Friends! Fall is…still not here in LA yet, sadly…but I will continue to light my scented candles and buy baby pumpkins until it is!

One of the things I do every fall in LA, when I get the most homesick for NY, is make all the autumn-y, cozy foods I can. I wanted to put together this list partly for myself, to keep track of all the things I want to make this season, but also for you in case you need a little comfort food, too!

2-Ingredient Pumpkin Donuts – First up is my pumpkin donuts (pictured above!). This one is at the top of this list for a reason, you guys. I’ve brought these to countless parties and friends, and they are a friggin’ HIT. Plus, they’re 2-ingredients. You really can’t beat that.

I usually test out a few recipes before my trips home and pick the one or two I really love so that I can make them for my family. And, as much as I hate to toot my own horn, these crescent rolls are kiiiiind of out of control.

And by kind of, I mean they are melt-in-your-mouth, “give me a 2nd one stat”, make your kitchen smell amaaaazing, out of control.

If you’re really looking for the convenience factor this holiday season (and let’s face it, who isn’t?!) you seriously need to pick up some of Immaculate Baking Co’s cookie dough, crescent roll dough or pie crust because they make it so stinkin’ easy, guys. They even have gluten-free cookie dough, so when I’m home and need to bake for my gluten-free (almost)sister-in-law, my stress levels will be at an all-time low. Made with the Immaculate Baking Co organic crescent roll dough, these pumpkin-pie rolls come together in just a few minutes and all things considered, aren’t all that bad for you! I love that the dough is organic because certain family members of mine really value eating organic foods, and in comparison to other crescent roll doughs I’ve tried, these are super soft and ever-so-slightly sweet. Paired with organic cream cheese, canned pumpkin, and coconut sugar, these make the perfect treat for breakfast, a mid-afternoon snack, or post-dinner sweet. If you have a ton of guests, or just want extras for seconds, this recipe is also really easy to double or even triple!

Easiest Pumpkin-Pie Crescent Rolls 

1 tube of Immaculate Baking Organic Crescent Roll Dough (makes 8)

2 oz. organic cream cheese (can be low-fat if you really want, but also #treatyoself)

1/2 cup organic canned pumpkin – not pumpkin pie mix!

7 tbsp coconut sugar – 4 for the filling, 3 for the topping

1 tbsp cinnamon (+ 1 tsp for the topping)

1 tbsp pumpkin pie mix (+1 tsp for the topping)

1. Preheat the oven to 375 degrees fahrenheit. Roll the crescent roll dough onto an un-greased baking sheet covered in parchment (if you have it!) and separate the triangles.

2. In a medium sized bowl, beat together the cream cheese, pumpkin, 4 tbsp of coconut sugar, and spices until creamy. Spoon one tbsp of filling onto each triangle of dough and spread into an even layer in the middle.

3. Roll the triangles up from the wider end to the skinnier end. Don’t be afraid if some of the filling seeps out, it’s all good!

4. In a small bowl, combine the remaining spices and coconut sugar. Using a tablespoon, carefully shake the topping mix onto each roll (about 1/2 tablespoon of coating for each).

5. Pop ’em in the oven for 15 minutes then remove and let cool for 5 minutes. Enjoy immediately, or store in an airtight container in the fridge for up to 1 day. *I’d reheat them for 10 seconds or so in the microwave if they’ve been chilled!

Fall Foodie Haul!

I had a rather productive weekend, to be honest. I did my fair share of Netflix-ing for sure, but I also accomplished a lot of things on my to-do list (ie. grocery shopping, organizing, getting some work done, etc.). And a quick life update – we got the apartment of our dreams!!! I signed the lease Saturday and we move in at the end of the month so I am PUMPED. Know what else I’m pumped for? This weather to stop being 90 degrees. Like I kid you not, I drove to east LA this weekend and it hit 98 degrees on my way. That is not October weather, people!! Looks like it’s going to cool down soon though, and I just did a massive pumpkin-themed haul so things are getting festive UP. IN. HERE.

