Gluten Free/Refined Sugar Free Brookies

You know when you have a super intense craving for chocolate, but also want a cookie?

That’s essentially how these cookies came to be…well that, and one sole overripe banana 🙂

They’re a mix between a brownie and a cookie, made with a combo of almond and tigernut flour, and use monkfruit in place of cane sugar. They’re fluffy and fudgey all at the same time, and taste decadent, even though they’re technically on the lighter side, have a ton of fiber, and protein, too!

If you’d like to make these vegan, simply swap the egg for a “flax egg” aka 1 tbsp ground flaxseed + 2 1/2 tbsp warm water stirred together. You can also use cassava or oat flour in place of tigernut if you don’t have it, but the texture might be a little different.

GF/Refined Sugar Free Brookies

3/4 cups almond flour

1/2 cup tigernut flour

1/2 cup monkfruit (I love Whole Earth!)

3/4 cup cocoa

1 tsp baking powder

1/2 tsp sea salt

1 egg (or flax egg)

1 medium, ripe banana

1 tsp vanilla

1/2 cup melted coconut oil

1 tbsp maple syrup

1/2 cup chocolate chips (I use Lily’s!)

  1. In a large bowl, whisk together the dry ingredients including the flour, monkfruit, cocoa powder, baking powder and sea salt.
  2. In a blender, pulse together the wet ingredients including the egg, banana, vanilla, coconut oil, and maple syrup.
  3. Add the wet ingredients to the dry ingredients and stir to combine completely. Fold in chocolate chips and set in the fridge to firm up for at least 20 minutes. *This step isn’t essential, but it makes it easier to form the cookies and helps them stay fluffy!
  4. Preheat the oven to 350 degrees fahrenheit, line a cookie sheet with parchment or spray with avocado/coconut oil, and form the dough into 1-2 inch balls about 2 inches apart. Do not flatten! This also helps keep them fluffy 🙂
  5. Bake for 12-15 minutes or until slightly firm to the touch. They’ll continue to firm once out of the oven! Let cool for at least 10 minutes before digging in, then store in an airtight container for up to 4 days.
