Why, hello!

Let me spare you the details on why I disappeared and just tell you that I’m very, very happy to be back. What I will say is that life is too friggin’ short to be unhappy and if you are fortunate to have options, keep them open. No job or amount of money is worth is worth it to be miserable. Ok, rant over šŸ™‚ Let’s move on to how the weather is perfect and produce is pretty much at it’s best right now. I highly suggest using those amazingĀ fruits & veggies to makeĀ this salad. Because it’s literally made of only healthy things, you’ll have no choice but to feel pretty damn good about yourself after you eat it.

Aside from the chopping (which in all honesty is pretty minimal), you can store this baby for leftovers making healthy eating a no-brainer throughout the week. The dressing is even easier: dijon mustard, lemon juice, salt and pepper. BOOM. Toss it up and you’re ready to go. The best,Ā bestĀ part? You can add whatever else you want in here – an apple, tomatoes, avocado…the possibilities are endless. Just don’t forget the cucumber, kale and celery, which are packed with nutrients and keep you hydrated! Feel free to sub the chickpeas for another type of bean too, and if you’re not vegan (which I’m totally not), even add some meat!

Green + Glowing Crunchy Spring Salad

2 cups of torn kale (any variety)

1 cup of chopped carrots

1 yellow bell pepper, diced

1 cup of chopped cucumber

1 cup of chopped celery

1 granny smith apple, diced

1 can chickpeas, rinsed & drained

1/4 cup chopped cilantro

1 lemon, juiced

3-4 tbsp dijon mustard

salt & pepper

1. In a large bowl, combine all the veggies and fruit except for the lemon.

2. In a small bowl, whisk together the cilantro, lemon juice, Ā mustard, salt and pepper (to taste). Pour the dressing over the salad.

3. Toss the salad to completely coat with the dressing. Let sit for at least 30 minutes so the kale can absorb the flavors. Serve as a side salad or with a whole wheat wrap for a meal!

*If you’re not vegan, adding some parmesan cheese to this is super tasty!
