Happy Monday, friends! I’m comin’ atcha today with a super tasty, healthy and protein-packed breakfast recipe!

So as you know, I’ve been trying to get my health and fitness back on this year (just like pretty much everyone else in 2018!). I started taking all kinds of different classes and revamping my routine to keep things fun and interesting, and I’ve gotten a bit more on track in terms of my eats. I always preach about preparation and how stocking your fridge with tons of healthy ingredients can make all the difference in the world when it comes to sticking to your goals. And hough this recipe is quite possibly the easiest thing in the world to make, it does require you to add just a few items to your grocery list😉

I’ve always been a fan of eggs because they’re incredibly nutritious, inexpensive, and easy to make. They keep me full throughout a workout without that bloating feeling that comes when I have yogurt or smoothies sometimes. But while I love a good yolk, they are slightly higher in cholesterol, whereas the whites are a low-calorie, low-cholesterol source of protein. I also grew up in a household where my parents ate only egg-whites, mostly because they didn’t like the taste of the yolk, but I can tell you that cracking a ton of eggs just to get enough whites for a substantial omelette was neither the quickest nor most enjoyable task. The perfect solution to this is to just buy the egg whites in a container so that they’re ready to go when you need them!

This frittata recipe combines AllWhites liquid egg whites with just a touch of low fat milk, nutrient-rich spinach, flavorful onion and creamy goat cheese for a super delicious dish that tastes decadent but contains soooo many good-for-you ingredients! The prep is minimal, just a touch of dicing and whisking, and then the skillet/oven really do the rest of the work for you. If you don’t have a skillet, just use an oven safe pan, but I will say that the skillet helps cook the eggs evenly. This dish perfectly serves two, but if you’re eating for one, just wrap the leftovers up in seran wrap or a tupperware, and save it for the next day. Doesn’t get more convenient than that, my friends!

Spinach and Goat Cheese Egg White Frittata

1 1/4 cup AllWhites® egg whites

2 tbsp low fat milk

1 tbsp butter

1/2 cup diced onion

2 handfuls spinach

3 tbsp goat chees

sea salt

pepper

1. Preheat oven to 400 degrees fahrenheit and whisk egg whites and milk in a bowl until light & frothy.

2. Melt butter in the skillet over medium heat. Add the onion, a pinch or two of salt, and cook thoroughly. Add the spinach too, and cook for another 2 minutes or until wilted.

3. Add the egg mixture over the top of the onions and spinach. Sprinkle with salt and pepper. Take a spatula and make sure the eggs flow to the bottom of the pan as opposed to on the sides of the pan.

4. Once the frittata is half set (and the egg whites on the sides are turning to a more solid colored white), top with pieces of goat cheese and transfer to the oven. Bake for 8-10 minutes, or until golden.

As someone who used to have a non-traditional job for 5 years, it’s still weird for me sometimes to think of weeks as Monday through Friday, and weekends as actual weekends… but anywho, where I’m going with this is that sometimes you need a lil somethin’ somethin’ to spruce up a weekday since counting down the minutes until the weekend is no way to live, y’all.

I made these donuts last Sunday when I had some extra time to myself, and having them as a mid-week treat has seriously brightened up an otherwise fairly boring day. I recently got my hands some of the Rootz Nutrition paleo protein superfood in Chocolate Banana Nut and I can confidently say that I have upped my smoothie game. I’ve mentioned this in the past, but I absolutely hate when protein powders have a chalk-like taste (as does everyone, I’m sure), but when I find a protein powder that actually tastes incredible, I obviously have to share it with you. Besides taste though, I love that the Rootz products are paleo-friendly so even though I’m not actually paleo (because #labelfree), the ingredients are crazy clean. This particular powder also contains completely undetectable greens like chlorella, spirulina, kale, broccoli and spinach. Since this stuff has so many awesome benefits, I’ve been trying to find new ways to incorporate it into my diet because as much as I would love to have smoothies for breakfast, lunch and dinner, that’s probably not actually the most nutritious option. After browsing Pinterest for allllll the donut recipes, I kind of mushed some of them together to come up with this one. I’ll be honest, I did a pretty good job guys. These have the perfect amount of sweetness, stay moist for days when you keep them in the fridge, and are just the right size for when you want a little treat. Plus, they’re DONUTS which makes them feel extra special, y’know?

