I recently made this vegan mac n’cheese for a giveaway with Spudsy Foods (I mentioned them in my September favorites!) and knew I had to share the full recipe on here with you guys. It’s quite possibly the easiest sauce to make – it comes together in a blender with minimal chopping – and is fantastic with any kind of pasta, although I rarely eat anything other than Banza’s chickpea pasta these days!

The “cheese” part of the sauce comes from Nutritional Yeast, which is basically a vegan supplement for Vitamin B12 and protein that happens to have a delicious cheesy flavor to it. The creaminess of the sauce comes from the soaked cashews and veggie broth, and then there’s some garlic and paprika in there too, for extra flavor! I topped this dish with Spudsy’s BBQ Sweet Potato Puffs, but you could easily just use regular bread crumbs or panko flakes!

And one last thing I’ll say: this dish even passed the bf test, which for me is a HUGE win since mine doesn’t particularly love the idea of “healthy” versions of things😂

The Ultimate Vegan Mac N’Cheese

your favorite pasta, cooked according to the directions

1/2 cup cashews soaked in water for at least 3 hours (or overnight)

2 tbsp nutritional yeast

1/2 cup veggie broth

1/3 cup non-dairy milk

1/2 tsp paprika

3-4 cloves garlic

3/4 tsp salt

1/2 cup crumbled Spudsy Sweet Potato Puffs (or breadcrumbs)

1. Cook pasta according to directions and while boiling, make the cashew cheese sauce below.

2. In a blender, add the soaked cashews (drained), broth, milk, nutritional yeast, paprika, garlic and salt to a blender or food processor. Blend until smooth. *If you need to add a little bit of liquid, add either more broth or water tbsp by tbsp – a little goes a long way!

3. Add the sauce to the drained pasta and keep over low to medium heat to warm the sauce.

4. Spoon the mac n’cheese into bowls or ramekins and top with the breadcrumbs or crumbled Spudsy puffs. Enjoy right away or bake in the oven at 300 degrees fahrenheit for 5-10 minutes. 

*Store leftover cashew cheese sauce in an airtight container for up to 3 days*

I’ve heard so many people saying that this month has totally dragged on for them, but for me it actually went by kind of quickly! Lots of movement, lots of change. It’s been exciting and stressful and interesting! Promise I will share more details very, very soon😉

This month was full of trying new products in everything from my diet to my beauty regimen and my fitness routine. I found some reallyyyyyy awesome things that have really helped me stay on track with my goals across the board and I know you’ll love them, too! Some of these items were gifts from the holidays, and some I just came across, but everything is linked so that you can find them. And now, in no particular order, my January favorites!…

Food:

Simple Mills Rosemary & Sea Salt Crackers – After seeing Simple Mills products alllll over my Insta-feed, I finally got my hands on some of these bad boys (they were on sale at Sprouts, #BlessUp). The big draw is that these are gluten-free, soy-free, and dairy free, although y’all know I’m not actually restrictive with my diet. I will say though that there’s just more nutritional value to crackers made with almond flour and honestly these crackers are just REALLY good. I ate the whole box in an hour, so that should tell you something😅

Trader Joe’s Soyrizo – GUYS. guys. Ok so I saw these written up somewhere as one of Trader Joe’s best selling products of 2017, so I decided to try using them in homemade burrito bowls for dinner one night. Full disclosure – I actually didn’t even tell my boyfriend it was vegan, and he totally loved it. The flavor is insane! And it’s really easy to make, too. I can’t wait to get it again and maybe at it to a scramble or some nachos!!

Fitness Bread – If I had to pick one thing from January that I was obsessed with, it would be this bread (pictured above as the avocado toast!). It’s by a German brand called Mestemacher and I remember my mom eating this when I was little. It’s made of rye flour, wheat germ, and oat fiber making it cholesterol free and high fiber. Each piece is thinly sliced, pretty dense, and a bit nutty. Aside from the fact that it’s got more nutritional value than many other breads, I seriously just think it tastes amazing. I’ve been seeing a lot of bloggers talking about gg crackers, and I’m not sure what the consistency of those is, but these are sooooo much cheaper. I found mine at Sprouts for like $4, but I’ve linked them here on Amazon too in case you don’t have one of those near you! I hiiiiighly recommend making your avocado toast with this. You can thank me later…

Wellness:

Garden of Life Women’s Multivitamin Gummies – If you saw my vlog, you’ll know that I take these every👏single👏day👏 I am obsessed. They taste really good, and are kind of like a little sweet treat, so that’s most likely why I like them so much #LetsBeReal…but they’re also filled with all kind of nutrients we need and may not be getting from our food. I’ve mentioned Garden of Life on my blog before, but I seriously love this brand. They make high quality proteins, supplements and bars and everything is vegan, which is always a plus!

