Berry Chia Protein Pudding. [Vegan + Gluten-Free!]

Hi friends and Happy Humpday! Is anyone else kind of ecstatic that we’re halfway through the week?!

I’ve been running on very little sleep after flying home to NY for a hot second to attend my one of my best friends’ weddings, so I apologize in advance if any of this is incoherent! I landed back in LA super late Sunday night and did a major grocery haul Monday after work since the only things in my fridge were some leftover cashew milk (which comes in handy!), coffee grounds (duh) and my probiotics. Not exactly the makings of a meal my friends.

After a long weekend of indulging, I’m really trying to get my a$$ in gear, partially so that I can fit into my old summer clothes and partially because I know that when I eat healthier, my stomach feels so much better. I tried chia pudding way back in the day, and honestly wasn’t the biggest fan, but the other day I was listening to one of my favorite podcasts (Almost 30 – I’m obsessed) and they were talking about a chia pudding made with protein powder for natural sweetness and a more filling snack or meal. The other thing about chia pudding is that it’s really not that many ingredients and fairly cheap now that chia seeds are so common.

I’ve had this recipe for breakfast two mornings now, and it’s so delicious. I still need my 11am snack (as per usual), but this is something I can feel good about eating. There’s no added sugar, the berries are nutritious and full of antioxidants, and the chia seeds are loaded with fiber, omega 3’s and protein. You can easily sub out ingredients in this recipe as well, like the berries for another fruit or vanilla protein powder for chocolate, or even none at all. It’s your call, just make whatever works for you! Food should be delicious, so pick your favorite flavor combo and go from there 🙂

Berry Chia Protein Pudding

(makes 2 large servings)

1/2 cup chia seeds

2 cups non-dairy milk (I used cashew, it’s super creamy!)

1/4 cup unsweetened coconut flakes

1 cup mixed berries

1 scoop vanilla protein powder (if you’re vegan, make sure it’s a plant-based protein – I use Garden of Life!)

1. In a large bowl, combine the chia seeds, non-dairy milk, protein powder and coconut flakes. Stir for about one minute and then let sit for for at least 2 hours or overnight. *I make this recipe the night before in a tupperware so it’s ready to take with me to work the next day!

2. Add the berries and enjoy! If not eating right away, the chia pudding will keep in the fridge for up to 4 days.

What about you? What breakfast do you have on repeat these days?! Have you tried chia pudding yet?

My All-Time Favorite At-Home Workout Vids.

Hello & Happy Monday! (Is that a thing? Can I wish you a Happy Monday, even though everyone hates Mondays? I’m doing it anyway…)

Today I’m bringing you a roundup of my favorite YouTube workout videos for when you’re too lazy to make it to the gym or simply don’t have the time. I always hear people complain (including myself, complaining to myself in my head) about how they’re so busy they really just can’t workout. That’s a sad excuse, as mean as that is to say. But the truth of it is that you may not have an hour, or even half an hour, but I guarantee you have 15-20 minutes in your day that you can devote to your health.

Dancing for Donuts | My Favorite At-Home Workout Videos.

The best thing about workout videos is that you can pick and choose what you feel like doing and even customize it to the time-frame you have. For example, some days I can only motivate myself to workout for 15 minutes, so I’ll pick a 10-minute video and a 5-minute video and call it a day. Other days I’m like, OKAY LET’S DO THIS, and I pick a 30-minute video that kicks my butt and I feel insanely proud once I’m done. It’s your call and everyday might be different, so the best thing you can do is save a bunch of these in your YouTube Favorites or bookmarks tab and just go back to them later. Here are my favorites (and favorite people to follow!) in case you need some inspo…

Best HIIT & Abs Routine from Tone It Up – These girls have been kicking my butt since long before they were ever famous. I’ve been following since they were making videos in their living room and they still get me up and moving years later. What I love most about their workouts is that they make me sweat but are totally manageable. Occasionally they’ll come out with something really tough, but accepting the challenge will do you good in the long run.

10-Minute Barre Abs Workout & 30-Minute Selena Gomez Workout for Flat Abs & Toned Legs from FitSugar – If you haven’t already subscribed to Fit Sugar on YouTube, now is your moment. 9 times out of 10 their videos kick my butt and both of these had me sore for days. They make it so easy to fit in a quality workout and they’ve got videos for every mood/body part/time frame.

Arm Workout with Weights from Rebecca Louise – This is literally my go-to arm workout once a week. I do it while I’m watching tv after work or first thing in the morning. I also love Rebecca Louise’s other workout because she’s easy to follow and includes moves I don’t see everywhere else!

Quick Burn Legs from Blogilates – Cassie Ho might have 50x more energy than I will ever have, but her workouts are awesome. She’s another one I’ve been following for years and her videos go from 3 minutes to 30+. I’ve been known to do some of the 3-minute workouts for legs, arms, butt and abs while babysitting and have definitely broken a sweat in those 180 seconds. Embarrassing? Slightly. Worth it? Yes.

Well there ya have it. I personally am trying to get back into working out 6 days a week, so I hope these videos help you as much as they help me! What are some of your February goals?

Make Moves.

Dancing for Donuts

If you know me at all, you know I’m kind of addicted to exercise. Not in a crazy way or anything, but just because some days it’s the only time I get to myself. Plus, exercise gives you endorphins. And endorphins make you happy!

I generally try to work out 6 days a week mixing up cardio with hiking, dancing, body-weight training, and fine-toning. While I usually like to get my workout done in the am (since apparently it’s proven to be most beneficial and leaves the rest of the day for other fun things), sometimes an afternoon hike or evening gym sesh while watching The Voice is a nice change.

If I can’t find the time or energy to get out of the house but still want to feel better about last night’s ice cream, I do a workout video or two! I have a ton bookmarked that range from 5 minutes to 30 minutes, so there’s never an excuse for lack of time. Doing these quick videos also keeps me on track, working different muscles constantly and never getting bored with the same moves. Some of my favorites are from the Tone It Up girls or Cassie Ho from Blogilates! There are a ton more on their websites and YouTube profiles.

Alright y’all, I hope I inspired you to make some moves today. I’ll be back soon with some healthy recipes! Enjoy your day 🙂
