I know I kind of disappeared this week and to be honest, I have no good excuse other than the fact that I just needed a BREAK. You know?

I’ve been talking a lot on my Instagram about how the comparison trap is getting pretty real for me on social media, not to mention the massive time suck that it is, and I wanted to rest my eyes/brain for a second since the previous couple of months have just been bonkers content wise!! I really do love social media and the inspiration, relationships, and community it’s brought me – I wouldn’t change that for anything – but we can’t deny that it’s a bit exhausting. Worth it! But exhausting.

In any case, I’m back with my faaaavorite type of blog post to share with you all and that’s a link roundup of my faves from the past couple of weeks! As much as I love consuming content on social platforms, reading blogs/media sites will always be my #1. Here’s what I’ve been reading lately:

Oh man, I had so many things I wanted to do in the few days I had off in between jobs, and only about 1/3 of it got done😳 HOW DOES TIME MOVE SO QUICKLY?! But you know what, it’s okay, because I actually was decently productive and more importantly, was able to hit the re-set button a little. I’ve been trying a bunch of different workouts and meeting new people in the process, so that’s been fantastic. I also got to spend some quality time with friends and my boyfriend, so that’s always a plus. I feel like you can’t always check off every single thing on your to-do list, y’know? You have to prioritize and get the super important stuff done first…

Anyway, I digress! I think my point was going to be that I meant to write this post weeks ago but am only getting around to doing it today. I know a lot of people tend to fall off the wagon with resolutions for the year and what not, but I feel like consistency and routine helps sooooo much. Since my life is going to be changing starting today (with my new job!), and things have been busy regardless, I have one constant that’s helping me stay on track with my health and fitness goals and that’s my daily smoothie. I’ve raved about smoothies before on here, but let me reiterate again just how incredible these things are because you can literally pack an entire meal’s worth of nutrients into one little blender and make it taste AMAZING. Like how crazy is that?!

The smoothie I’ve been having almost every single day since the start of the new year looks a little something like this (depending on what’s in my fridge/freezer/pantry):

1/2 cup unsweetened almond, cashew or coconut milk

1/4 cup cold water

2 handfuls greens (kale or spinach)

1/4 cup fruit (mix of frozen banana and berries)

2 scoops HUEL

1 tbsp nut butter

1 tbsp ground chia seeds

It literally takes me all of 4 minutes to make since I throw everything in my NutriBullet and blend it for 30 seconds. That’s IT. I swear. And this thing will last me through until lunch at about 12:30 which is saying a looooot for this girl since my metabolism is usually through the roof in the morning. I used to have breakfast, a mid-morning snack at 11am, and then be hungry again by noon. That is no longer the case! Granted, this smoothie has a ton of calories and protein, but they all come from good stuff. I don’t count calories ever, I’m more concerned with the quality and nutrients of what’s going into my body.

If you’re wondering what HUEL is, it’s a nutritionally complete food that’s 100% vegan, contains 27 essential vitamins and minerals, plus protein, carbs and fats to power you through your day. So yeah, it’s about 10x better than a protein powder guys. It’s made from a blend of oats, pea protein, flaxseed, brown rice protein, MCT’s from coconut, and a vitamin & mineral blend. I chose the vanilla flavor, so it is flavored with vanilla and stevia, but the ingredient list is unbelievably clean. I also love that there’s minimal packaging and that HUEL has a shelf life of 12 months. It’s also super affordable, which I find impressive for a product that packs such a nutritious punch. They also make a gluten-free version, so that’s a plus for people that need an allergen-friendly option!

I think what I love so much about smoothies, especially now that I add HUEL to mine, is that they’re hella convenient. For someone who has to run out the door every morning and either eat breakfast in the car on the way to work or at work, being able to have a complete meal that I can simply drink is key. That being said though, I truly do not believe you need to spend more than $5 per smoothie to make it nutritious or delicious. If you invest up front in a few great items for your pantry, you’ll be good to go, making these meals absolutely perfect for #BabesOnABudget!

Now without further ado, here are my five must-have add-ins for healthy, tasty & filling smoothies!