Hair, Skin and Nails Gummies – Another one I mentioned in the blog, I’ve been taking these gummies for years. My nails are super brittle for some reason so I’ll take these in addition to the mulitivitamin above. Since the multivitamin I take contains 100% of the suggested daily value, and two of the Hair, Skin and Nails Gummies is like 1000%, I’ll just take one. That way I’m getting extra biotin without causing my body to overproduce oil (hellooooo breakouts). Just check whichever vitamins you take to see the percentage, but make sure you get enough biotin without it being too much!

Fitness:

Booty Bands – My brother bought me these for Christmas after I kept seeing booty band workouts on YouTube and I’m in LOVE. These are so great for glute activation before a workout, or even just a booty band workout in itself! I’m really trying to work on my tush before summer (it’s one of those areas I’m just overly self-conscious about for no reason) so having the bands for extra resistance allows me to work them a bit harder. I promise I’ll put a workout with these up soon! Don’t let me forget…

Ab Gliders – So these were also part of that same holiday gift, and I also think they’re an essential for any home gym! You can put your feet or hands on them, and they work on any kind of floor since they just slide along. If you’ve ever used a pilates reformer, it’s kind of the same sensation in that you really have to engage your muscles so that you’re not just sliding all over the place. These prove that you don’t need any fancy equipment to work your core (or anything) else, though!

Beauty:

OleHenriksen Banana Bright Undereye Cream – Full transparency on this one, I received this as a free sample so I didn’t necessarily have high hopes, but I am looooooving this cream. I’m not sure if it really brightens the undereye so much as makes it hydrated and smooth, so it’s a perfect base for concealer (a must for actually looking like I get enough sleep!).  I think my favorite part of this product is just the fact that it makes me feel like I have a real skincare routine now – something I never had before and feel is increasingly necessary as I get older! It has vitamin c in it, which is apparently very good for the skin, so I’ll take it!

Aesop Hand Cream – This was a gift from my coworker and oh MAN does it make me feel fancy! I know this one isn’t cheap, so I’m extra thankful it was given to me (thanks Shane!) because it is sooo luxurious. If you read my post on my focus words for 2018, you know I’m trying to focus more on loving myself, which essentially means splurging on the things that make me feel good. Bath and body products are 100% included in this because can you honestly tell me anything better than a hot shower at the end of the day that makes you feel like you’re at a spa? So yeah, putting this hand cream on after that shower makes me feel like a straight up QUEEN and I highly recommend it!

Murad Time Release Acne Cleanser – I don’t know about you, but I have been maaaaajorly struggling with my skin these days. I wouldn’t call it adult acne necessarily, but it’s not that far off and as someone who didn’t really have acne before, it makes me super frustrated and self-conscious. I’ve tried a ton of cleansers in the last year and the only one that seems to make my skin feel really clear is this one. I’ve been using it for about two weeks now and love it so much. It’s slightly more expensive than other cleansers, but definitely cheaper than many and it comes in a huge bottle. I think it’s SO worth it if you’re having trouble finding something that works for you!

I hope everyone had a wonderful holiday! I obviously wanted to take some time this week to just soak up as much time with my family as possible, so I did take a mini blog-break. As I sit on the train down to D.C., I’m feeling so unbelievably grateful for having the opportunity to travel home for the holidays and to work remotely. I hope you all were able to, as well!

This year has been pretty nuts in so many ways, particularly for the world (and this country) in general, but personally I experienced a ton of personal growth, adventuring, and figuring out where I want to be in life. I expanded my skillset professionally, started growing my blog, strengthened new and old friendships, moved into a new apartment with my boyfriend, and traveled to so many new places. It’s been quite the year!

I just want to thank you all so much for reading my blog, you have no idea how fulfilling it has been to create content and have this creative outlet. Reading your comments and hearing your feedback makes me so happy, and I’m honored to be able to share this bit of my life with you. Well, we made it to the Friday before Christmas😍

I’m actually writing to you from my parent’s house in New York (is it weird for me to still call it MY house? Because it’s totally going to be home for me always). I feel so freakin’ lucky to have been able to come home for both Thanksgiving and Christmas this year, since that hasn’t actually happened in 7 years! It feels so unbelievably good to be here, even if I have to work a bit remotely. Thank goodness for the digital age, #amiright?

