Since it’s Meatless Monday and all, I figured I’d share a plant-based recipe with you!
I recently made this suuuuper pantry-friendly vegan BBQ Cauliflower Ranch Pizza for a sponsored Instagram post, and loved it so much that I wanted to share it on here, too! As you guys probably know, I’m by no means vegan or vegetarian, but eating plant-based is honestly just cheaper and easier most of the time. I also feel better when I eat more veggies!
What you’ll find in this recipe is a homemade, yeast-free whole wheat crust that is an awesome alternative if you have zero pizza dough and zero yeast! It’s more like…a flatbread? But it’s a great vehicle for all those toppings. The bbq sauce I used is also homemade (I had NO idea how easy it was to make that yourself!), but you could of course use pre-made, too! I just wanted to give y’all options?
Vegan BBQ Cauliflower Pizza
For the Crust:
2 1/2 cups of all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 tsp olive oil
1 cup warm water
- Combine flour, baking powder and salt in a large bowl
- Add olive oil and water (little by little) and knead until dough is wet, but not sticky. add more water if feels dry.
For the Sauce:
3/4 cup ketchup
1 tbsp maple syrup
3 tbsp apple cider vinegar
5 tbsp brown or coconut sugar
1 tsp garlic powder
1 tbsp paprika
1/2 tsp each salt + pepper
- Combine all ingredients in a bowl until well combined
For the Pizza:
1/2 head of cauliflower chopped into small pieces
2 tbsp olive oil
1/2 tbsp garlic powder
2 tbsp sriracha
1/2 cup bbq sauce salt + pepper to taste
1/2 red onion, sliced cilantro for garnish
1/4 cup vegan ranch dressing (I love this one from Mother Raw!)
- If using pre-made dough, remove dough from the fridge and set it out to come to room temperature. preheat the oven to 425 degrees fahrenheit and oil a baking sheet.
- In a large bowl, combine cauliflower, bbq sauce, sriracha and olive oil, garlic powder, and salt and pepper. Bake for 20 minutes, flipping halfway.
- While the cauliflower is baking, caramelize the onions by sautéing them over medium-high heat. Once they start to brown, add 1 tbsp water at a time until onions are soft.
- when the cauliflower is done baking, remove from oven and turn up the heat to 475 degrees. Roll out the dough and top with the bbq cauliflower and caramelized onions.
- Bake pizza for 12-16 minutes, or until crust starts to brown. let cool for 5 minutes, then top with cilantro and a drizzle of the ranch dressing.
Okay I know that looks like a lot when you scroll through it, but I promise it’s easy – it took me about an hour from start to finish but is of course quicker if you use a store made crust! Let me know if you guys try it!