1. Maca Powder – I love maca because it honestly just tastes really good, but it also is known for reducing stress hormones as well as the fiber and minerals it contains. It also boosts libido, so that’s always good😉

2. Spirulina Powder – I don’t know what it is, but just having spirulina makes me feel instantly healthier😂 It has a vey strong flavor so I use no more than half a teaspoon at once, but it’s 60% protein and a rich source of phytonutrients. It’s an all-around superfood that provides a huge boost in vitamins A, K1, K2 and B12.

3. Kale – This is another one that just makes me feel healthier when I do it, but I can say with 110% confidence that you will not be able to taste this stuff at ALL. I’m all about adding veggies wherever I can and being able to hide some in my breakfast is pretty sweet.

4. Nut Butter or Powdered Peanut Butter – I think nut butter is that one component that helps the smoothie keep me fuller for that extra hour. I know it’s added fat, but it’s also added protein AND tastes amazing. I could probably survive off peanut butter, so adding it to my smoothies makes them taste like such a treat while also providing me with some added protein and fat.

5. Ground Chia Seeds – If there’s one thing that’s in my pantry at all times, it’s ground chia seeds. I like to have flax seeds too, but chia somehow always takes priority for me. Again, they’re pretty much un-tasteable yet somehow provide added fiber, omega 3’s, antioxidants and calcium and all you need is a tablespoon. That’s pretty freakin’ magical, don’t you think?

I’ve heard so many people saying that this month has totally dragged on for them, but for me it actually went by kind of quickly! Lots of movement, lots of change. It’s been exciting and stressful and interesting! Promise I will share more details very, very soon😉

This month was full of trying new products in everything from my diet to my beauty regimen and my fitness routine. I found some reallyyyyyy awesome things that have really helped me stay on track with my goals across the board and I know you’ll love them, too! Some of these items were gifts from the holidays, and some I just came across, but everything is linked so that you can find them. And now, in no particular order, my January favorites!…

Food:

Simple Mills Rosemary & Sea Salt Crackers – After seeing Simple Mills products alllll over my Insta-feed, I finally got my hands on some of these bad boys (they were on sale at Sprouts, #BlessUp). The big draw is that these are gluten-free, soy-free, and dairy free, although y’all know I’m not actually restrictive with my diet. I will say though that there’s just more nutritional value to crackers made with almond flour and honestly these crackers are just REALLY good. I ate the whole box in an hour, so that should tell you something😅

Trader Joe’s Soyrizo – GUYS. guys. Ok so I saw these written up somewhere as one of Trader Joe’s best selling products of 2017, so I decided to try using them in homemade burrito bowls for dinner one night. Full disclosure – I actually didn’t even tell my boyfriend it was vegan, and he totally loved it. The flavor is insane! And it’s really easy to make, too. I can’t wait to get it again and maybe at it to a scramble or some nachos!!

Fitness Bread – If I had to pick one thing from January that I was obsessed with, it would be this bread (pictured above as the avocado toast!). It’s by a German brand called Mestemacher and I remember my mom eating this when I was little. It’s made of rye flour, wheat germ, and oat fiber making it cholesterol free and high fiber. Each piece is thinly sliced, pretty dense, and a bit nutty. Aside from the fact that it’s got more nutritional value than many other breads, I seriously just think it tastes amazing. I’ve been seeing a lot of bloggers talking about gg crackers, and I’m not sure what the consistency of those is, but these are sooooo much cheaper. I found mine at Sprouts for like $4, but I’ve linked them here on Amazon too in case you don’t have one of those near you! I hiiiiighly recommend making your avocado toast with this. You can thank me later…

Wellness:

Garden of Life Women’s Multivitamin Gummies – If you saw my vlog, you’ll know that I take these every👏single👏day👏 I am obsessed. They taste really good, and are kind of like a little sweet treat, so that’s most likely why I like them so much #LetsBeReal…but they’re also filled with all kind of nutrients we need and may not be getting from our food. I’ve mentioned Garden of Life on my blog before, but I seriously love this brand. They make high quality proteins, supplements and bars and everything is vegan, which is always a plus!