Before I leave you for the holiday weekend, I just wanted to wish everyone a wonderful Christmas (if you celebrate) and even if you don’t, I hope you have time to relax, eat some delicious food, and be with friends and/or family. Is it just me or is this time of year the BEST because it reminds you of all the things you’re grateful for?

I’ll be spending most of this weekend baking cookies, sitting by a fire, and catching up with loved ones! I hope you get to do a version of the same😊 And now, back to our usual weekly roundup. They are some awesome last minute gift ideas in here!

Vegan Maple Lavender Shortbread Cookies

GUYS. We are 5 DAYS from Christmas. I repeat: 5. Days.

To say I am excited would be the understatement of the century. I’m literally counting down the minutes until I get to see family and friends, bake a crap ton of cookies with my mom, and spend my first holiday ever with my boyfriend. PUMPED.

Okay now that I’ve exploded with holiday cheer, let’s move on to more pressing matters: these COOKIES. Let me express to you just how good they are – I’m rationing them so that I don’t run out before I go home for the holidays. Like instead of shoveling them all in my mouth at once, I’m actually savoring them bite by bite and THAT is saying a lot. And before you go thinking I’m all full of myself and stuff because I made a recipe that is full on inspiring me to possibly open up a bakery someday, I just want you to know that I legitimately set out to make these as an experiment and thought they might turn out terrible and crumbly and dry like lots of healthy desserts are…but! Thank cookies could not be more opposite of that.

I don’t even know how these have zero dairy in them…it’s kind of mind-blowing. And they 110% do NOT crumble. Isn’t that nuts?! That’s like my biggest pet peeve with some shortbread recipes. I think the best thing about these guys, aside from them being vegan friendly, is that they’re just the riiiiight amount of sweetness. Apparently there are people in this world that don’t love desserts and sugary things (WHO ARE YOU PEOPLE AND WHERE ARE YOU FROM), but these are the perfect cookies for those people.

And I know these are super Christmas-y or seasonal or what have you, but I think that’s what makes them perfect for the holidays. I think we all tend to OD on the rich stuff, the peppermint and chocolate and pecan and all that, so to have something a bit lighter as an option is nice! I know lavender isn’t something people always have on hand, but this recipe coupled with my lavender almond milk latté should give you enough reason to stock up now😉

Vegan Maple Lavender Shortbread Cookies

1/2 cup coconut oil (cooled & hard – pop it in the freezer for a sec if you need to!)

1/3 cup natural powdered sugar (*check this list for vegan sugar brands!)

1/4 tsp sea salt

1/2 tsp Lavender Flowers *go for culinary grade!

1 1/3 cup all-purpose flour

3 tbsp maple syrup

3 tbsp non-milk – coconut, almond, soy, etc.

1. Preheat the oven 350 degrees fahrenheit and line a baking sheet with parchment paper (ideal, but if you don’t have any just use lots of coconut oil!).

2. In a large bowl combine the coconut oil, powdered sugar and sea salt with a fork until all the sugar is combined and light & fluffy (might take a minute or so depending on your arm!).

3. Add the lavender flowers, then the flour 1/3 cup at a time and use your hands or the fork to combine. Don’t use an electric mixer for this one!

4. Finally, add the non-dairy milk and the maple syrup one tablespoon at a time and be careful not to not overmix! The dough may seem dry but try not to add any extra liquid here as it will mess with the consistency of the cookies.

5. Lightly dust a cutting board or clean surface with flour. Form the dough into a ball and then roll it out until it’s about 1/4 inch thick. Use a cookie cutter, mason jar, or glass to form the cookies into shapes.

6. Place the cookies on the parchment paper and bake for 10-12 minutes. *Check on them at 10 minutes just in case! You’ll want to take them out when they’re juuuuust starting to brown on the edges. They overbake quickly!

7. Let cool completely before noshing – I promise they’ll taste better this way! Store in an airtight container for up to 5 days.

Peppermint Brownie Protein Bites

How is everyone doing?! Counting down to the holidays like me? This season tends to be extra crazy at work what with prepping content ahead of time to accommodate everyone’s vacation schedules (I work in social media marketing), so a vacation will be much needed when we finally get to it! I’m not gonna lie though, I always love the weeks leading up to Christmas (and Hanukkah!) because they’re so fun and festive. We went to our first holiday party last weekend and have another this weekend and I don’t think anything beats mulled wine and Christmas cookies.