Chunky Monkey Protein Donuts

1 egg

1/4 cup peanut or almond butter

1 large ripe banana

2 1/2 tbsp melted coconut oil

3 tbsp coconut flour

2 tbsp Rootz Nutrition Paleo Chocolate Banana Nut Protein (or any protein powder)

1/2 tsp baking powder

1/2 tsp vanilla extract

pinch of cinnamon

1/2 cup mini chocolate chips (optional)

 

1. Preheat the oven to 350 degrees fahrenheit and coat the bottom of a donut tin (mini or regular) with coconut oil.

2. In a large bowl, mash the banana and stir in the nut butter, melted coconut oil and egg until completely combined and mostly smooth. *You can put the ingredients in a blender if you’d prefer, but sometimes I like not having to do the extra dishes!

3. Add the coconut flour, protein powder, baking powder, vanilla and cinnamon, and stir until well-combined, but careful to not overmix! If you’d like, you can fold in the chocolate chips here, or use them later as a drizzle on top like I did.

4. Using a spoon (and a wet finger), fill each donut cavity about halfway with batter. I like to fill mine just slightly over half so they’re a bit bigger 😉 Bake for 12-15 minutes, or until dough is firm.

5. Let donuts cool for at least 10 minutes before removing from the pan. You’ll want to run a spoon along the edges to make sure the donut hasn’t stuck to the pan, then carefully spoon each donut onto a plate or wire rack to finish cooling.

6. If you’d like, you can melt the chocolate chips in a bowl with a touch of coconut oil (I’d heat them for about 20 seconds at a time), and then drizzle the melted chocolate over the donuts once completely cooled. Store in an airtight container in the fridge for up to 3 days and pop in the microwave for 15 seconds before eating!

I’m switching things up this Friday and sharing one of my new favorite recipes!

Here’s the thing about me – I’m pretty much always craving something sweet. All of my closest friends know me as a dessert fiend, which probably isn’t great since most of the desserts I love (cupcakes, cookies, ice cream, donuts, etc.) are filled with not-so-great-for-you ingredients. That being said, I’ve been trying to lower the sugar in my everyday eating (save for natural sugars from fruit), especially during breakfast! As much as I love the sound of starting my day with a huge stack of pancakes (unless they’re these),or sugar-filled smoothie bowl, it’s probably not going to give me the sustained energy I need to get through my busy morning.

Enter: the breakfast cookie. Now this recipe isn’t just some imposter parading around as “healthy” when really it’s filled with sugar and chocolate. These carrot-apple spice cookies legitimately are packed with protein, fiber, vitamins and healthy fats, aka the nutrients your body needs to function. That being said, they don’t even taste that healthy…like, you know that weird taste when baked goods have too much greek yogurt instead of oil? Yeah.

What I love about these cookies is that they’re moist (ugh, sorry I know everyone hates that word) from the carrots and apple, and genuinely substantial. You can think of them as oatmeal really, just baked and in tiny servings 🙂 The best part about cookies, too, is that you can take them on the go, which is essential for us busy babes. I keep them in the fridge and take 2-3 to snack on during the workday. That’s probably too many, but whatever, it’s way better than eating on processed food or snacks, and you know exactly what’s in them.

I based my carrot-apple cookies on this recipe and used only coconut oil (no butter). These are 100% gluten-free as long as you use gluten-free oats, and if you wanted to make them vegan, you could use a chia or flax egg! Don’t be scared by all the ingredients below, this is one of the easiest recipes for a baked good I’ve ever seen. If you want to make your life even easier, use a food processor and pulse your carrots and apples in there a couple of times. Then you pretty much throw everything in a couple bowls and call it a day. You know me, I like to keep things efficient!

Carrot-Apple Spiced Breakfast Cookies

2 1/4 cups rolled oats

1 cup whole wheat flour (or oat flour if you’re gluten-free!)

