To say I am excited would be the understatement of the century. I’m literally counting down the minutes until I get to see family and friends, bake a crap ton of cookies with my mom, and spend my first holiday ever with my boyfriend. PUMPED.

Okay now that I’ve exploded with holiday cheer, let’s move on to more pressing matters: these COOKIES. Let me express to you just how good they are – I’m rationing them so that I don’t run out before I go home for the holidays. Like instead of shoveling them all in my mouth at once, I’m actually savoring them bite by bite and THAT is saying a lot. And before you go thinking I’m all full of myself and stuff because I made a recipe that is full on inspiring me to possibly open up a bakery someday, I just want you to know that I legitimately set out to make these as an experiment and thought they might turn out terrible and crumbly and dry like lots of healthy desserts are…but! Thank cookies could not be more opposite of that.

I don’t even know how these have zero dairy in them…it’s kind of mind-blowing. And they 110% do NOT crumble. Isn’t that nuts?! That’s like my biggest pet peeve with some shortbread recipes. I think the best thing about these guys, aside from them being vegan friendly, is that they’re just the riiiiight amount of sweetness. Apparently there are people in this world that don’t love desserts and sugary things (WHO ARE YOU PEOPLE AND WHERE ARE YOU FROM), but these are the perfect cookies for those people.

And I know these are super Christmas-y or seasonal or what have you, but I think that’s what makes them perfect for the holidays. I think we all tend to OD on the rich stuff, the peppermint and chocolate and pecan and all that, so to have something a bit lighter as an option is nice! I know lavender isn’t something people always have on hand, but this recipe coupled with my lavender almond milk latté should give you enough reason to stock up now😉

Vegan Maple Lavender Shortbread Cookies

1/2 cup coconut oil (cooled & hard – pop it in the freezer for a sec if you need to!)

1/3 cup natural powdered sugar (*check this list for vegan sugar brands!)

1/4 tsp sea salt

1/2 tsp Lavender Flowers *go for culinary grade!

1 1/3 cup all-purpose flour

3 tbsp maple syrup

3 tbsp non-milk – coconut, almond, soy, etc.

1. Preheat the oven 350 degrees fahrenheit and line a baking sheet with parchment paper (ideal, but if you don’t have any just use lots of coconut oil!).

2. In a large bowl combine the coconut oil, powdered sugar and sea salt with a fork until all the sugar is combined and light & fluffy (might take a minute or so depending on your arm!).

3. Add the lavender flowers, then the flour 1/3 cup at a time and use your hands or the fork to combine. Don’t use an electric mixer for this one!

4. Finally, add the non-dairy milk and the maple syrup one tablespoon at a time and be careful not to not overmix! The dough may seem dry but try not to add any extra liquid here as it will mess with the consistency of the cookies.

5. Lightly dust a cutting board or clean surface with flour. Form the dough into a ball and then roll it out until it’s about 1/4 inch thick. Use a cookie cutter, mason jar, or glass to form the cookies into shapes.

6. Place the cookies on the parchment paper and bake for 10-12 minutes. *Check on them at 10 minutes just in case! You’ll want to take them out when they’re juuuuust starting to brown on the edges. They overbake quickly!

7. Let cool completely before noshing – I promise they’ll taste better this way! Store in an airtight container for up to 5 days.

How is everyone doing?! Counting down to the holidays like me? This season tends to be extra crazy at work what with prepping content ahead of time to accommodate everyone’s vacation schedules (I work in social media marketing), so a vacation will be much needed when we finally get to it! I’m not gonna lie though, I always love the weeks leading up to Christmas (and Hanukkah!) because they’re so fun and festive. We went to our first holiday party last weekend and have another this weekend and I don’t think anything beats mulled wine and Christmas cookies.

That being said, I am trying to make sure I’m taking care of my health before things really ramp up, much like I was before Thanksgiving, because I tend to crave only sweets around this time and unfortunately that just ain’t gonna cut it, sister. I’ve been adding extra greens to my smoothies, extra veggies to my lunch, and trying to get my sweat on in some capacity every single day. Since we all know I’m a big snacker, especially when I need to fuel myself through a workout, ideally I like to combine my sweet tooth with my commitment to my health. And can I tell you? It’s actually reallyyyyy easy to make super delicious “treats” that are full of nourishing ingredients. Just ask my boyfriend – I told him these brownie bites were healthy and his mind was blown. He literally said, “but they don’t taste healthy.” MISSION. ACCOMPLISHED.