That being said, I am trying to make sure I’m taking care of my health before things really ramp up, much like I was before Thanksgiving, because I tend to crave only sweets around this time and unfortunately that just ain’t gonna cut it, sister. I’ve been adding extra greens to my smoothies, extra veggies to my lunch, and trying to get my sweat on in some capacity every single day. Since we all know I’m a big snacker, especially when I need to fuel myself through a workout, ideally I like to combine my sweet tooth with my commitment to my health. And can I tell you? It’s actually reallyyyyy easy to make super delicious “treats” that are full of nourishing ingredients. Just ask my boyfriend – I told him these brownie bites were healthy and his mind was blown. He literally said, “but they don’t taste healthy.” MISSION. ACCOMPLISHED.

I know “healthy” is a relative term, but if chia seeds, rolled oats and nut butter aren’t good for you, I’m not sure what is. These are gluten-free (as long as your oats are) and packed with an insane amount of protein. They also take about 6 minutes from start to finish which is kind of outrageous. My absolute favorite part of them, though? The collagen.

I’ve started incorporating Further Food collagen into my diet (as I mentioned in my November favorites!) and this stuff continues to blow my mind. Dairy free, gluten free, non-GMO, sugar free and organic, collagen helps improve gut health, bone strength, and hair/skin/nails. Apparently in our 20’s we start producing less collagen than before, which can lend itself to saggy, wrinkly skin, weak bones, and achey joints. Nooooo thank you. By adding collagen into our diets through supplementation, we can help prevent and reverse this process. AND! And. It has protein, which helps keep you full and can prevent overeating. Yes. Please.

This means I can put it in my coffee, smoothie, oatmeal, yogurt, hot cocoa, fancy golden milk latté, or even WATER without even noticing. Anywayssssss, these little babies are basically winter goodness in a ball, and they are perfect for when you’re craving something slightly sweet! They’re kind of like how dark chocolate is – a bit sweet but not too much so. If you like things on the sweeter side, I might add a touch more honey. Up to you, though!

Peppermint Brownie Protein Bites

(makes ~12)

1/2 cup oat flour (just pulse oats in a food processor!)

2 tbsp chocolate protein powder (Garden Of Life is my fave)

1 serving collagen

2 tbsp cocoa powder

2 tbsp almond butter

2 tbsp honey

3 tbsp almond milk

1/8 tsp peppermint extract

1 tbsp ground chia seeds (whole works, too!)

1. In a large bowl, combine all ingredients and stir until wet are completely mixed with dry. Use your fingers if you’ve got to, and if it feels too dry after about 30 seconds of mixing, add a touch more almond milk. You shouldn’t need any, though 🙂

2. Shape into 1 inch balls and let harden in the fridge for at least one hour (or freeze ’em for 30 minutes!). Will keep in the fridge for up to one week in an airtight container.

How is everyone doing today?! I know things have been pretty busy over here trying to get ready for holiday vacation, but I’ve been doing my best to enjoy this time before Christmas when things are kind of extra magical and festive! I definitely need to make my usual holiday cookies and other winter-themed goodies, but lately I’ve been sipping on this lavender latté I’ve made on the daily with a lavender simple syrup I whipped up last week while playing Billie Holiday…it was kind of the most perfect night ever, tbh.

We were recently given a GINORMOUS bag of lavender from one of Alex’s family members who was staying on a farm a bit north of LA, and we weren’t quite sure how to use it. After getting some of your opinions on Instagram, I decided to go with a simple syrup since we can use that to flavor anything like coffee drinks, cocktails, and even food! I don’t actually keep regular white sugar in the house (although I’ll need to stock up if I’m going to make my Christmas cookies!), but I did have coconut sugar. And from there, the coconut sugar lavender simple syrup was born!

The simple syrup takes all of about 10 minutes to make + cooling time, and the latté is super quick, too! It’s not overly sweet, so sometimes I’ll actually add a half of a stevia packet too, if that’s the kind of drink I’m craving. If you’re not into coffee at all (regular or decaf…which I’ve been making in the afternoon!), you could totally just leave it out and make warm lavender almond milk. That actually sounds kind of amazing?!