1/2 cup ground flaxseed

2 tsp cinnamon

1 tsp nutmeg

1/2 tsp sea salt

1 cup unsweetened applesauce

1 large egg

1/2 cup maple syrup or honey

1 tsp vanilla

1/4 cup coconut oil

1 cup grated carrot

1 cup grated or finely diced apple (I used a Fuji!)

1. Preheat the oven to 350 degrees fahrenheit and spray or coat a baking sheet with coconut oil.

2. In a large bowl, mix together the dry ingredients – oats, flour, flaxseed, spices and salt.

3. In a medium bowl, mix together the wet ingredients – applesauce, egg, maple syrup or honey, vanilla, and coconut oil.

4. Combine the wet ingredients with the dry ingredients in the large bowl and stir well. Add in the carrot and apple, and mix to combine completely.

5. Spoon the batter onto the baking sheet in about 1 1/2 in size balls. Flatten with your finger or the spoon, as these cookies won’t spread or rise! You can put them very close together on the baking sheet because of this, as well.

6. Bake for 15 minutes and then let cool. Store in an airtight container in the fridge for up to 5 days.

3-Ingredient Protein Pancakes with Peanut Butter Frosting.

Okay, so it’s becoming clear now that I like recipes that don’t require a ton of ingredients, isn’t it? 🙂

From my 3-Ingredient Fizzy Popsicles to my 3-Ingredient Cinnamon Raisin Energy Bites, I’ve now moved on to 3-ingredient meals! This recipe is a riff off of my 2-Ingredient Pancakes, but with a bit more staying power. Lately I’ve been eating breakfast later than usual (aka at my desk at 9am as opposed to before my commute at 8am), but having something more substantial so that I don’t have to have such a big mid-morning snack.

There really isn’t a reason for this, and you should always listen to your body of course, but I personally am trying to cut back on eating out of boredom. Sitting at a desk all day definitely lends itself to shoveling in handfuls of nuts mindlessly and convincing myself I’m starving an hour after a nutritious lunch, even if I’m definitely not. Anyone else have this problem!?

Now these pancakes can’t exactly be made too far in advance and brought to work, unless you have crazy amounts of extra time in the morning, but sticking with my eating schedule even on weekends helps to keep me on track. Though this breakfast may look super decadent, it’s really just bananas, eggs and protein powder! How easy is that?! The frosting is also just peanut butter and almond milk, but if you’re not feeling that you could leave it out or opt for something else like plain greek yogurt or fruit!

Keep 2 things in mind about this recipe:

1. It’s best to give yourself about 20 minutes to whip these up – the key is to have the heat on medium and not hotter otherwise the outside will burn and the inside won’t cook, which will cause your pancakes to stick to the pan (and be inedible!)

2. If you’ve got one, I definitely suggest using a food processor or blender to make the pancake batter, that way it’s nice and smooth. If you don’t have one, it’s totally fine, just make sure you take a few extra minutes and are ready to use some muscle power to get the lumps out of the bananas and protein powder!

3-Ingredient Protein Pancakes

1 egg + 1 egg white

1 medium ripe banana (I like mine with just a touch of brown spots!)

1 scoop vanilla protein powder (I like Garden of Life!)

1. Spray a small or medium size pan with coconut oil spray and heat over medium on the stovetop.

2. As your pan is heating, combine all 3 ingredients in a blender or food processor and pulse until smooth (it shouldn’t take long!).

3. Pour the batter onto the heated pan, or spoon for better leverage! I like to make a bunch of small pancakes, but feel free to do a few larger ones! You’ll find that the batter will spread pretty quickly, so a little will go a long way. Heat for about 3 minutes a side, or until you start to see tiny bubbles in the pancake. I also like to check by trying to slide my flipper (is that what it’s called?!) underneath and if it pops up no problem, it’s ready to flip!

4. Cook the pancake on the other side for 2-3 more minutes. Place on a plate, then cover, so it stays warm while the others are cookin’! Repeat with the rest of the batter and keep in mind the first and sometimes second pancakes never come out perfectly! You’ll get the hang of it, and know that you may need to adjust the heat throughout so that they don’t burn.

Peanut Butter Frosting

1 tbsp peanut butter (I love Nuts N’More!)

