I’m really hoping that a) you’re not sick of pumpkin yet and b) you’re actually able to find it at the store since apparently there is the great pumpkin shortage of 2020!

If both of those check out okay, I would hiiiiighly recommend making these Pumpkin Protein Cookie Dough Cups asap. And I know I’m biased, but they’re also boyfriend approved so you can trust me 😉

I love making cups like this because the ingredients are super customizable (you can literally put *anything* in there) and they take minimal effort. All you really need is some chocolate and good silicone cups! I love this particular version because it’s high in protein and fiber, low in sugar, and really freaking good. Also, if you’re feeling really lazy and/or don’t have silicone cups, you can totally just make the cookie dough part and enjoy that however you please!

Pumpkin Protein Cookie Dough Cups

1 tbsp almond, pecan, casehw or sunflower butter

1 tbsp pumpkin purée

1 tbsp vanilla collagen or protein powder (I use Ancient Nutrition!)

1 tbsp coconut flour

1 tbsp chocolate chips (for the dough) – I like Lily’s!

pinch of cinnamon

1/3 cup chocolate chips (for the layers)

1 tsp coconut oil

pinch of sea salt

  1. Mix all dough ingredients from the nut butter to the cinnamon together until a dough forms. If it feels dry, add a tiny splash of almond milk or water. If it feels wet, add a sprinkle of coconut flour or protein powder.
  2. Melt the 1/3 cup of chocolate chips with the coconut oil in 20 second increments in the microwave until smooth.
  3. Thinly layer the bottom of silicone baking cups with chocolate, then freeze for 5-10 minutes.
  4. Using clean fingers, spread the cookie dough in an even layer on top of the frozen chocolate.
  5. Add on the final layer of melted chocolate, sprinkle with sea salt, then set it in the freezer for another 5-10 minutes.
  6. Carefully remove the chocolate cups from the mold and enjoy! Or, store in an airtight container in the freezer until ready to eat.
