These 5-ingredient gluten-free and vegan energy bites are the perfect slightly sweet, protein and fiber-packed snack!
I originally prepped these last week to bring with me to a little solo staycation at a tiny house (more on that tomorrow!) since I knew I wouldn’t have access to a full kitchen. I’d have a couple in the afternoon or after dinner and they helped satisfy my sweet tooth!
I love making my own snacks like this because as much as I love a protein bar, I know exactly what’s in these little bites and it’s all nutritious. It’s also much more cost-effective – the bars out there with these same ingredients can be $3-$4 a piece. We’re babes on a budget out here, we don’t need that if we can help it!
One quick note on the recipe – definitely feel free to swap the nuts for your favorites! I love walnuts and cashews, but pecans and almonds are great options too, and any freeze-dried fruit will work, or even coconut.
Chocolate Covered Strawberry Energy Bites
3/4 cup cashews
3/4 cup walnuts
2 tbsp cacao powder
1 1/2 cups pitted dates
1 cup crushed freeze-dried strawberries
- In a blender, pulse all the ingredients together except for the strawberries, until a “dough” starts to form.
- Form into one inch balls then roll in the crushed strawberries.
- Store in an airtight container in the fridge for one week.
