If we were having coffee this morning, I would have quite a bit to catch you guys up on.

First of all, I’m now a few weeks into my new job and am LOVING it, which is a huge relief after the last one was a little less than inspiring. After heading to Wisconsin for my brother’s pre-wedding celebration last weekend, I’m heading home to New York next week for the real thing! And tomorrow is also my birthday, and I don’t know about you, but I freakin’ love my birthday.

I’m not much of a partier, so that aspect of it doesn’t matter so much to me, but I do take the entire month to just treat the crap outta myself…which may or may not be a good thing when I think about it😅 I guess I just figure that now is a good time to maybe re-vamp my life + wardrobe + habits before fall because even though it’s not a school year anymore for me, it still feels like a good beginning point, y’know?

With that being said, I’ve been visiting Target quiiiite a bit more than usual lately (again, for the ‘treating’ bit) and of COURSE I go for one thing and end up with 20😂 Aside from getting sidetracked by energy bars, all the JoyLab activewear, and some cute post-it notes for my new desk, I actually came out with what I went in for – Laughing ManÂź Coffee.

I’ve been drinking this stuff for a few weeks now because once I heard about how the Laughing Man Foundation invests in companies that help farmers and their families receive the healthcare and tools for success that they need, I figured why not use my purchasing power to do good?

Just to give you a sense of the incredible things they’re doing, the Laughing Man Foundation is partnering with Fair Trade USA to improve housing and the Higher Education Scholarship Program to provide 40 college scholarships so coffee growers and their families can have access to higher education and a better quality of life. Since a portion of every single purchase of Laughing ManÂź Coffee is donated in order to make these initiatives happen, that means that just by making a small shift in what I pick up on my Target run, I’m actually helping others. How awesome is that?!

Aside from the fact that choosing Laughing ManÂź Coffee is an easy way for my dollars to affect change, the coffee tastes delicious (I love the Columbia Huila variety, but Hugh’s Blend & Dukale’s Blend are amazing, too!). Anyway, I’ve been making Laughing ManÂź Coffee in both my French Press (because the bf loves the press & how much coffee it makes) AND my Keurig with their K-Cup Pods, which are recyclable in the new packaging, by the way! I don’t know about you, but there’s something about using all that plastic everyday that makes me feel weird, but knowing I can recycle these pods makes me feel sooooo much better!! Do you guys use a traditional coffee maker or do you prefer making single-serving cups?!

So let’s see – I think those might be all the updates I have to share with you. I’m hoping that all the August craziness doesn’t get overwhelming, but I can tell you that most mornings I’ve been waking up extra early to enjoy my Laughing ManÂź Coffee slowly while doing a bit of blogging work, and it sets the BEST tone for the rest of my day. With the new job, I do have slightly longer hours, but I’m going to try my hardest to make sure that doesn’t result in less blogging – after all, writing on here is pretty much my happy place and where I go to escape the madness.

Lavender Almond Milk Latté

How is everyone doing today?! I know things have been pretty busy over here trying to get ready for holiday vacation, but I’ve been doing my best to enjoy this time before Christmas when things are kind of extra magical and festive! I definitely need to make my usual holiday cookies and other winter-themed goodies, but lately I’ve been sipping on this lavender lattĂ© I’ve made on the daily with a lavender simple syrup I whipped up last week while playing Billie Holiday…it was kind of the most perfect night ever, tbh.

We were recently given a GINORMOUS bag of lavender from one of Alex’s family members who was staying on a farm a bit north of LA, and we weren’t quite sure how to use it. After getting some of your opinions on Instagram, I decided to go with a simple syrup since we can use that to flavor anything like coffee drinks, cocktails, and even food! I don’t actually keep regular white sugar in the house (although I’ll need to stock up if I’m going to make my Christmas cookies!), but I did have coconut sugar. And from there, the coconut sugar lavender simple syrup was born!