2 tbsp almond milk or water

1. In a small bowl, heat the peanut butter and almond butter in the microwave for ~10 seconds, until they’re easy to stir together. *If your peanut butter is drippy, you can probably skip this step!

2. Drizzle on top of your pancakes and sprinkle on some cinnamon too, if you’d like! Dig in 🙂

Matcha Coconut Overnight Oats.

Okay okay, so I know this recipe is kind of contradictory to my last one in which I claimed that oatmeal doesn’t actually fill me up…however! This one did (thanks to some added protein) and also oats are my favorite forever.

Matcha is totally having a moment right now, and I’m all for it. I’ve been hooked on green tea lattes since a friend introduced them to me a couple years back, so anything matcha related I can get my hands on, I will! I love that it not only tastes amazing (with a touch of added sweetness, otherwise it’s a bit harsh!), but is also super good for you.

It’s honestly kind of amazing that this magical powder stuff is packed with antioxidants and vitamins A, B-complex, C, E and K. And that gorgeous green color?! Swoon. And an awesome thing about this recipe is that it’s vegan and gluten-free customizable – just make sure you’re using certified gluten-free oats, non-dairy milk and/or plant-based protein instead of whey. If you’re not dairy-free, you can totally add some greek yogurt in here too (or coconut yogurt if you are). That would bump up the filling-factor and protein even more!

Matcha Coconut Overnight Oats

1/3 cup rolled oats

2/3 cup coconut milk

1/2 tsp vanilla extract

1 scoop vanilla protein powder

1 tsp matcha powder

1/4 cup unsweetened, shredded coconut

1/2 or whole banana, sliced (optional)

1 tsp chia seeds (optional)

1. In a mason jar, tupperware container, or bowl, mix together the oats, coconut milk, protein powder, matcha, and chia seeds if desired.

2. Cover and let sit overnight in the fridge. When ready to eat, top with coconut and banana slices. Dig in!

Babes on a Budget: Sweet Potato Breakfast Bowl.

Ok I’m going to say something that I feel like is going to make people like, gasp and then hate me a little…

but oatmeal totally does not fill me up and I literally will be hungry 2 hours later. What is wrong with me, guys?! I’ve tried adding nut butter, protein powder, chia seeds, flax, you name it I’ve done it. And for some reason, without fail, my stomach will be growling by 11am. So, I’ve recently turned to other (inexpensive) means of filling up before busy days at the office and it includes some of my absolute favorite foods: sweet potatoes, peanut butter, bananas and dates. I topped it with granola too, for a little extra crunch & sweetness! I definitely recommend coconut granola, or just coconut flakes/shavings – the flavor combo is INSANE.

The best part about this recipe is that is super low effort, kind of like overnight oats but just slightly more prep. You just boil a pot of water, peel and cut a sweet potato into 1/2 inch (-ish) chunks, boil for about 15 minutes and then you’re good to go. You can mash the potato in the pot, or another bowl, or a tupperware if you want to save it for the next day in the fridge. Then you simple toss in the other ingredients and poof. Done. Easy peasy.

Sweet Potato Breakfast Bowls

1 medium sweet potato

1/4 cup unsweetened vanilla almond milk

1 banana, sliced

1 -2 dates, chopped

1 tbsp peanut butter (drippy is better, so I’d go for all-natural!)

1/4 cup granola (I used KIND Oats & Honey Clusters w/Toasted Coconut)

*if gluten-free, just leave off the granola or choose a gluten-free variety!

1. Fill a medium-sized pot 2/3 of the way with water and bring to a boil. While the water is heating up, peel and cut a sweet potato into 1/2 inch or so chunks. Drop into water once boiling and cook for about 15 minutes or until soft when poked with a fork.

2. Drain the sweet potatoes and mash with a fork either in the pot or another bowl. Add in the almond milk to make it creamier and stir until combined.

3. Top with banana, dates, granola and peanut butter if eating right away, or keep in the fridge for up to 3 days in an airtight container. Enjoy!

Apple Spice Blondies [Dairy + Gluten Free!].

