How We’re Celebrating Valentine’s Day At Home

Happy Valentine’s Day, babes!!❤️

I’ll be honest with you, this holiday has always kind of been whatever to me, whether I’m in a relationship for it or not! I think my favorite way to celebrate is probably just to treat myself and whoever I’m spending it with.

It’s also a excuse to indulge a little – get a mani/pedi, maybe a new outfit, get a present for someone I love, bake a rich dessert, or eat a fancy dinner! That being said, my bf and I have never gone out to celebrate Valentine’s Day, just because all the restaurants are so overcrowded and overpriced. I’m also not a big fan of fixed price menus since you don’t get as many choices!

So, instead, here’s a rundown of how I’ll be spending Valentine’s Day at home! And, luckily my bf doesn’t actually read this, so it’ll still be a surprise to him😉

A special, home-cooked dinner. Like I said, we love to cook at home! Since I’m now the one with the flexible schedule, I’m planning on making us a pretty full feast, just for fun! In the past, we’ve had risotto and lamb chops, so something a big more indulgent. I think I’ll continue the trend with this Slow Cooker Beef Ragu with Pappardelle or Shrimp and Bacon Risotto!

And dessert! Last year I made this Dark Chocolate Eclipse Cake and it was SO good. I honestly might just make that (’cause if it ain’t broke, don’t fix it), but I’m also think something like these Brownie Layer Cheesecake parfait things could be cute, maybe with some strawberries on top for festivity🍓

Plus Foot Massages… because I’m not very good at giving full body massages and it’s cheaper than the real thing😂 Not to mention it’s more comfortable and fun to just do it at home! I got this foot scrub and lotion from Barefoot Scientist and I think Valentine’s Day is the perfect time to break them out!

And probably a movie. We don’t actually watch movies all that often, especially if we’re too tired on a weeknight to get through the whole thing, but we do like to curl up on the couch and watch something! Lately we’ve been loving The Good Place and the new season of True Detective.

But then a weekend getaway😍 We found out pretty recently that Alex has President’s Day off work, so we were thinking of heading up to a family friend’s cabin in the mountains tomorrow, but then we found out it’s got no power from all the snow! Instead, we’ll be heading up to the Santa Barbara area for wine tasting for just one night, but I’m so excited! I really just wanted to do something special since we’ve been spending so many weekends huddled up at home. Maybe the rainy season will end soon…

Anyway, that’s about it – I hope you guys have a fun night celebrating!! Even if you’re single or honestly just not even doing anything, take this night to show yourself some love. You deserve it!!!💕💕

Gluten Free Almond Flour Cutout Cookies

If you’re still looking for something sweet to make for Valentine’s Day, I’ve got you covered!

These cutout cookies are legitimately INCREDIBLE, and they’re even on the healthier side, if that’s something you’re concerned about! The base is almond and coconut flour, and the only sweetener is 1/4 cup of honey. You can leave as is, but I find them to be sooo much better frosted! And yes, I know that adds sugar to them but hey, all we can do is our best, right?😂

The only other thing you need to know about these lil babies is that they’re actually better after the first day, which is why I’m posting this before Valentine’s Day. If you make them today, or even tomorrow, they’ll be perfect in time for celebrating!

Almond Flour Sugar Cookies

1 egg

1 tsp vanilla extract

1/4 cup honey

2 tbsp liquid/melted ghee (I use Fourth & Heart!)

2 cups blanched almond flour

1/2 cup coconut flour (I use Bob’s Red Mill for both flours!)

1/2 tsp baking soda

pinch of sea salt

For the icing: 2 cups powdered sugar, 2-3 tbsp water, 1-2 tsp pink pitaya powder (or drops of food coloring, but I’m trying to keep things natural!)

  1. In a medium sized bowl, whisk together the almond flour, coconut flour, baking soda, and salt.
  2. In a larger bowl, whisk together all wet ingredients including the egg, vanilla, honey and ghee. Pour the dry ingredients into the wet, and knead with hands until fully combined. The dough may feel crumbly at first, but I promise it’ll come together!
  3. Form dough into one ball, wrap in plastic, and refrigerate for 30 minutes. When ready to remove dough, preheat the oven to 350 degrees fahrenheit and line a baking sheet with parchment paper.
  4. Once the dough has chilled, dust a clean counter space with coconut flour. Roll dough out to 1/4 inch thickness and cut out shapes. Bake cookies for 8-10 minutes, or until they start to brown. *Cookies won’t expand, so you can place them closely together!
  5. Let cookies cool for at least 30 minutes before frosting or removing from the baking sheet. While they’re cooling, whisk together the ingredients for the frosting. Using a knife or spoon, decorate the cookies with the frosting, or any other add-ons you’d like. *If the frosting feels too thick, add water 1 tbsp at a time, or if it’s too thin, add powdered sugar 1 tbsp at a time. Store in an airtight container.

I’m going to be honest with you, I could kind of care less about Valentine’s Day. I mean, for like 95% of my life I was single for it, and even if I did have a boyfriend, it felt like any other day. I think my number one thing about it is just knowing that someone thought about me, but the truth is that if you’re dating someone who you’re truly meant to be with, that person is going to show you they’re thinking about you every damn day, y’know? Last year, Alex and I just made dinner at home and this year we’re planning on doing the same thing. I’ll definitely be whipping up something sweet, which I’m veryyyyy excited for (!), but otherwise it’ll be low key!

Regardless of who you’re with (or not with) this V-Day, I think the most important thing you can focus on is showing love to yourself and those around you. Call your parents, your siblings, your best friends, and tell them how much you care about them. Maybe write a card, or bake them something sweet you know they’ll love. And if it’s just you at the end of the night, treat yourself to some self care – a face mask, glass of wine (or kombucha), an episode of your favorite Netflix show, and a lil’ dessert. You deserve it! Heart-Shaped Food – This one is probably the easiest, cheapest, cutes thing you could possibly do! All you need is a heart cookie cutter and the possibilities are endless. Last year I made us heart-shaped avocado toast (basic b meets overrated holiday😂) and this year I’m planning on making heart-shaped pancakes! The ones in the photo at the beginning of this post were just made from the Birch Benders mix I had on hand and I added an easy chia-berry jam on top.

If you wanted to be reaaaaal cute, you could do pink jam so instead of using mixed berries like I did, do only raspberries or strawberries! To make it, put frozen berries of whichever variety you’d like in a microwave safe dish for about 30 seconds, add a tablespoon of either whole or ground chia seeds, and stir to combine. Let it sit for a couple of minutes and then you’re good to go! I like to use ground chia seeds, which are nice since you can’t even taste them, but they still help bring the jam together like whole seeds do.

White Chocolate Valentine’s Day Popcorn – This one is so perfect if you’re doing a galentine’s party or having a movie night in! I originally made this recipe two years ago, but if I were making it today I’d probably swap out the candy hearts for pink, white and red m&m’s! I know that might be overkill on the chocolate, but like, is there such a thing? The answer is no. Plus they might melt a little and be all soft and chewy and magical. Highly recommend.

Pink Puppy Chow (Vegan!) – I originally found this recipe here, and proceeded to pin it immediately because HOW cute. The only reason I didn’t make it this week is because I can’t actually be trusted with a bowl of this stuff, but 1) Valentine’s Day is for sharing and 2) this recipe seems to be slightly better for you, so I really should…but I think it would be SO stinkin’ cute to put a bag of this in your honey’s work bag so that they have a sweet treat during the day. Or, let’s be honest, just put it in your own bag because that post-lunch sweet tooth is REAL #amiright