I wanted to share with you some of the most delicious fall foods I’ve tried lately because damn they are good. I did buy a few other things, but they unfortunately didn’t make the cut because I wasn’t all that big of a fan. So, I’ll just leave those out and tell you what I am absolutely LOVING right now that’s getting me in the mood for my favorite season…

FitJoy Homemade Pumpkin Pie Protein Bars (Gluten-Free) – Guys if you could’ve SEEN my face when I bit into one of these for the first time…like a kid on Christmas because yes, these are THAT good. I will be honest with you, so many bars I’ve tasted that claim to be “birthday cake” or like, “red velvet” flavored have not made my taste buds very happy, so I was slightly skeptical of these holding up their name. But I will tell you right now, you need to order these asap because once word gets out, they are going to sell out immediately. I think these are so perfect for a sweet treat mid-afternoon or pre/post-workout, but if you’re tempted to reach for dessert after dinner, you could totally just eat half of this and be super satisfied!

Organic Canned Pumpkin – I think this one’s pretty self explanatory, but there is SO much you can do with this can. My greek yogurt pumpkin pasta sauce is a good place to start, or my pumpkin spice golden milk latte, but also in oatmeal, pancakes, smoothies, pumpkin bread, pumpkin cookies…I could probably go on forever. Just grab a can of this stuff (or 5) and you’re set for the season!

Kodiak Cakes Pumpkin Flax Pancake Mix – Is there anything better on a cozy fall morning than pancakes?! No. The answer is always no. And if you’re really trying to step up your breakfast game, I highly suggest you pick up some of this superfood pancake mix from Kodiak in pumpkin spice. The pumpkin flavor isn’t overwhelming at all, but it’s just the right amount of spice for a seasonal breakfast. I love that these are absolutely guiltless too (not that food should ever make you guilty, but you know what I’m sayin’). They have 10g of protein and 5g of fiber in each serving, and are made with 100% whole grains. I put a touch of maple syrup and Fourth & Heart Vanilla Bean Ghee on top and was in absolute heaven.

Figs – So I’ll be honest, I always thought figs were like, super expensive, and so I kind of never bought them even though I LOVE them. But the last time I went to the grocery store, I saw that they were only $3.99 for a big container, which may be more than bananas or apples, but was sooooo much less than I thought they’d be! And trust me, they are so worth it. I’ve been putting them on my oats, on top of my smoothies, and straight up eating them standing up in front of my sink. It’s safe to say I’m obsessed…

TJ’s Pumpkin Ravioli – If I could have one thing for dinner every single night for the next two months, it would be these. If you couldn’t tell already, I’m definitely more of a sweet person rather than a savory person, so these ever-so-slightly-sweet little pillows of goodness are riiiiight up my alley. I’ve tried these both with olive oil/sea salt and butter/cinnamon, and both versions are incredible. If you served these with a side salad you might just be able to pass them off as a balanced meal 😉

Trader Joe’s Pumpkin Spice Almond Beverage – Guys. I would not be lying to you if I said I have been putting this almond milk in EV-ER-Y-THING. In my coffee, in my oats, in my smoothies, in baked goods, tea, you name it I’ve tried it. I can’t get enough, which may actually be a problem since I know TJ’s has been selling out of this stuff like crazy. I think it’s probably 12x better than people expected it to be too – just the perfect amount of pumpkin flavor, spices and sweetness, plus it’s a bit thicker than plain almond milk. My only qualm is that there is added sugar in there, so I may actually try to make my own version. Until then, you can find at least 2 cartons of this in my fridge at all times.

Honeycrisp Apples – Pumpkin is wonderful and all, but fall is definitely not complete without apples. Autumn makes me miss apple picking and getting cider donuts with my family in the northeast, but the closest thing I can get is to buy the best apples I can find and pretend I’m not in 90 degree LA. I obviously eat apples all year round, but they seem extra special in fall. They’re another great oatmeal topping, but you can also saute them in some ghee with cinnamon and brown sugar and you’ve got a fairly healthy fall dessert!

Fall Flowers – Ok guys, I know this isn’t like, a fooooood, but i think treating yourself to flowers every once in awhile is an absolute must and fall flowers are so perfect for setting the mood! Like lots of things on this list, I bought this bouquet at TJ’s since I think they have some of the best deals on flowers. I also love getting fresh flowers from the farmer’s market (one of my favorite things to do on a cool fall weekend!), and they usual have more unique flowers for a great price, too!

