If you know you’re treating your body as best as you possibly can, and that includes balancing it with a happy, full life too, then you’re kind of killing the game. Screw the scale. Stop looking at the numbers and look at your fridge instead. What’s in there? Hopefully some greens, and fruit, a few sources of protein, your favorite foods, and maybe some sort of milk for coffee (if you’re me…). And did you move your body today? If you didn’t, can you squeeze in a 20 minute walk around the block right now? Focus on those things. I promise, you’ll feel better.

I apologize for being semi-MIA these past few days, I’ve been out on the east coast hanging with my family in my all-time favorite place in the entire world, the Outer Banks in North Carolina!! I’ve been coming here since I was a toddler and I have so many wonderful memories of coming here with friends and family, and being here instantly re-charges my batteries.

One of my favorite things to do while I’m on vacation, especially when it’s with my mom, is cook or bake! Since we stay in our beach house down here, we have access to a full kitchen (which can be rare on vacations), so home-cooked dinners & desserts are easier and more fun to make. My mom recently came across this recipe for whole-grain chocolate chip cookies in the Wall Street Journal and we knew we needed to make them. I’ll be honest, we don’t usually opt for healthier versions of anything while we’re in OBX (because hey, we’re on vacation!), but we do have someone new joining our family very soon, and she has Celiac’s, so we’re working on incorporating more gluten-free foods when we’re all together. (Wait…did I tell you my brother was engaged?!?!)

Anyway, these cookies are slightly healthier than normal chocolate chip cookies since they’re made with oat and buckwheat flour – both of which are packed with fiber and help improve heart health. A couple of tips: I’d let them cool completely before putting them into a tupperware (unless you’re eating them immediately when they’re warm, which I definitely condone!) otherwise they’ll crumble. Also, if you can remember, leave the butter out the night before you want to bake so that it’s super soft and you won’t even need to use an electric beater! That’s one less dish to clean aka a win-win.

In any case, I totally suggest making these the next time you need to bring or have dessert for a group, since this recipe makes about 2 dozen good size cookies and I can promise you that they are a crowd-pleaser! Even my very skeptical bf enjoyed them, and that is saying a LOT. They’re the perfect amount of sweetness and have so much more flavor to them than regular cookies. They also have a cool texture too, like a bit crunchy on the outside, but also fluffy on the inside? It’s hard to explain, which essentially means that you’ll just need to make them for yourself and see 🙂

Nutty Whole Grain Chocolate Chip Cookies

1 cup oat flour

1 1/2 cups buckwheat flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp cinnamon

1 egg

1 cup coconut sugar

1 cup softened butter

1/4 cup peanut or almond butter

3/4 cup dark chocolate chips

1/4 cup chopped pecans (optional)

1. Preheat the oven to 450 degrees fahrenheit. In a medium bowl, combine the flours, baking powder, baking soda, salt, and cinnamon. Mix well.

2. In a large bowl, beat the butter, sugar and egg until smooth either with an electric beater or wooden spoon and strong arm. Add the dry mixture slowly and continue to mix until well-combined. Fold in the chocolate chips and pecans, if including.

3. Form the dough into 1 to 1 1/2 inch balls and place on an ungreased cookie sheet. I did a dozen per sheet since they don’t spread too much, but definitely err on the side of caution when leaving room for them! Bake for 12-14 minutes or until starting to brown on the sides. Let cool for 10 minutes and then store in an airtight container. Enjoy!

I know I legitimately say this each and every month, but I honestly can’t believe how quickly August is flying by. Fun fact: this is actually my very first summer working a full-time 9-5 job, which I think is making time pass by even faster since summer didn’t feel all that different from spring. Although, that’s partly just an LA weather thing, which I’m fully aware of…haha

I’m so sorry I haven’t posted a recipe in awhile, I have been traveling on the weekends and short on time, so the meals I’m prepping for the week have been pretty bland! Think basic quinoa with a bunch of raw veggies topped with 2 huge spoonfuls of hummus (yep, that’s been my lunch every. single. day). I promise I’ll be back next week with a new recipe (the carrot cookies most likely, since everyone has been requesting those!), but in the meantime I’m back with my usual Friday Finds from Chicago! July Favorites.

I swear I say this every month, but where the F is time going?!

I mean literally, this year has flown by, I feel like I’ve barely blinked and tomorrow is August already. Although I will admit, I was going through my photos on the plane back from Napa this weekend (aka my favorite thing to do when I don’t have wifi) and I’ve done a looooot this year already! Like way more traveling and adventuring than I’ve ever done in years past, and that makes me feel better about 2017 being more than half over. Okay anyway, here’s what I’ve found and loved this past month:

Perfect Bar– Ok so I finally tried one of these bad boys! I had to run into Whole Foods (which I never do) and had to splurge for one because I’ve been seeing them everywhere and have only heard good things. I went for the Maple Almond and it was so. friggin’. tasty. 13g of protein + superfoods + gluten-free + real ingredients?! I mean hello, this is a no-brainer. The hype is real because this thing legitimately kept me full unlike most other bars. Granted, it has more calories and costs more so I would hope it would be more of a hefty snack, but yeah. Cannot wait to try the other flavors!

Suja Probiotic Juice Drink – So there was one Sunday that I literally ran around like a crazy person in the heat and then decided to go for a 3 mile walk before work and was therefore insaaanely dehydrated. I wanted kombucha, but found this instead and it was suuuuper yummy! I think it was on sale (2 for $5) so I figured why not, and I’m so glad I tried it. It tasted like a juice and was really refreshing, plus it had probiotics, which I like to have every single day. It didn’t have a vinegar-y taste like kombucha does, though (which I thought was a good thing!).

Pressed Juicery Freeze – This was another thing I was absolutely dying to try after seeing it all over the food-blogging world! I got some on National Ice Cream Day because I was trying to bounce back from a few indulgent days and it was absolutely delicious. So creamy and flavorful, but also really light! I added cacao nibs, strawberries and coconut on top of the vanilla bean, which is made out of their vanilla almond milk, and I was obsessed. The only downside is that this cup cost $6, but hey, #yolo.

Carrot Cake Cookies – I found a healthy breakfast cookie recipe on Pinterest a few weeks ago, and tweaked it to make it even healthier! That didn’t take away any flavor though, these cookies were so good!! They’re basically oats, applesauce, carrots and maple syrup, plus a few other superfoods, so they were pretty dense. I would have a couple each afternoon and they were the perfect pre-workout snack! I love things that are slightly sweet without actually having a crap ton of sugar in them, since I like to have something sweet pretty much after every meal. Can’t wait to make these again and share the full recipe with you guys!

Alkani Cold Brew Maker – I think I may have saved the best for last because this thing is a GAME. CHANGER. Alkani sent me their cold brew maker a few weeks ago and it has been actual heaven each morning when a) my coffee is already made b) it’s cold and c) it’s delicious. All you have to do is put a cup (or so) of fresh coffee grounds in the metal strainer in the middle, wait 24 hours and boom done. The coffee it makes is so smooth and I love the design of it, too!