I know “healthy” is a relative term, but if chia seeds, rolled oats and nut butter aren’t good for you, I’m not sure what is. These are gluten-free (as long as your oats are) and packed with an insane amount of protein. They also take about 6 minutes from start to finish which is kind of outrageous. My absolute favorite part of them, though? The collagen.

I’ve started incorporating Further Food collagen into my diet (as I mentioned in my November favorites!) and this stuff continues to blow my mind. Dairy free, gluten free, non-GMO, sugar free and organic, collagen helps improve gut health, bone strength, and hair/skin/nails. Apparently in our 20’s we start producing less collagen than before, which can lend itself to saggy, wrinkly skin, weak bones, and achey joints. Nooooo thank you. By adding collagen into our diets through supplementation, we can help prevent and reverse this process. AND! And. It has protein, which helps keep you full and can prevent overeating. Yes. Please.

Anywayssssss, these little babies are basically winter goodness in a ball, and they are perfect for when you’re craving something slightly sweet! They’re kind of like how dark chocolate is – a bit sweet but not too much so. If you like things on the sweeter side, I might add a touch more honey. Up to you, though!

Peppermint Brownie Protein Bites

(makes ~12)

1/2 cup oat flour (just pulse oats in a food processor!)

2 tbsp chocolate protein powder (Garden Of Life is my fave)

1 serving collagen

2 tbsp cocoa powder

2 tbsp almond butter

2 tbsp honey

3 tbsp almond milk

1/8 tsp peppermint extract

1 tbsp ground chia seeds (whole works, too!)

1. In a large bowl, combine all ingredients and stir until wet are completely mixed with dry. Use your fingers if you’ve got to, and if it feels too dry after about 30 seconds of mixing, add a touch more almond milk. You shouldn’t need any, though 🙂

2. Shape into 1 inch balls and let harden in the fridge for at least one hour (or freeze ’em for 30 minutes!). Will keep in the fridge for up to one week in an airtight container.

As someone who used to have a non-traditional job for 5 years, it’s still weird for me sometimes to think of weeks as Monday through Friday, and weekends as actual weekends… but anywho, where I’m going with this is that sometimes you need a lil somethin’ somethin’ to spruce up a weekday since counting down the minutes until the weekend is no way to live, y’all.

I made these donuts last Sunday when I had some extra time to myself, and having them as a mid-week treat has seriously brightened up an otherwise fairly boring day. I recently got my hands some of the Rootz Nutrition paleo protein superfood in Chocolate Banana Nut and I can confidently say that I have upped my smoothie game. I’ve mentioned this in the past, but I absolutely hate when protein powders have a chalk-like taste (as does everyone, I’m sure), but when I find a protein powder that actually tastes incredible, I obviously have to share it with you. Besides taste though, I love that the Rootz products are paleo-friendly so even though I’m not actually paleo (because #labelfree), the ingredients are crazy clean. This particular powder also contains completely undetectable greens like chlorella, spirulina, kale, broccoli and spinach. Since this stuff has so many awesome benefits, I’ve been trying to find new ways to incorporate it into my diet because as much as I would love to have smoothies for breakfast, lunch and dinner, that’s probably not actually the most nutritious option. After browsing Pinterest for allllll the donut recipes, I kind of mushed some of them together to come up with this one. I’ll be honest, I did a pretty good job guys. These have the perfect amount of sweetness, stay moist for days when you keep them in the fridge, and are just the right size for when you want a little treat. Plus, they’re DONUTS which makes them feel extra special, y’know?

Chunky Monkey Protein Donuts

1 egg

1/4 cup peanut or almond butter

1 large ripe banana

2 1/2 tbsp melted coconut oil

3 tbsp coconut flour

2 tbsp Rootz Nutrition Paleo Chocolate Banana Nut Protein (or any protein powder)

1/2 tsp baking powder

1/2 tsp vanilla extract

pinch of cinnamon

1/2 cup mini chocolate chips (optional)

 

1. Preheat the oven to 350 degrees fahrenheit and coat the bottom of a donut tin (mini or regular) with coconut oil.

2. In a large bowl, mash the banana and stir in the nut butter, melted coconut oil and egg until completely combined and mostly smooth. *You can put the ingredients in a blender if you’d prefer, but sometimes I like not having to do the extra dishes!