Coconut Sugar Lavender Simple Syrup

1 cup water

2 cup coconut sugar

2 tbsp lavender flowers

1. In a saucepan, heat 1/2 cup of water over high. Once boiling, add in the coconut sugar and lavender flowers, and lower the heat to medium. Continue to stir so the mixture doesn’t burn for about 10 minutes. *You’re technically supposed to use a candy thermometer here, but homegirl doesn’t have fancy tools like that in the kitchen…

2. After about 8-10 minutes, remove the pan from heat and let it cool. Pour into a mason jar over a strainer to strain out the flowers. Store in the fridge for up to a month.

Almond Milk Latté

1/4 cup unsweetened vanilla almond milk

1-2 shots of espresso or 1/2 cup coffee

1 tbsp coconut sugar lavender simple syrup (recipe above!)

1. Heat the almond milk in a mug in the microwave for 1 minute (or over stove in a saucepan, but it’s slower!). Use a  frother to make the milk super creamy. *If you don’t have one of these, I highlyyyyy recommend getting one!! I use mine everyday. Otherwise, you can use some muscle power and a whisk!

2. Add in your espresso or coffee, lavender simple syrup and stir to combine. If desired, add extra sweetener like stevia or honey.

p.s. I only topped mine with the lavender because it looked so crazy beautiful, but if you decide to do that (for Instagram, duh), I would suggest removing the flowers before drinking. They don’t taste amazing straight up!

I definitely did, but also somehow been unbelievably sick with a cold (and possibly sinus infection?) for a week now, so I had planned on blogging earlier this week and then plans got derailed! My apologies. Either way, I’m back today with another roundup of my favorite foodie finds from the month of November. And friends, it has been a good one.

GT’s Living in Gratitude Kombucha – So I know this one isn’t totally fair to post since I’m not actually sure if this flavor is available everywhere, but I felt like I needed to include it because not only was it one of my favorite drinks from this month (obviously), but for every photo of the bottle posted to social with the hashtag #LivingInGratitude, GT’s donates 10 meals to those in need via Feeding America. I think that’s super freakin’ cool guys, but also, it honestly just tastes amazing – not as sweet as apple cider, but definitely hints of that flavor, plus warm & cozy spices. SO good!

Further Food Collagen Peptides – So full disclosure, I took biotin supplements for years and still do on days I don’t have collagen, but I will tell you, this stuff is soooo much better than that. Wild Friends Gingerbread Peanut Butter Blend – GUYS. guys. I cannot stress enough how unbelievably EPIC this nut butter is. I literally didn’t want to have more than 2 tbsp on any given day because I was so afraid to hit the bottom of the container and that is saying a LOT. I generally go through peanut butter faster than you can say Christmas. But seriously, this stuff is winter in a jar, slightly sweet but so, so perfect. I put it on top of pancakes, yogurt, bananas, oatmeal…UGH. I actually miss it as I’m talking about it, so I think I’ll go buy another jar tomorrow…

Lantana Foods Beet Hummus (up there in pink!^) – I’m not going to lie to you, I originally bought this stuff because it was just so dang gorgeous. Like okay, I’m one of those people that thinks food tastes even better when it looks good, y’know? But the taste of this stuff 100% lives up to its looks because I’ve been adding it to every grain bowl and salad in site and it has been delicious. I got mine at Sprouts along with the Sriracha Carrot kind (also amazing!!) but I want to try their other flavors, too! Hummus is the BEST.

Moon Deli Golden Turmeric – So if you haven’t seen Moon Deli floating around the wellness world yet, let me be the first to tell you that their powders are incredible. I have a few of their tonics, but the turmeric powder has made it especially easy to make those beautiful & tasty golden milk lattes that are all the rage these days. I simply add one teaspoon to a mug that’s filled with half hot water and half hot almond milk, plus a touch of stevia. It’s one of those things I just feel good drinking. And it goes back to my earlier point in that it’s easy on the eyes, too😉

Wanu Water –  Hydration is unbelievably important to me (and admittedly not something I thought about until a few years ago, if I’m being honest!). I’m super conscious of having water by my desk always and drinking plenty before/during/after workouts. That being said, something plain ol’ water gets kind of boring…to me, at least. I avoid sugary drinks like artificially flavored waters or teas just because I know they have absolutely no nutritional value whatsoever, so when I find an alternative that’s flavorful but also is good for my body, I am IN. I’ve been absolutely loving wanu water since it’s infused with vitamins, minerals, antioxidants and even fiber. It’s also sweetened with stevia and monk fruit without being sickly sweet like so many drinks out there! My favorite flavors are Kiwi Cucumber and Strawberry Serrano Lime. SO good, y’all!!