Ahh Monday, we meet again. Am I ready for you? I’m not sure…

What I am sure about, however, is a weekend that’s the perfect combination of relaxing and productive makes it easier to head back to work when it’s all over. I’ve recently gotten back into meal-prepping and it is making my life about a billion times better! Just less to worry about during the week, like knowing I already have a healthy lunch packed to take with me or dinner all ready in the fridge when I get home.

One key part of meal-prepping for me is making healthy snacks and treats. If I don’t have snacks ready to go, I will 100% reach for the candy at work instead or impulse-purchase the chocolate bars that are just kind of waiting for you while you check out at Trader Joe’s…don’t tell me you don’t know what I’m talking about. Those things are goooooood! And we all know I’m about balance aka shoveling in some chocolate every once in awhile, but I also like to eat things that satisfy my sweet tooth without making me feel like crap afterwards.

This week I went with a recipe I’ve had pinned for at least a year, but could never make because I didn’t have coconut flour. This morning on my way back from the farmer’s market though, I finally got it!! I went with Bob’s Red Mill, since I know their products are super high-quality, and so far I can tell you it does not disappoint! That, peanut butter, unsweetened applesauce and  maple syrup basically make up this entire recipe. That’s it! No butter, oil, milk, sugar or eggs. How awesome is that?! You literally throw everything in a bowl, plus some spices, and call it a day. Then 30 minutes in the fridge and BOOM. Blondies. *drops mic*

Apple Spice Blondies

(adapted from this recipe)

1/4 cup coconut flour

1/2 cup peanut butter* (choose one with just peanuts, nothing else!)

1/2 cup unsweetened applesauce

3 tbsp maple syrup

1/2 tsp cinnamon

1/2 tsp nutmeg

*you can use almond butter here, but I went with peanut because it’s cheaper!

  1. Preheat the oven to 350 degrees fahrenheit and grease a muffin tin with coconut oil or vegetable oil spray.

2. In a large bowl, combine all ingredients and stir until completely combined. The batter will be thick, which is a good thing!

3. Spoon the batter into the muffin tin so that each cup is about halfway full (these don’t rise, so you can always fill them more, but you’ll make fewer blondies and will need to cook them for longer!).

4. Bake for 30 minutes, then cool for 15. Carefully spoon the blondies out of the tin (they crumble easily!) and eat right away or store in an airtight container in the fridge. Enjoy 🙂

Blueberry Power Smoothie.

Have you all been seeing this thing about putting cauliflower in smoothies yet!? Wait wait, don’t leave just yet, I promise this’ll be good!

So here’s what’s up. My favorite health and wellness experts(the Tone It Up girls, Jeannette from Shut the Kale Up, etc.) have all been posting about this new trend and it’s been popping up all over my Instagram too – people are literally putting frozen cauliflower in their smoothies. Like what. The. F. So, obviously, I had to jump on board and see what all the fuss was about, not to mention that I had to try it for you all first so I could relay my honest opinion…

Okay, I’m not going to lie, before I perfected this smoothie recipe there was a very, very slight hint of cauliflower detected. BUT! That was before I added the necessary ingredients (aka those listed below) to make this taste super delicious! And truthfully, like scouts honor, this cauliflower business makes for a smoothie that is unbelievably creamy. We’re talking milkshake levels of creaminess over here. It’s legit. Not to mention that cauliflower has about a bazillion health benefits from boosting heart and digestive health to anti-inflammatory properties, plus vitamins, minerals and antioxidants galore.

So. if there’s one piece of advice I can offer you today, it would be to try adding cauliflower to your smoothies. And hey, if you hate it (which trust, you will not), you don’t ever have to do it again. But like, you totally will. You’re welcome 😉

1 small handful frozen cauliflower florets (or 1/4 cup frozen riced caulflower)

1 small handful kale or spinach

1/4 cup milk (any kind, pick your favorite!)

1/4 cup cold water

1/2 frozen banana

1/2 cup frozen blueberries

1 scoop vanilla protein powder

1 tbsp peanut butter powder or nut butter of your choice

  1. Add all ingredients to a high-powered blender and blend until smooth. My trick is to start with less liquid and then add if I need more, but I like my smoothies super thick. You do you!