Hair, Skin and Nails Gummies – Another one I mentioned in the blog, I’ve been taking these gummies for years. My nails are super brittle for some reason so I’ll take these in addition to the mulitivitamin above. Since the multivitamin I take contains 100% of the suggested daily value, and two of the Hair, Skin and Nails Gummies is like 1000%, I’ll just take one. That way I’m getting extra biotin without causing my body to overproduce oil (hellooooo breakouts). Just check whichever vitamins you take to see the percentage, but make sure you get enough biotin without it being too much!

Fitness:

Booty Bands – My brother bought me these for Christmas after I kept seeing booty band workouts on YouTube and I’m in LOVE. These are so great for glute activation before a workout, or even just a booty band workout in itself! I’m really trying to work on my tush before summer (it’s one of those areas I’m just overly self-conscious about for no reason) so having the bands for extra resistance allows me to work them a bit harder. I promise I’ll put a workout with these up soon! Don’t let me forget…

Ab Gliders – So these were also part of that same holiday gift, and I also think they’re an essential for any home gym! You can put your feet or hands on them, and they work on any kind of floor since they just slide along. If you’ve ever used a pilates reformer, it’s kind of the same sensation in that you really have to engage your muscles so that you’re not just sliding all over the place. These prove that you don’t need any fancy equipment to work your core (or anything) else, though!

Beauty:

OleHenriksen Banana Bright Undereye Cream – Full transparency on this one, I received this as a free sample so I didn’t necessarily have high hopes, but I am looooooving this cream. I’m not sure if it really brightens the undereye so much as makes it hydrated and smooth, so it’s a perfect base for concealer (a must for actually looking like I get enough sleep!).  I think my favorite part of this product is just the fact that it makes me feel like I have a real skincare routine now – something I never had before and feel is increasingly necessary as I get older! It has vitamin c in it, which is apparently very good for the skin, so I’ll take it!

Aesop Hand Cream – This was a gift from my coworker and oh MAN does it make me feel fancy! I know this one isn’t cheap, so I’m extra thankful it was given to me (thanks Shane!) because it is sooo luxurious. If you read my post on my focus words for 2018, you know I’m trying to focus more on loving myself, which essentially means splurging on the things that make me feel good. Bath and body products are 100% included in this because can you honestly tell me anything better than a hot shower at the end of the day that makes you feel like you’re at a spa? So yeah, putting this hand cream on after that shower makes me feel like a straight up QUEEN and I highly recommend it!

Murad Time Release Acne Cleanser – I don’t know about you, but I have been maaaaajorly struggling with my skin these days. I wouldn’t call it adult acne necessarily, but it’s not that far off and as someone who didn’t really have acne before, it makes me super frustrated and self-conscious. I’ve tried a ton of cleansers in the last year and the only one that seems to make my skin feel really clear is this one. I’ve been using it for about two weeks now and love it so much. It’s slightly more expensive than other cleansers, but definitely cheaper than many and it comes in a huge bottle. I think it’s SO worth it if you’re having trouble finding something that works for you!

I hope everyone had a wonderful holiday! I obviously wanted to take some time this week to just soak up as much time with my family as possible, so I did take a mini blog-break. As I sit on the train down to D.C., I’m feeling so unbelievably grateful for having the opportunity to travel home for the holidays and to work remotely. I hope you all were able to, as well!

This year has been pretty nuts in so many ways, particularly for the world (and this country) in general, but personally I experienced a ton of personal growth, adventuring, and figuring out where I want to be in life. I expanded my skillset professionally, started growing my blog, strengthened new and old friendships, moved into a new apartment with my boyfriend, and traveled to so many new places. It’s been quite the year!

I just want to thank you all so much for reading my blog, you have no idea how fulfilling it has been to create content and have this creative outlet. Reading your comments and hearing your feedback makes me so happy, and I’m honored to be able to share this bit of my life with you. Daylight savings is really screwing with me, guys. I’ve been more tired than ever, which doesn’t make sense since I’ve been going to sleep earlier? Did the one hour change mess up anyone else’s body clock? Oof.

