Since Halloween is definitely going to be more low key this year, I’ll take that as an excuse to make (and enjoy) more treats!
I will also likely be forcing Alex to watch a horror movie with me…it’s the one day I get, okay! I’ll just bribe him with more chocolate bark and everything will be fine (for the record, he LOVED this!!).
If you’re looking for a super fun but easy dessert, this Monster Mash Chocolate Bark is where it’s at. Aside from the white chocolate chips, which are totally optional, you can actually make this without having any chips on hand. I’ve been making a simpler version of this low-sugar chocolate for years when I need something sweet – it’s essentially just cocoa powder, coconut oil and maple syrup!
To make things more festive this time, I added a boat load of sprinkles that I definitely spent too much money on at Michael’s but hey, WORTH IT. If you can find googly eye candies, I would also recommend adding those!! My store was sold out. And for the record, I will *definitely* be making this again for Christmas, Valentine’s Day and every other holiday just by swapping out the colors 🙂
Monster Mash Chocolate Bark
5 tbsp coconut oil
3-4 tbsp maple syrup
1/4 cup dark cocoa powder
1/4 cup Copina Co Cacao Calm Beauty or more cocoa powder
1/2 cup white chocolate chips
A boat load of festive sprinkles!
- In a small bowl, melt the coconut oil for 30 seconds in the microwave, then add in cocoa powders.
- Pour in the maple syrup and stir well to combine until smooth.
- Line a loaf pan with parchment and pour chocolate in an even layer.
- If using the white chocolate, melt it for 30 seconds at a time and drizzle in lines across the dark chocolate. Take a knife and drag the lines down in opposite directions to create a swirl, then top with sprinkles.
- Freeze for at least 10 minutes then crack by hand or with a knife. Dig in!
