Recipes I’ve Made Recently & Loved #4

Our kitchen has been busyyyy these days!

I turn to baking/cooking whenever I’m feeling low, but also inspired, and since quarantine has been an absolute rollercoaster of emotions, that pretty much means 24/7…haha

I’ve made a few recipes of my own, but I also have soooo many saved from others, so I finally started going through that list! As to be expected, most of these are sweet, but also have a healthy twist, too. I’m all about dessert, but want to make sure I still feel good. It’s all about balance 🙂

Here’s what I’ve been whipping up!

Strawberry & Blueberry Baked Donuts (pictured above) – I don’t know if this even counts as a recipe, but I turned my favorite Birch Benders Paleo Pancake Mix into donuts for July 4th and they were delicious! I basically just used a few tbsp less of water, added in vanilla extract and berries, then frosted it with a mix of greek yogurt, cream cheese and maple syrup.

One Giant Kitchen Sink Cookie – This recipe is from my sweet friend Kelly and let me tell you, it was GOOD. I I used the Abby’s Better French Toast Pecan Butter and actually divided it into two giant cookies, and they were so fluffy!! I love these for when I don’t want a full batch to tempt me!

Vegan Alfredo Sauce – I’ve had a looooot of different vegan “cheese” sauces in my day and let me tell you, this one from Jessica in the Kitchen might’ve been the best one. Alex even loved it, so that’s saying something! I’m not vegan obviously, but I appreciate that sauces like this one have more protein and nutritional value, plus I think they honestly just taste better!

Mini Vegan Brownie Bites – Typing this is actually reminding me that I absolutely *must* make another batch of these delicious brownies from Orchids & Sweet Tea! I made mine with allulose (a new sweetener blend from Whole Earth) and almond butter, but I want to try them with sunflower like she made them, too.

PB Cup Protein Hearts – Let me tell you about these lil hearts…I’m OBSESSED with them. I ate 2-3 everyday for about a week and they made me so happy! I used a candy mold to make the hearts, but obviously rolling them into balls is much easier and just as tasty. Highly recommend!

We’ve also been making a ton of easy, cheap and healthy meals from Trader Joe’s staples, so I’ll be doing a roundup of those soon, too! Just want to provide you guys with all the inspiration since I know a lot of us are still stuck at home cooking these days 🙂