3. Add the coconut flour, protein powder, baking powder, vanilla and cinnamon, and stir until well-combined, but careful to not overmix! If you’d like, you can fold in the chocolate chips here, or use them later as a drizzle on top like I did.

4. Using a spoon (and a wet finger), fill each donut cavity about halfway with batter. I like to fill mine just slightly over half so they’re a bit bigger 😉 Bake for 12-15 minutes, or until dough is firm.

5. Let donuts cool for at least 10 minutes before removing from the pan. You’ll want to run a spoon along the edges to make sure the donut hasn’t stuck to the pan, then carefully spoon each donut onto a plate or wire rack to finish cooling.

6. If you’d like, you can melt the chocolate chips in a bowl with a touch of coconut oil (I’d heat them for about 20 seconds at a time), and then drizzle the melted chocolate over the donuts once completely cooled. Store in an airtight container in the fridge for up to 3 days and pop in the microwave for 15 seconds before eating!

Apple Spice Blondies [Dairy + Gluten Free!].

Ahh Monday, we meet again. Am I ready for you? I’m not sure…

What I am sure about, however, is a weekend that’s the perfect combination of relaxing and productive makes it easier to head back to work when it’s all over. I’ve recently gotten back into meal-prepping and it is making my life about a billion times better! Just less to worry about during the week, like knowing I already have a healthy lunch packed to take with me or dinner all ready in the fridge when I get home.

One key part of meal-prepping for me is making healthy snacks and treats. If I don’t have snacks ready to go, I will 100% reach for the candy at work instead or impulse-purchase the chocolate bars that are just kind of waiting for you while you check out at Trader Joe’s…don’t tell me you don’t know what I’m talking about. Those things are goooooood! And we all know I’m about balance aka shoveling in some chocolate every once in awhile, but I also like to eat things that satisfy my sweet tooth without making me feel like crap afterwards.

This week I went with a recipe I’ve had pinned for at least a year, but could never make because I didn’t have coconut flour. This morning on my way back from the farmer’s market though, I finally got it!! I went with Bob’s Red Mill, since I know their products are super high-quality, and so far I can tell you it does not disappoint! That, peanut butter, unsweetened applesauce and  maple syrup basically make up this entire recipe. That’s it! No butter, oil, milk, sugar or eggs. How awesome is that?! You literally throw everything in a bowl, plus some spices, and call it a day. Then 30 minutes in the fridge and BOOM. Blondies. *drops mic*

Apple Spice Blondies

(adapted from this recipe)

1/4 cup coconut flour

1/2 cup peanut butter* (choose one with just peanuts, nothing else!)

1/2 cup unsweetened applesauce

3 tbsp maple syrup

1/2 tsp cinnamon

1/2 tsp nutmeg

*you can use almond butter here, but I went with peanut because it’s cheaper!

  1. Preheat the oven to 350 degrees fahrenheit and grease a muffin tin with coconut oil or vegetable oil spray.

2. In a large bowl, combine all ingredients and stir until completely combined. The batter will be thick, which is a good thing!

3. Spoon the batter into the muffin tin so that each cup is about halfway full (these don’t rise, so you can always fill them more, but you’ll make fewer blondies and will need to cook them for longer!).

4. Bake for 30 minutes, then cool for 15. Carefully spoon the blondies out of the tin (they crumble easily!) and eat right away or store in an airtight container in the fridge. Enjoy 🙂

December Favorites.

Hello!! I hope everyone had a very merry Chrismukkah! I know we sure did – super low key and full of delicious food with family. Just the way I like it 🙂

Lenny & Larry’s Complete Cookies – Guys. I’m obsessed with these. I ordered 2 boxes of them on Black Friday and was holding out until the new year to dig in…I can’t WAIT. My favorite flavor is probably the peanut butter, but the chocolate chip and snickerdoodle are awesome, too! A must – microwave them for 10-15 seconds. They’ll taste freshly baked.

Powdered Peanut Butter – Admittedly, I’m not super brand loyal on this one, primarily because I’m curious what they all taste like, but I’ve been addicted to adding this stuff to my oatmeal and plain greek yogurt. It’s got that yummy nut butter taste and protein, but way less calories and fat. Toss it in a smoothie for some extra flavor, too!