The simple syrup takes all of about 10 minutes to make + cooling time, and the lattĂ© is super quick, too! It’s not overly sweet, so sometimes I’ll actually add a half of a stevia packet too, if that’s the kind of drink I’m craving. If you’re not into coffee at all (regular or decaf…which I’ve been making in the afternoon!), you could totally just leave it out and make warm lavender almond milk. That actually sounds kind of amazing?!

Coconut Sugar Lavender Simple Syrup

1 cup water

2 cup coconut sugar

2 tbsp lavender flowers

1. In a saucepan, heat 1/2 cup of water over high. Once boiling, add in the coconut sugar and lavender flowers, and lower the heat to medium. Continue to stir so the mixture doesn’t burn for about 10 minutes. *You’re technically supposed to use a candy thermometer here, but homegirl doesn’t have fancy tools like that in the kitchen…

2. After about 8-10 minutes, remove the pan from heat and let it cool. Pour into a mason jar over a strainer to strain out the flowers. Store in the fridge for up to a month.

Almond Milk Latté

1/4 cup unsweetened vanilla almond milk

1-2 shots of espresso or 1/2 cup coffee

1 tbsp coconut sugar lavender simple syrup (recipe above!)

1. Heat the almond milk in a mug in the microwave for 1 minute (or over stove in a saucepan, but it’s slower!). Use a  frother to make the milk super creamy. *If you don’t have one of these, I highlyyyyy recommend getting one!! I use mine everyday. Otherwise, you can use some muscle power and a whisk!

2. Add in your espresso or coffee, lavender simple syrup and stir to combine. If desired, add extra sweetener like stevia or honey.

p.s. I only topped mine with the lavender because it looked so crazy beautiful, but if you decide to do that (for Instagram, duh), I would suggest removing the flowers before drinking. They don’t taste amazing straight up!

Heeeeeey, Monday.

I actually woke up this morning to find out that I got called off work (WHAT?!), so today is more like a Sunday for me. But! For those of you who don’t have the day to catch up on errands and blog post, I’m here to bring you some light reading and share some easy ways to make your morning feel  like a fresh, positive start to the day no matter what.

Perk Up Your Morning Joe. Can I tell you I made THE best cup of coffee today?! I’ve been buying this ridiculously cheap coffee since my trip to Austin back in June (that’s what they had at our AirBnB) and I’m obsessed. It’s extremely strong, so I use exactly 2 tablespoons for about 2 mugs of coffee, and that’s literally how I measure it…I fill 2 mugs and pour them in. Works like a charm. Then, and here’s the really good part, I put in a couple shakes of ground cinnamon, a shake of ground ginger, and a shake of nutmeg. Trust me on this, IT WILL CHANGE YOUR LIFE. Oh, and I do this all year round, not just in the fall when people are obsessed with pumpkin spice. Plus, cinnamon is crazy good for you. Do ettttttttt.

Have a Real Breakfast. Now I know y’all have heard this one many times before, but having a breakfast with real foods is so important to not only your health but also your mind. Having nutrients found in veggies, fruits, whole grains, and protein can kick start your brain to boost productivity and fuel you for the day ahead. Lately I’ve been making a 1 egg-2 egg white omelette and topping it with black beans and salsa (not the prettiest breakfast ever, but you get the gist). I find that on days that I eat non-processed foods, I have more energy for work or the gym, crave sugary foods less, and stay full for longer.

Set Yourself Up for Success. So this last one is really different for everyone, depending upon what your day looks like and what you want to accomplish. But whatever that may be, write it down. Make a to-do list, write out a schedule, and put it in your planner. If you can see exactly what needs to be done, you can get yourself ready and set aside the time to do it. Not to mention you’re more likely to remember something once you write it down. I live by my iCalendar and planner. So today, for example, I’ve written down “homework, gym, groceries, blog, and clean bathroom.” Isn’t my life grand?! But hey, a day off’s a day off.

Well I’m off to tackle that list ^ but I hope you all have wonderful days!!
