Happy National Donut Day!!! While I don’t celebrate food holidays, you know I couldn’t miss this one!!
I’d like to think of Donut Day as my personal holiday and the perfect excuse to whip up a fresh batch of baked donuts or treat myself to some from a local donut shop!! I’m currently visiting New York, so I’ll definitely be doing the latter today, and the baking will happen as soon as I return to my kitchen.
These double chocolate peanut butter donuts combine two of my absolute favorite flavors and use a base of almond and coconut flour to not only make them gluten free, but also protein packed and more satisfying! They can be made vegan by using a flax egg instead of a regular one, and dairy-free chocolate chips. For the “frosting,” I used powdered peanut butter and water, but peanut butter from the jar works perfectly, as well. Double Chocolate Peanut Butter Donuts
1 cup almond flour
2 tbsp coconut flour
3 tbsp dark cocoa powder
1/4 cup monk fruit (or any granulated sweetener)
1 tsp baking powder
1/4 tsp salt
2 eggs or flax eggs (1 tbsp ground flax + 2.5 tbsp water)
3 tbsp butter or coconut oil, melted & cooled
2 tbsp peanut butter
2 tbsp maple syrup
1 tsp vanilla
1/4 cup chocolate chips
- Preheat the oven to 350 degrees fahrenheit and spray a donut pan with coconut or avocado oil.
- Mix all dry ingredients including flours, sweetener, baking powder and salt.
- In a separate small bowl, combine wet ingredients including eggs, butter or oil, vanilla and maple syrup.
- Stir together the wet and dry ingredients, then fold in chocolate chips.
- Fill each donut mold fully and bake for 15-18 min or until firm to the touch. let cool fully before drizzling peanut butter or a mix of PB2 and water!