In any case, we have made it to Friday which is by far the most important thing to note. I’m looking forward to a weekend filled with people that make me happy and lots of rest. I’ve been dying to whip up some more fall recipes too (after last weekend’s baking extravaganza + my first batch of chili for the season!). Will hopefully have more yummy things for ya’ll very soon 🙂

What I Ate Wednesday (WIAW #3)

Hi friends! I’m back with another day of eats for y’all!

This post is definitely not meant for anyone to compare their eats to, just to get ideas for some quick, healthy and easy meals! My meals and snacks definitely vary from day to day, and this is an example of a lighter day for me since I didn’t workout at all. You should absolutely feel confident in your choices to nosh on whatever you’d like, everyone is different 🙂

So I usually chug a bunch of cold water each morning right when I wake up, but lately I’ve been trying to add some lemon since it tastes delicious and I’ve heard it’s amazing for our bodies. Will keep you posted on that if I make it a habit (here’s hoping!). After that, I make some coffee in our french press and froth some Trader Joe’s Pumpkin Spice Almond milk to have with it (plus a touch of stevia!). I don’t know about you, but coffee in the morning makes me SO damn happy. Like sometimes before I go to sleep I think about how excited I am to wake up and make some because it’s so delicious…is that crazy? (Yes Jordan, yes it is.)

Most mornings for the past few months, I’ll make a green smoothie as close to Kelly Leveque’s Fab 4 recipes that I can get. My go-to recipe has kind of a ton of ingredients but I’ll tell you anyway because it’s incredible: 1 scoop vanilla protein powder Garden of Life Greens and Protein Powder, 1 tbsp natural peanut butter, 1 tbsp Powdered Peanut Butter, 1/2 cup almond milk, 1/4 frozen banana, 3 frozen strawberries, 1 cup greens (kale or spinach), 1 tbsp Maca Powder, 1 tbsp Chia Seeds, 1 tbsp ground flaxseed, and water to thin as needed. It. Is. AWESOME. And I love that I can throw so many nutrient-packed items in there to start my day off on the right foot. Whoever invented smoothies is a genius.

My smoothie kept me full until noon which was pretty rad since sometimes I need at snack at 11am (which is fine, too!) but today I just had an earlier lunch. I’ve been making quinoa with some salad and I pop it in the microwave with some frozen turkey meatballs from TJ’s (bless that store) and top it with their autumn harvest pasta sauce. It’s a pretty solid lunch with minimal meal prep, so I’ll take it!

I did get hungry mid-afternoon so I grabbed one of my Shine Organics superfood pouches in PURIFY just to tide me over until dinner. These pouches are so freaking delicious, like applesauce but tastier and more nutrient-dense, so I downed it probably point 2 seconds but since I knew I wouldn’t be working out that night (all about those rest days!), a smaller snack was perfect. Dinner was pretty simple since my boyfriend is out of town – he usually does the fancy cooking! I’ve been obsessed with the Dr. Praeger veggie burgers on Ezekiel toast with hummus + a side salad. Fully aware this looks like the dinner of a broke college student, but I’m telling you, it’s delicious. I’ve tried a ton of veggie burgers, but these are hands down my favorite!

To finish out the night, I had to quell my raging sweet tooth obviously, so I went with a Simply Lite Dark Chocolate Bar (LOVE these). I meant to only have a couple of squares but had half the bar…oops. But also I’m owning it because if you want some chocolate on a casual Tuesday night, do that.

I’ve only been for work or with family, so we’ll see…hopefully things don’t get too rowdy since we all know I’m about 80 years old at heart 😉

Carrot-Apple Spice Breakfast Cookies.

I’m switching things up this Friday and sharing one of my new favorite recipes!

Here’s the thing about me – I’m pretty much always craving something sweet. All of my closest friends know me as a dessert fiend, which probably isn’t great since most of the desserts I love (cupcakes, cookies, ice cream, donuts, etc.) are filled with not-so-great-for-you ingredients. That being said, I’ve been trying to lower the sugar in my everyday eating (save for natural sugars from fruit), especially during breakfast! As much as I love the sound of starting my day with a huge stack of pancakes (unless they’re these),or sugar-filled smoothie bowl, it’s probably not going to give me the sustained energy I need to get through my busy morning.

