I know summer is technically on its way out, but the heat waves in SoCal are just beginning!
The hottest month of the year here is September, so I still have popsicles and all the cold things on my mind! I’ve been obsessed with making these – I got a new silicone popsicle mold at the beginning of the summer and it’s the BEST. When you really think about it, you can pretty much put any flavor combo in there! The family I used to nanny for would actually make them out of green juice for the kids, and I thought that was genius.
But for me, I’ve been veryyyy into the blueberry + lemon combo lately. I made these super easy 4 ingredient, dairy-free Lemon Blueberry Yogurt Popsicles for a sponsored Instagram post a few weeks ago, but they were such a hit that I wanted to share them here, too 🙂 They come together in less than 5 minutes and are healthy enough for breakfast!
Lemon Blueberry Yogurt Popsicles
1 cup unsweetened vanilla almond milk
1 small container vanilla dairy-free yogurt* (~5.3oz)
1 tbsp lemon zest
1 lemon, juiced
1 cup fresh or frozen blueberries
*Can use any yogurt here! If using unsweetened, I recommend adding in a tablespoon of honey or maple syrup and/or 1 tsp vanilla extract
- In a blender, pulse all ingredients until smooth.
- Put mixture into popsicle molds and add a few blueberries.
- Let freeze overnight, then enjoy!