Trader Joe’s Chocolate Mint Black Tea & Candy Cane Green Tea – This is one of the aforementioned seasonal treats, sadly. But! If you can get your hands on a couple of these babies before TJ’s gets rid of them, DO IT. You can thank me later. The Chocolate Mint is unreal and tastes like a peppermint patty, especially with a splash of milk and some stevia. I think it’s new this year, but the Candy Cane I’ve been getting for the past few years. It’s my favorite. Again, splash of milk and touch of sweetness and you’ll think you’re having an actual candy cane…not to mention it’s decaf, so it makes for the perfect cup of tea before bed!

Iced Gingerbread Clif Bars – So I know Clif Bars sometimes get a bad rap for being super dense and kind of brick-like, but I will say that I absolutely love these when I need a heftier snack. My dad’s been bringing them with us when we go skiing for years because they’re great for longer workouts. The Gingerbread flavor was surprisingly tasty, too. I’ll be buying these again soon!

David Rio Chai Mix – For a last-minute impulse purchase at World Market, and just in general really, this stuff is awesome. You put 2 tablespoons in hot water and boom! Just as good as a Starbucks latte without the price tag and added sugar. Like the TJ’s tea, it’s also decaf and I’m pretty sure it’s only 60 calories (without the milk, which I highly recommend adding. I usually do about 20% milk, 80% hot water). If you’re at all like me and addicted to hot cocoa, you’ll love this mix when you need to switch it up!

3-Ingredient Strawberry Protein Pops.

I know I know, I can’t remember the last time I posted a recipe either.

This summer has been both crazy and amazing in all the ways you can imagine. I went on two incredible vacations to Hawaii and Portugal, am about to hop on a plane to another, worked my butt off but also went to the beach a fair amount, tried new things and met new people. I’m back from my blogging break now, though, and let me tell you it is hot out there today!

I highly suggest you do yourself a favor and throw some greek yogurt, frozen berries and milk in a blender because that’s literally all that’s in these popsicles. Not a fan of strawberries? Try mango, pineapple, banana, blueberries or a combo of all of ’em! I added honey and vanilla extract for good measure, but you totally don’t have to. Also if you don’t have a popsicle mold, or Amazon Prime where you can impulse purchase one for less than $10, use a muffin tin or dixie cups and popsicle sticks!

3-Ingredient Strawberry Protein Pops

1 cup frozen strawberries

1 container of non-fat plain greek yogurt

1 cup almond milk (+ more if you need to get the mix going)

1 tsp vanilla extract (optional)

1 tbsp honey (optional)

  1. In a blender, combine all of the ingredients and pulse until smooth. Add water or extra milk if necessary.

2. Pour or gently spoon the mix into a popsicle mold and freeze for at least 2 hours.

3. When ready to eat, remove and enjoy. Sometimes it helps to run the popsicle mold until hot water for a few seconds or even let the mold sit out for 5 minutes before removing!

Single-Serving Protein Cookies (And Why I Put Cinnamon on Everything).

Hi friends!

I’m back with a recipe that just blew my mind and took about 36 seconds to create. 5 ingredients, a ton of protein, and gluten-free – what’s not to love?! Plus, these seriously taste like ice cream. I don’t even know how that’s possible, but they do…

The 5th ingredient is optional, but amps up the flavor and adds a ton of health benefits. I don’t know if you are all as obsessed with cinnamon as I am, but I honestly put it on (almost) everything. I’ll put it in my coffee grounds before I brew my morning cup, on top of my peanut butter toast, in oatmeal, on yogurt, and even on sweet potatoes. Not only is it delicious, but it has so many awesome properties. It regulates blood sugar, contributes to better heart health, boosts brain function, is loaded with antioxidants, has anti-inflammatory characteristics, and may even protect against cancer! So yes, you should start incorporating it into your everyday meals and snacks stat.

So anyways, I suggest making these when you’re craving something sweet whether it’s late at night or after a workout. They’ll satisfy a sweet-tooth without completely ruining all of your hard work aka the dream.

Single-Serving Protein Cookies

2/3 scoop vanilla whey protein powder

1 heaping tbsp natural, unsalted peanut butter (TJ’s has the best!)

1 tbsp honey or agave

1 tbsp cashew/almond/coconut/soy milk

1 tsp cinnamon

1. In a bowl, thoroughly combine all ingredients.

2. Shape into truffles or cookies. Eat immediately, or freeze for a couple minutes first!

Note: If saving these for later, store in an airtight container or ziploc in the fridge.

Chia Pudding: 2 Ways.

I’m back with some humpday treats, y’all!