Enter: the breakfast cookie. Now this recipe isn’t just some imposter parading around as “healthy” when really it’s filled with sugar and chocolate. These carrot-apple spice cookies legitimately are packed with protein, fiber, vitamins and healthy fats, aka the nutrients your body needs to function. That being said, they don’t even taste that healthy…like, you know that weird taste when baked goods have too much greek yogurt instead of oil? Yeah.

What I love about these cookies is that they’re moist (ugh, sorry I know everyone hates that word) from the carrots and apple, and genuinely substantial. You can think of them as oatmeal really, just baked and in tiny servings 🙂 The best part about cookies, too, is that you can take them on the go, which is essential for us busy babes. I keep them in the fridge and take 2-3 to snack on during the workday. That’s probably too many, but whatever, it’s way better than eating on processed food or snacks, and you know exactly what’s in them.

I based my carrot-apple cookies on this recipe and used only coconut oil (no butter). These are 100% gluten-free as long as you use gluten-free oats, and if you wanted to make them vegan, you could use a chia or flax egg! Don’t be scared by all the ingredients below, this is one of the easiest recipes for a baked good I’ve ever seen. If you want to make your life even easier, use a food processor and pulse your carrots and apples in there a couple of times. Then you pretty much throw everything in a couple bowls and call it a day. You know me, I like to keep things efficient!

Carrot-Apple Spiced Breakfast Cookies

2 1/4 cups rolled oats

1 cup whole wheat flour (or oat flour if you’re gluten-free!)

1/2 cup ground flaxseed

2 tsp cinnamon

1 tsp nutmeg

1/2 tsp sea salt

1 cup unsweetened applesauce

1 large egg

1/2 cup maple syrup or honey

1 tsp vanilla

1/4 cup coconut oil

1 cup grated carrot

1 cup grated or finely diced apple (I used a Fuji!)

1. Preheat the oven to 350 degrees fahrenheit and spray or coat a baking sheet with coconut oil.

2. In a large bowl, mix together the dry ingredients – oats, flour, flaxseed, spices and salt.

3. In a medium bowl, mix together the wet ingredients – applesauce, egg, maple syrup or honey, vanilla, and coconut oil.

4. Combine the wet ingredients with the dry ingredients in the large bowl and stir well. Add in the carrot and apple, and mix to combine completely.

5. Spoon the batter onto the baking sheet in about 1 1/2 in size balls. Flatten with your finger or the spoon, as these cookies won’t spread or rise! You can put them very close together on the baking sheet because of this, as well.

6. Bake for 15 minutes and then let cool. Store in an airtight container in the fridge for up to 5 days.

Post-Vaca Healthy Meal Plan [+ My Favorite Quinoa Salad!]

Okay, I guess it’s back to a full week of work, huh?

I will say, though, that there’s something kind of wonderful about Mondays. I think it’s the idea that you can start with a clean slate and craft your week however you’d like it to be, you know? I was only back in LA for three days last week, but I started getting back to a cleaner version of my normal eats after all the margs and guac that I could not pass up in Mexico! I seriously feel better and more energized already, so I’m going to keep up with this meal plan for at least another week to re-set my body!

I’ve never been one for cleanses or hardcore diets. My philosophy is that cutting things that I love entirely out of my diet just leaves me craving them more, and then once the diet is over, I just binge eat them (and everything else). Instead, my goal is to eat as many veggies as possible and keep processed foods down to a minimum. You know I love my energy bars, but I’m trying not to rely on those either, and instead reach for whole food healthy snacks. Here’s the easy plan I’m following (that I put together on the plane ride home from Cabo!) and the recipe for my quinoa salad can be found at the bottom of this post!