I hope everyone had a wonderful weekend and Monday! The sun finally came out in LA and I was able to spend a bit of time outside and on the beach. It was glorious. I also wanted to take some time to meal-prep for the week and whip up something new, so I decided to riff off this customizable baked oatmeal recipe. I loved so many things about these – they’re insanely cheap and easy to make, gluten-free, packed with protein, and they only have one tablespoon of honey in the entire recipe. That’s it! No other sugar whatsoever except natural sugars from the fruit.

You can absolutely customize these if you’re not feeling the blueberries. I’m honestly planning on making them again next week with carrots and raisins (I’m a big carrot-cake fan!), and maybe raspberries and chocolate chips the week after that…I have big plans 🙂 I also highly recommend smothering the crap out of these in peanut butter. It adds a bit of protein and a loooooot of yumminess.

Banana Blueberry Baked Oatmeal Cups

1 tsp vanilla extract

2 large eggs

1 medium, ripe banana mashed

1 cup unsweetened applesauce

1 tbsp raw honey

2 1/2 cups old-fashioned oats

1 tbsp ground cinnamon

1 1/2 tsp baking powder

1 1/3 cups unsweetened vanilla almond milk

1 cup blueberries

1. Preheat oven to 350 degrees and grease a muffin tin with coconut oil spray or Pam.

2. In a large bowl, combine the eggs, mashed banana, applesauce, vanilla extract and honey.

3. In a smaller bowl, mix oats, cinnamon, and baking powder. Pour into banana mixture and combine. Stir in almond milk and then add blueberries.

4. Divide the batter evenly into muffin cups (mine made ~16 so I had to do this twice!) and bake for 25-30 minutes or until slightly brown. Enjoy immediately or store in an airtight container in the fridge for up to 4 days!

Skinny Pumpkin Cream Stuffed French Toast (For One!)

Y’know how sometimes the best ideas come straight outta nowhere? Yeah. This was one of those ideas.

I was laying in bed last night, dead tired and trying so hard to fall asleep but for some reason I could not to turn my brain off (does this happen to you guys?!). While ordinarily I hate when that happens, this time when food popped into my head I didn’t mind so much because I thought of the things in my fridge (bread, an egg, pumpkin, my favorite Noosa pumpkin greek yogurt, etc.) and then this recipe.

I used sprouted Ezekiel bread for the base, which is basically a superfood, so that + the egg + yogurt + pumpkin = heaps of protein and fiber. I only used a single tablespoon of brown sugar and the tiniest drizzle of maple syrup, so this recipe is low in sugar too (no mid-morning crash!). The pumpkin cream, which is simply pumpkin greek yogurt and some spices, makes this french toast an over-the-top comfort food breakfast perfect for the holiday season without the guilt. Doesn’t get any better than that, folks!

Skinny Pumpkin Cream Stuffed French Toast (For One!)

2 pieces of Ezekiel sprouted bread (or your favorite whole grain kind)

1 egg

1/8 cup pumpkin puree

1/4 cup 1% or non-fat milk (could sub almond or coconut)

1/2 tbsp brown sugar

1 tsp vanilla

1/2 tsp cinnamon

1/4 tsp ground ginger

3 tbsp. pumpkin greek yogurt (store bought or mix plain w/ pumpkin)

  1. In a bowl with a wide, flat bottom (I used a small pyrex dish!), whisk together the egg, pumpkin, milk, brown sugar, vanilla, cinnamon and ginger.

2. Heat a skillet on low and spray with PAM or coat with melted butter.

3.While the pan is heating, drop one piece of bread into the batter. After coating both sides of the bread completely, which will take about a minute per side, drop it onto the pan.

4. Cook on medium-low until light brown, or about 2 minutes on each side. Prep the other slice of bread in the batter while the first is cooking.

5. When the first slice is done, place the second slice on the pan. Add 2 tbsp of the pumpkin greek yogurt to the top of the bread and spread a thin layer. Add the second piece of bread on top once it is done cooking.

6. Top the 2nd slice with the remaining pumpkin yogurt, sprinkle with cinnamon and drizzle with maple syrup. Dig in!