I was inspired by Lauren over at The Skinny Confidential to make some Chia Pudding for this week. I forgot how much I loved it and how easy it is to make! So I’m bringing you two different, super simple recipes – one is more reminiscent of fall but incredible nonetheless, and the other takes advantage of summer’s ripe berries. Either way, this snack or dessert is sure to make your tastebuds (and your waistline!) happy 🙂

Apple Pie Chia Pudding

(adapted from this recipe)

1/2 cup light coconut milk (from a can works best!)

2 tbsp chia seeds

1/2 granny smith apple

5-8 walnut halves

1/2 -1 tsp cinnamon (i like a lot!)

1. Combine the coconut milk and chia seeds in an airtight container. Stir the seeds around a bit before putting in the fridge to set overnight (or at least 5 hours for best results).

2. Once ready to eat, add chopped apple, walnuts and cinnamon. Dig in!

Summer Berry Chia Pudding

1/2 light coconut milk (from a can works best!)

2 tbsp chia seeds

1/4 cup chopped strawberries

1/4 cup chopped blueberries

1. Combine the coconut milk and chia seeds in an airtight container. Stir the seeds around a bit before putting in the fridge to set overnight (or at least 5 hours for best results).

2. When ready to eat, add the chopped strawberries and blueberries. Dig in!

See how easy that is? You can really customize these to include whatever fruits are your favorites. You can also add shredded coconut, vanilla extract, stevia, or even oats to make it even more flavorful, too. I like to prep at least 2 servings in advance so I have them on hand for a healthy treat. And did I mention they’re both vegan and low in sugar? Win win.

Carrot Cake Smoothie.

I’m only about 36 hours away from being on summer break from school and I can. not. wait.

This week has been nuts, but I’ve been prepping my meals like it’s my job (it should be, that would be an awesome…) and staying on track with my health goals. Every morning after my workouts I’ve been making this smoothie and it’s such a treat. After reading an article on Lauren Conrad’s blog about how we may be putting too much fruit/sugar in our smoothies, I decided to incorporate some vegetables. I usually do some sort of green, like spinach or kale, but this time I tried carrots! They’re naturally sweet and crazy for you, plus I don’t really eat them otherwise. Breakfast seemed like a good opportunity for me to squeeze them in!

This recipe is customizable to suit your tastes, but this is my preferred ratio and the perfect combination for a healthy, creamy and sweet treat!

Carrot Cake Smoothie

2 large carrots, chopped into small pieces

small handful of walnuts (+ a couple more for toppings)

1/2 frozen banana

1 scoop vanilla protein powder (optional, i’d recommend a natural sweetener if omitting)

1/2 cup of dairy-free milk (i use unsweetened vanilla almond)

1 tbsp. shredded coconut (+ more for topping)

1. Place all ingredients in a blender or food processor.

2. Blend until smooth (may add more milk or water to get things going). Pour into glass and top with extra walnuts + coconut. Enjoy!

Dancing for Donuts | Cake for BreakfastThese donuts are crazy delicious and surprisingly packed with protein and healthy things. Who knew?! They’re almost fudgy, sort of a cake-like brownie but without being too dry. I topped them with a smear of natural, unsalted peanut butter to give them an extra punch of flavor. But more importantly, what is better than chocolate and peanut butter together? Absolutely nothing. So I highly suggest making them today and having them each morning (and/or evening) to help get you through this week 🙂

Baked Double Chocolate Donuts & PB Frosting

(Adapted from Love from the Oven)

1 cup white whole wheat flour

1/2 cup sugar (I did slightly less)

1/4 cup cocoa powder

1/2 tsp cinnamon

1/2 tsp baking soda

1/4 tsp baking powder

1 tsp vanilla extract

1 egg

1/2 cup greek yogurt (I used vanilla)

1/4 cup milk (any will do!)

1/4 cup vegetable oil

1/2 cup chocolate chips

1/4 cup shredded coconut (optional)

3-4 tbsp natural peanut butter (Trader Joe’s is my favorite!)

1. Preheat oven to 375 degrees. Spray donut pan with coconut oil or Pam.

2. In a mixing bowl, combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and cinnamon.

3. In a separate bowl, mix vanilla, egg, yogurt, milk and vanilla.

4. Combine dry ingredients with wet and add chocolate chips/coconut if using. Mix until just combined.

5. Spoon batter into donut pan making sure to push any batter away from the center. Bake for approximately 10-12 minutes.

6. When completely cooled, top with peanut butter. Store leftovers in an airtight container or ziploc bags (although you won’t have very many 😉
