We’re finally back with a recipe, y’all! I’m so excited to share these gluten-free and vegan Chai Spiced Sugar Cookies with you, they were a hit in our home and I hope they are in yours, too!
These cookies were actually the result of a partnership I had for an Instagram post – I love working with amazing brands on recipes because it really pushes me out of my comfort zone and almost forces me to try new things!! I forget how much I love creating recipes sometimes, but this one made me remember.
These cookies are super cozy and comforting, soft on the inside with just a little bit of a crunch on the outside. Though I had quite a few for dessert the day I made them, they were actually my favorite dipped in my morning coffee!! The ingredients are nutritious enough for them to pass for breakfast, so I didn’t feel too badly 🙂
Chai Spiced Sugar Cookies
1 cup cassava flour
1/2 cup almond flour
1/2 tsp baking powder
1 tsp each nutmeg, cardamom, cinnamon, ginger & cloves
1/4 tsp salt
1/2 cup melted coconut oil
3/4 cup granulated sweetener (I used an allulose blend!)
1 flax egg (1 tbsp flaxseed, 2 1/2 tbsp water)
1 tbsp vanilla extract
3 tbsp almond milk
optional: cinnamon + sweetener
- Preheat the oven to 350 degrees Fahrenheit. in a large bowl, combine the dry ingredients including flours, baking powder & spices.
- In a small bowl, whisk together the coconut oil, sweetener, flax egg, vanilla and almond milk.
- Combine the wet & dry ingredients and stir till completely combined. form into slightly flattened rounds and place on a parchment lined or greased baking sheet.
- Bake for 10-12 minutes or until slightly golden on the edges.
- Let cool for 10 minutes before dipping the tops in cinnamon sugar.
- Store in an airtight container for up to 3 days and I highly recommend warming these up for 10 seconds in the microwave if you’re enjoying them after the first day!