Trader Joe’s Pumpkin Spiced Pumpkin Seeds – These are the one item not pictured in that first photo, and they weren’t my absolutely favorite, but I wanted to include them on this list because I’ve been adding them to my oatmeal for a bit of crunch! They’re a little too sweet to enjoy on they’re own, but they’re absolutely delicious and would be amazing on top of a pumpkin smoothie or in fall trail mix!

Apologies for the brief hiatus – Vegas really took it out of me (not shocking for this grandma-at-heart). It is not feeling anythingggggg like fall here in LA and if you know me at all, you know I get homesick without fail every year at this time. I’m a New Yorker at heart, so of course all I want to do is go apple picking and see the leaves change colors, although from the looks of it, it doesn’t seem as though it’s feeling like fall anywhere on the east coast these days. #globalwarming

But even though I can’t wear my cozy sweaters yet, I’m going to do everything in my power to make this season feel like the one I love so much, and that means starting with PUMPKIN. Please don’t hate me, I know I’m basic as anything sometimes, but there really is just something so comforting about fall spices like cinnamon, ginger, cardamom and nutmeg. I riffed off of these golden milk (aka turmeric) lattes everyone is raving about and added a little fall flare. The combination is UNREAL, if I do say so myself.

I absolutely love sipping on this before bed since it has no caffeine and feels a bit more decadent than tea. You could even add a tablespoon of coconut oil to make it more filling if it’s a morning or afternoon kind of drink, but I like to keep things light around here right before going to sleep! This recipe actually makes 2 servings too, so you can have one at night and then pop the rest in a mason jar for the next day. I actually had my second serving today at work and it made me SO damn happy. It just like, cozied things up a bit, you know?

Another thing to note – this recipe includes real pumpkin puree (not pumpkin pie filling!), which makes this drink super creamy and adds fiber, potassium and vitamin C. Not to mention it also has tryptophan (the stuff in turkey that makes you sleepy after Thanksgiving!), which makes it literally the BEST thing to drink before bed.

Pumpkin Spice Golden Milk Latte

(makes 2 servings)

2 cups unsweetened vanilla almond milk

2 tbsp canned pumpkin puree

1 tsp turmeric

1 tsp pumpkin spice

pinch black pepper (freshly cracked if you can swing it!)

1-2 tablespoons maple syrup or honey

1 tsp vanilla extract (optional)

1. Put almond milk in a saucepan and heat on the stove over low to medium heat. Add the remaining ingredients and cook for about 10 minutes, stirring about every 30 minute or so to make sure the flavors really combine and any clumps of pumpkin puree are broken up.

2. Carefully pour pumpkin spice golden milk into a mug and use a milk frother, if desired. *You can totally just drink this as is too, but if you like that part of lattes best and don’t have a frother, you can even put this in a blender (as long as it’s not too hot!) and blend it up for a sec. I also shook mine in a mason jar for couple of minutes with a strong arm and it had the same effect!

3. Store remaining mix in an airtight container in the fridge for up to 2 days. Shake before drinking.

The past 10 or so days have been an absolute whirlwind! There was a ton of celebrating (my birthday, seeing family again, and a wedding) and I had an absolute blast.I made it to the Outer Banks in NC on September 1st, aka my favorite place on the planet, and got to enjoy the next week soaking up some much-needed time with family. In between moments of fun were plenty of relaxation on the beach and a bit of work, too. Oh, and I ate like a friggin’ QUEEN. Here’s some proof:

The most incredible and doughy bagel with pastrami smoked salmon & veggie cream cheese – I kid you not when I say I had 4 bagels in 6 days. What can I say, we just don’t have good ones back in LA!

Homemade crab cake benedict with hollandaise sauce – I can’t take credit for this one, my dad & bf were some very impressive chefs!

And Frozen grapes by the pool because literally nothing is better on a hot day!

There was also some blogging involved (did you catch my recipe for nutty whole grain chocolate chip cookies?!) and therefore eating of the props, as well…and I taught my boyfriend how to take photos on my fancy camera! I’d say he got pretty into it 😉

We also caught the gorgeous sunsets that are characteristic to the island and one of the things I love so, so much about my annual trip there. What is it about rainbow skies that makes us feel happy and grateful and humbled?!

