I know there are a ~million~ energy bite recipes out there, but THIS is the one I’ve been eating almost every day for weeks now!
While pre-quarantine life had me going to the gym midday, this “new” normal has me doing zoom workouts with friends at 9am most days of the week! I LOVE it, but I definitely can’t do it on an empty stomach. Enter: protein packed energy bites that have just the right amount of fuel and a touch of sweetness that makes them acceptable first thing in the morning or satisfying as a post-workout treat 🙂
These Chocolate Peanut Butter Protein bites are gluten free and easily be made vegan if you use vegan protein powder and chocolate chips like I did, and maple syrup instead of honey! They take about 10 minutes to come together and keep perfectly in the fridge.
Chocolate Peanut Butter Protein Bites
1 cup oats
1/3 cup almond flour
1/3 cup honey or maple syrup
1/3 cup peanut butter (this brand’s my favorite)
1 tbsp chia seeds
1 tbsp hemp seeds
1 scoop chocolate protein powder (I use this one!)
1/3 cup chocolate chips (I always use these or these)
- In a large bowl, combine all ingredients except for the chocolate chips. Stir to combine completely. If the dough feels too dry, add 1-2 tbsp of warm water, if it feels too wet, add 1-2 tbsp of almond flour or protein powder.
- Fold in chocolate chips then form into balls. It may help to wet your hands first, depending on how sticky your “dough” is!
- Store in an airtight container in the fridge for up to one week.