Pre-breakfast: 1 cup of coffee with 2% milk (the fat keeps me fuller for longer and skim milk has the most sugar of any of the low-fast milks!), 1 huge glass of ice water

Breakfast: 2% plain greek yogurt with 1/4 cup fresh fruit (mango, berries, banana, peaches, pineapple, etc.) and 1/4 cup granola

Mid-morning snack: 1 hard-boiled egg or a handful of raw almonds

Lunch: quinoa salad with chopped veggies, beans, greens, and a form of protein (sliced turkey, chicken breast, an egg, ground turkey, tofu, etc.), dressing: 1 tbsp low-sodium soy sauce or a mix of mustard/lemon juice/EVOO *recipe below!

Afternoon snack: baby carrots and/or celery with hummus

Dinner: smoothie with 1 scoop protein powder, 1/4 cup fruit, 1 huge handful of greens, 1 tbsp chia seeds, 2 tbsp fat (mix and match nut butter or coconut oil/butter), non-dairy milk (almond, coconut, hemp, soy, etc.)

My Favorite Quinoa Salad:

1 cup dried quinoa + 2 cups water

1 large cucumber

2 bell peppers (any color!)

1/2 onion

1 cup halved cherry tomatoes

1 can chickpeas, rinsed and drained

1 hard-boiled egg (per serving)

3 cups spinach or kale

dressing: 3 tbsp each of mustard, EVOO, and lemon juice + warm water to thin

  1. In a saucepan or small pot, bring dried quinoa and water to a boil, then cover and simmer for about 10 minutes. *Keep an eye on it around the 8-minute mark to make sure it doesn’t burn at the bottom!

2. While the quinoa is cooking, chop all of the veggies and mix together the dressing.

3. Combine the veggies and cooked quinoa in a giant bowl and toss with dressing. Portion out for 4 lunches and top with hard-boiled egg (keep it in the shell until ready to eat!) or protein of your choice.

Some things to note – I’ve definitely had an extra snack or 2 in here, whether that’s some extra almonds, a random piece of fruit, or some more veggies. I don’t feel guilty having more food if I feel hungry, I just try to stick to some variety of the foods listed above. My rule: if it comes in a box or a bag, steer clear! The granola is the exception to that, but I try to choose granolas with low-sugar. I actually made a homemade recipe this weekend, so stay tuned for that later this week! Additionally, I have the smoothie at night because I tend to workout after work, but I have them for breakfast sometimes, too 🙂

Hello beautiful humans!

Today I’m bringing back my What I Ate Wednesday posts, since y’all seemed to be interested in the first one! Here’s a look at what I ate yesterday, on a regular ol’ Tuesday.

8am: To start the day, I had a mug of Stumptown Coffee with one packet of stevia, some 1% milk, cinnamon, and a scoop of VitalProteins Collagen Peptides.

9:30am: Breakfast at the office as per usj! I’ve been going back to an old favorite of mine – plain greek yogurt with peanut butter and a banana. I added some Bear Naked granola for some staying power, too!

12:15pm: Somehow my breakfast magically kept me full until noon (my appetite’s been weird lately though), so I lasted until lunch without a snack this time. Lunch was some of the leftover roast we made on Sunday with black beans, roasted onion, and quinoa! Simple and so delicious 🙂 I highly recommend making extra anytime you cook so that you have meals ready throughout the week. Suuuuuuch a lifesaver!

3pm: Snacktime rolls around and though I’m craving something sweet, I’m really trying to cut back on the sugar. Luckily I brought a bag of carrots and celery with some spinach & artichoke hummus (planning ahead is essential!). The perfect healthy snack with some protein!

5pm: Surprise surprise, I’m hungry again. I have to make it through a workout once I leave the office, so I grab a NoGii bar (my new favorite!!) to tide me over.

8pm: We threw together some chicken breasts tossed in a homemade rub, sauteed asparagus and snap peas (in soy sauce + a bit of butter), and leftover pasta from the night before. There we go with the leftovers again…see how much they come in handy?! This dinner was super delicious, especially for one that only took 15 minutes to make!

9:30pm: I have a couple of pieces of watermelon before bed (even though I try not to eat after 9pm for the most part) because my sweet tooth is going off again. Watermelon is my favorite in the summer, I think I could live off of it!