…And the love my parents have for each other? That’s another thing that makes me feel happy & grateful 🙂 I know this picture is kind blurry, but it instantly makes me smile. These two have been married for 37 years, how incredible is that?!

One thing that was extra special about this year was that my boyfriend was able to join me. It was pretty wonderful getting to share my favorite place with my favorite person. It just makes me love it even more 🙂

And then we rounded out our amazing week with a wedding for one of his friends in Minneapolis, a city I’d never been to before. As exhausted as I was, it was so much fun. I also really liked the city from what I could tell, it’s very clean! I’d love to go back someday.

Now that I’m back, a part of me feels a bit sad that I don’t have this trip to look forward to anymore. I know that’s kind of silly since I had such an incredible trip, but I get so completely blissed out while I’m there that the week just flies by. This trip also always coincides with my birthday (and the start of a new school year), which makes it feel like both an end to the previous year and a kickoff for the one ahead. I like to take advantage of the down time I have while I’m there to check in with myself, re-evaluate my goals, choices, and general path in life. And I guess as much of a bummer it is that it’s over, I without fail always come back with a new perspective. I have so many goals for my 28th year, but here are just a few top-line ones!

Autumn Goals

-Try one new fall recipe each week

-Get back into a fitness routine and aim to workout 6 days a week (I need a serious re-set after all the celebration and vacation this past month!)

-Start bullet-journaling

-Blog 2-3x each (something I’m generally already doing, but want to be more consistent about)

-Carry my DSLR camera  + fancy lens everywhere and take more photos!

-Map out my blog goals both short and long-term, and how I will achieve them

-Spend more time outside (I know this one sounds counter-intuitive because the weather will be cooler, but I’d much prefer the cold over the heat from the summer!)

-Give my beauty routine a re-fresh and upgrade, it is MUCH needed!

2-Ingredient Pumpkin Donuts.

Guysssssssssssssssssss hi!

Let me just tell you, starting a full-time job + traveling + moving + car issues is a loooooot for the mind. And it’s already halfway through October?! Like how.

 Good thing I can look to my kitchen for a moment of calm. Nothing’s better than whipping up something delicious and sharing it with friends. And I don’t know about you,  but I feel like there are a ton of celebrations in the fall between birthdays and Halloween and even Thanksgiving. These donuts are going to be your go-to for all of them. I brought them to a party last night and all 15 were gone in about 30 minutes…so, yeah. This recipe is legit 2 ingredients (no oil or eggs!!) but admittedly I did add cinnamon because I’m obsessed and it makes everything taste even 10x more amazing. If you know what’s good for you, you’ll make these this weekend for breakfast or even just a weekday treat. Your taste buds will thank you.

2-Ingredient Pumpkin Donuts

1 box yellow cake mix (I used Duncan Hines Moist Mix)

1 15 oz. can of pumpkin puree

2 tbsp. cinnamon (optional but recommended)

1. Preheat the oven to 375 degrees fahrenheit. Grease a muffin tin with vegetable oil or coconut oil spray.

2. In a mixing bowl, combine the box of yellow cake mix with the pumpkin puree (NOT pumpkin pie mix!). Stir with a spatula until completely mixed and little to no lumps remain (it may take some muscle power and a few minutes).

3. Using the spatula, drop the mixture into the muffin cups so they are about 1/2 to 3/4 of the way full.

4. Bake for ~15 minutes or until slightly firm to the touch. Let cool for 10 minutes, then remove from the pan. Sprinkle with powdered sugar when ready to serve, or store in an airtight container for up to 5 days. Promise they won’t last that long though 😉

Spiralized Sweet Potato & Zucchini Latkes.

Oh, hello!

I hope you’ve all be having a good week, especially since it’s Hanukkah!!! Mine was off to a rocky start after being called in for jury-duty…there was also a false alarm of me having to stay there until THE 18th (aka two whole weeks of life gone), but the universe let me off the hook. Thus, I was able to do something in the holiday spirit I’ve been wanting to do for ages. Make latkes!

