10 Must-Haves for Easy Vegetarian Weeknight Dinners (and My Southwest Burger Bowl!)

We’re now more than 4 months into quarantine and my motivation to cook anything time-consuming and/or in-depth has gone out the window, I’ll admit it! I’ve been relying more on versatile fridge staples and convenient options so that I know we’re still eating well, saving time and saving money (takeout is too tempting but we try to limit it to twice a week!).

Lately I’ve been stocking up on high quality essentials at my local Vons in Los Angeles! Here are 10 of the items I *always* make sure to pick up at Vons when I do our grocery shopping.

1. Tomatoes – My number one favorite vegetable, ripe tomatoes in the summer time are just too good! I love chopping them up for salsa, like in this bowl, adding them to a salad, or tossing them with pasta.

2. Peppers – You will always find bell peppers in my fridge! They’re unbelievably versatile and a must in anything with Southwestern flavors, or I’ll roast them for something more Italian!

3. Greens – This should probably be #1 on my list, but I don’t always love greens, I’ll admit it! But they’re obviously important to eat, so I mix them with all of these other yummy flavors and then I’ll eat a ton.

4. Avocados – Aside from being delicious and the best food ever, avocados also provide fiber, potassium and “healthy fats,” making them a great addition to a vegetarian meal! Or any meal 🙂

5. Whole Grains – I love a good salad, but sometimes they don’t fill me up unless I have some grains in there! Quinoa used to be my absolute favorite, but I’ve been having this O Organics® 7 Grains and Lentil Blend (that you literally make in the microwave) and it’s delicious. It adds extra fiber, protein and staying power!

6. Shredded Cheese – I mean is there anything cheese shouldn’t go on?! I like shredded cheese the best because you don’t need a lot to add flavor, and the Mexican Style Blend from O Organics® is delicious on this bowl, tacos, eggs, and pretty much anything.

7. Veggie Burgers – I’ve been a fan of veggie burgers since college! They’re cheaper than meat-based burgers and I’ll take any chance I can get to sneak some extra vegetables in! 8. Beans – If you’re not doing veggie burgers, beans are an awesome source of protein and another old favorite of mine for “babes on a budget!!”

9. Lemons & Limes – These are a MUST for adding healthy flavor to any dish! I love squeezing half a lime over anything with Southwestern or Mexican flavors like this bowl, or lemon over a fresh salad!

10. Herbs – Like citrus, herbs add a ton of flavor and nutrients without added calories! Cilantro is my #1 favorite, but basil is a close second.
