How is it actually the end of February already, guys?!
This month absolutely flew by, even faster than January, I honestly can’t believe it. I guess I had a few notable things happen – I left my old jobs (and friends! Miss you guys so much), took a few days to re-group, started my new job, and left to meet my parents in Colorado for vacation. It’s my last day here and tomorrow I go back to reality, so I’m going to try and soak up as much time in the snow as possible!
Since it was a short month that was full of changes and running around, I don’t have too many foodie favorites to share with you like I usually do! Instead, I figured I’d just share some of my recent notable eats since I’ve eaten a ton of really delicious things this month! Hopefully this can give you some ideas if you’re in a food rut?
English muffin with mashed avocado, pink himalayan sea salt + TJ’s Everything But the Bagel Seasoning – I’d be lying to you if I said I didn’t eat this at 3/7 days a week (and usually with an egg on top). I am obsessed with this combo and that is not an exaggeration! I’ve always been a fan of avocado toast (like the true millenial I am), but on a soft and fluffy english muffin with seasonings it is NEXT. LEVEL. If you don’t have a Trader Joe’s near you, I found this recipe so you can make their everything bagel seasoning at home!
Kale salad with sriracha greek yogurt dressing (a slightly watered down version of this dip recipe), leftover tri-tip, mini peppers, 1/4 avocado and a slice of garlic bread – So I’m making a pact with myself to eat one salad a day in March and my lunch at work is generally a good time to make this happen. After indulging hard over Valentine’s Day, I threw some leftover tri-tip (it was on sale and holy smokes was it good) over some kale and peppers. We’d eaten the tri-tip the night before with some air-fried tater tots, so naturally I made my spicy greek yogurt mustard dip. We had some leftovers of that too, so I watered it down and poured it over the salad as a dressing. I am 100% doing that again – SO good!!
SquareOrganics plant-based protein bars – I am allllll about the bars and I’ve pretty much tried every bar under the sun, but these are different!! I love the texture so much – a little crunchy as opposed to some of the bars that are really soft and gooey, and the flavors are to die for. I also love that they’re plant-based (something I’m trying to be more of!) and they donate part of their proceeds to fight human trafficking. SO awesome. Rubio’s wild-caught red shrimp bowl – You know me guys, I don’t usually eat “fast food,” which I totally thought Rubio’s was, but to be honest it’s more just fast casual like a Panera. I went for lunch with my boyfriend recently and tried their new red shrimp bowl and it. was. GOOD. I was so impressed by how fresh their ingredients are and I was able to get my bowl with their ancient grain mix instead of white rice. I’m alllllll about healthy options and they make it really easy to customize the dishes. You can even get a BOGO at Rubio’s with this coupon, which’ll save you about $10 on their delicious and fresh food. Highly recommend!!
Green Smoothie with Huel – I won’t go into too much detail about this one since the full post can be found here, but this smoothie has been a go-to for me since it legitimately keeps me satiated until lunch time! And, if you’ve been reading my blog for awhile, you know that I’m usually someone who needs a snack at 11am to calm my growling stomach…these days I don’t have to do that, which is nice?
Air-fried donuts – So I was suuuper excited to make these since I’ve been looking for all kinds of yummy things to make in my new air fryer, but I accidentally picked up the wrong kind of biscuits! Essentially, you just take biscuit dough from the refrigerated section at the grocery store and cut a hole in the center, but make sure it’s NOT the flaky kind! I’ll put an actually recipe up here soon once I’ve got it down perfectly, but regardless, these were delicious. They were pretty much just biscuits that I covered in butter, cinnamon and sugar, so what’s not to like?? P.s. My air fryer can be found here and it is magical!!
Dark Chocolate Eclipse Cake with cream cheese frosting – When I tell you that my boyfriend had to hold me back from getting thirds (yes, thirds) of this every night after Valentine’s Day, I am dead serious. This cake is THAT good. I grabbed the cake recipe from Chocolate Covered Katie (looooove her stuff!), which is fairly healthy for a chocolate cake, and then smothered it in cream cheese frosting (which is essentially just butter, cream cheese and sugar…oops!). While I have zero regrets of covering this cake in frosting, I will say that if I made this again in the near future, I’d probably try to come up with a healthier frosting? I can tell you that the cake itself was super fudgy, regardless of it being dairy free. Obsessed!!
Green juice from Kreation – I know most of you probably don’t live in Los Angeles, but if you do, run don’t walk to the nearest Kreation (there are a few around town!). They’re a little pricey but literally everything tastes delicious, which is pretty impressive when it’s packed with vegetables and all kinds of healthy things. The one I had, Green #2, tastes AMAZING and you can see up there that it has all kinds of greens (hence the name…) and my friend had one of their green smoothies, which was also delish. I’m kind of glad I don’t live too closely to one of these, they’d take all my money for sure!
Perfect Bar in Dark Chocolate Almond – Told ya I was a bar girl? I’d only tried one of these bars previously and I have NO idea why it took me so long to try another!! These are definitely different than the Square Organics bars, but I love them both! You can find them in the refrigerator section, which actually appeals to me since it means they’re not packed with preservatives. They’re also higher in calories, so they’re the perfect mid-afternoon snack when you need to say full until a late dinner or even pre-workout if you’re getting ready to sweat it out hard. This flavor was phenomenal, but they honestly all sound good. Can’t wait to try more!

Is it weird that I’m so obsessed with looking at food pics? Welp, definitely not sorry about it haha, so this post made me super happy. I NEED an air fryer! And let’s be honest girl, if it’d been just you and I with that cake…. it wouldn’t have lasted a day haha. Thank goodness for our guys who help remind us of what the word moderation means (well… sometimes).
Also, we LOVE those perfect bars! We sampled them at Costco and haven’t looked back since. The peanut butter one is the BEST.

I’m obsessed with it, too!! These aren’t all very pretty though, so now that I know someone’s really looking I’ll try to step it up… haha
And 2 other things – the air fryer is a maaaaajor game changer and my bf couldn’t keep me away from cake to save my life. I think once you’ve dated someone for so long, the shame of doing ridiculous things just kind of slips away, you know????