These are definitely not your average latkes. They’re muuuuuch healthier, and much easier to make as well. Simply spiralize a sweet potato, a zucchini, coat it in an egg and spice mixture, and throw it in the oven! I topped mine with cinnamon greek yogurt (mix a container of non fat plain yogurt w/1 tsp cinnamon) and unsweetened applesauce. I’d never spiralized a sweet potato before, but it was so easy guys. And this recipe actually turned out better than I’d planned, so I highly suggest whipping these up before the last night of Hanukkah 🙂

1 medium sweet potato, peeled

2 medium zucchinis, peeled

1 egg + 1 egg white

1 tbsp flour

1 tbsp cumin

1 tbsp garlic powder

1 tsp salt

1 tsp pepper

plain greek yogurt + cinnamon for dipping (optional)

unsweetened applesauce for dipping (optional)

  1. Preheat the oven to 425 degrees fahrenheit. Prep a baking sheet with a piece of parchment paper and spray with non-stick cooking spray. *They’ll stick otherwise!!!

2. Using a spiralizer, spiralize the sweet potato and zucchinis and toss them in a bowl. Run a knife through the bowl to make the pieces slightly smaller.

3. In a separate bowl, whisk together the eggs, flour and spices until combined. Add in the zucchini and sweet potato and toss to coat well. **This step is super important so that the latkes stay together!

4. Once fully coated, grab a handful of spiralized noodles (about 1/4 cup of the mix) and place on the baking sheet in a little nest. Repeat this until the mixture is done (mine took 2 batches!). **These won’t spread, so feel free to put them as close together on the baking sheet as possible.

5. Bake for 12-15 minutes, or until the noodles are starting to brown. Remove from oven and let cool for 5 minutes. Top with cinnamon greek yogurt and serve with dipping sauce on the side, or store in an airtight container in the fridge for up to 2 days.

Well, we made it. It’s the weekend before Thanksgiving and I literally could not be happier!

The auto show this week was absolute chaos and my thesis is winding down to a finished product *thank goodness* so from here on out, I’d like to dedicate at least half of my brain capacity to thinking about holiday cooking, holiday baking, holiday decorations, holiday clothing and watching holiday movies. Slow-Cooker Pumpkin Maple Granola.

Guys. Thanksgiving is in 8 days. WHAT.

Now okay, I know I’ve been a bit obsessed with the pumpkin these days, but can you blame me? I’ve said it before, but this stuff is too good to pass up when it’s in season – tons of fiber and flavor, and SO versatile. My last pumpkin recipe was a savory one, and the one I’m bringing you today is sweet enough for dessert, but makes the perfect healthy breakfast too. It also comes together in a pinch and basically makes itself..helloooo slow-cooker. My colder-weather best friend.

I’ve paired this granola with my absolute favorite greek yogurt Noosa. The pumpkin flavor is actually out of control, if you haven’t tried it yet! Target for the win. The spices mixed with the crunch of the nuts and the chewiness of the oats make this recipe my go-to for a crowd-pleasing gift. Gluten-free, vegan and paleo, you can literally give it to anyone who needs a little homemade goodness if their life.

Slow-Cooker Pumpkin Maple Granola

(adapted from this recipe)

2 cups old fashioned oats

1/2 tsp salt

1 tsp cinnamon

1 tsp nutmeg

1 tsp ginger

1/3 cup pumpkin puree

2/3 cup maple syrup

2 tsp vanilla extract

1/2 cup chopped walnut halves

1/2 cup chopped pecans

1/2 cup seedless raisins

  1. In a large bowl, combine the oats, salt, and spices. Stir to combine.

2. In a small bowl, combine the pumpkin, maple syrup and vanilla and stir.

3. Add the pumpkin mixture to the oats, and mix until fully coated.

4. In a slow cooker set on high, pour the oats and spread in an even layer. Cook for 2 hours on high, stirring every 30 minutes. *Don’t forget this part!

5. After 2 hours, turn the slow-cooker off, add in the nuts and raisins, and mix. Store in an airtight container.

Howdy, folks! This girl is counting down the seconds until Thanksgiving weekend and I know I can’t be the only one. Knowing that mini-staycation is just around the horizon is definitely keeping me sane.
