Apple Spice Blondies [Dairy + Gluten Free!].

Ahh Monday, we meet again. Am I ready for you? I’m not sure…

What I am sure about, however, is a weekend that’s the perfect combination of relaxing and productive makes it easier to head back to work when it’s all over. I’ve recently gotten back into meal-prepping and it is making my life about a billion times better! Just less to worry about during the week, like knowing I already have a healthy lunch packed to take with me or dinner all ready in the fridge when I get home.

One key part of meal-prepping for me is making healthy snacks and treats. If I don’t have snacks ready to go, I will 100% reach for the candy at work instead or impulse-purchase the chocolate bars that are just kind of waiting for you while you check out at Trader Joe’s…don’t tell me you don’t know what I’m talking about. Those things are goooooood! And we all know I’m about balance aka shoveling in some chocolate every once in awhile, but I also like to eat things that satisfy my sweet tooth without making me feel like crap afterwards.

This week I went with a recipe I’ve had pinned for at least a year, but could never make because I didn’t have coconut flour. This morning on my way back from the farmer’s market though, I finally got it!! I went with Bob’s Red Mill, since I know their products are super high-quality, and so far I can tell you it does not disappoint! That, peanut butter, unsweetened applesauce and  maple syrup basically make up this entire recipe. That’s it! No butter, oil, milk, sugar or eggs. How awesome is that?! You literally throw everything in a bowl, plus some spices, and call it a day. Then 30 minutes in the fridge and BOOM. Blondies. *drops mic*

Apple Spice Blondies

(adapted from this recipe)

1/4 cup coconut flour

1/2 cup peanut butter* (choose one with just peanuts, nothing else!)

1/2 cup unsweetened applesauce

3 tbsp maple syrup

1/2 tsp cinnamon

1/2 tsp nutmeg

*you can use almond butter here, but I went with peanut because it’s cheaper!

  1. Preheat the oven to 350 degrees fahrenheit and grease a muffin tin with coconut oil or vegetable oil spray.

2. In a large bowl, combine all ingredients and stir until completely combined. The batter will be thick, which is a good thing!

3. Spoon the batter into the muffin tin so that each cup is about halfway full (these don’t rise, so you can always fill them more, but you’ll make fewer blondies and will need to cook them for longer!).

4. Bake for 30 minutes, then cool for 15. Carefully spoon the blondies out of the tin (they crumble easily!) and eat right away or store in an airtight container in the fridge. Enjoy 🙂

4-Ingredient Chunky Monkey Cookies (With Golden Raisins!)

GUYS. I know I pretty much start every post by freaking out, but this time it’s actually warranted. In exactly one week at this time I’ll be home in New York with my family sitting on my couch drinking hot chocolate and looking at all the beautiful Christmas decorations my parents have put up. I cannot WAIT.

Know what else I can’t wait for? The baking. Ohhhhh the Christmas baking is the BEST! My mom and I go ALL out. We make a mess, we laugh, ingredients get left out, things get burnt, but it might just be my favorite moment of the year. Do I sound like Cindy Lou Who, yet?

Until then though, I’m trying to lay off the sweets as best as I possibly can since I know I’ll be indulging like it’s my job in just a few days. Since we all know I have a raging sweet tooth, that especially likes to pop up just when I’m trying to be good, I obviously still need some sort of dessert ’cause #letsbereal. These 4-ingredient cookies are quite possibly the most delicious healthy cookies I’ve ever eaten. They’re also gluten-free, vegan (if you use vegan chocolate chips!) and fairly low sugar (if you don’t use as heavy a hand as I did pouring in the chocolate and raisins…). They require about 15 minutes of work (max) and are even acceptable as breakfast. What could be better?!

4-Ingredient Chunky Monkey Cookies With Golden Raisins

1 cup quick oats (or rolled oats pulsed in a food processor 3x)

1 large ripe banana (not too ripe otherwise it’ll be too sweet!)

1/3 cup mini chocolate chips (vegan if desired)

1/3 cup golden raisins

  1. Preheat the oven to 350 degrees fahrenheit and cover a baking sheet in parchment paper.

2. In a large bowl, mash the banana until smooth. Add in the oats and mix to combine. This might take a few minutes, but you’ll want to make sure it’s mixed evenly. Add the chocolate chips and raisins, and stir just until combined.

3. Form 1-2 inch balls with your hands and place on the baking sheet. The dough will be wet, but using a spatula will make sure you get all the batter, and since these cookies won’t spread much it’s okay to put them close together!

4. Bake for 10 minutes, then remove to cool. Store in an airtight container for up to 5 days.

Happy Valentine’s Day! [+ a last minute dessert idea]

I know I disappeared last week, but I wanted to pop in and say how much I appreciate all of you, and that I hope you’re all doing something today with the people you love, whoever they may be! For me, Valentine’s day isn’t about being in a relationship, mostly because if you are then you should really be celebrating your love everyday…amiright?! I think it should be a day to be grateful for the people in your life and show them how much you care. Whether you’re out and about with a partner, hanging in with your girls and chillin’ it solo, don’t forget to do something for yourself, too 😉

White Chocolate Candy Hearts Popcorn

6 cups popped popcorn

1 1/2 cups white chocolate chips

2 cups candy conversation hearts

1/4 cup rainbow sprinkles

  1. In a microwave safe bowl, heat the white chocolate chips in the microwave at 30 second increments, being sure to stir at every interval. *I often check mine after 15 seconds when I think it’s almost done!

2. While the chocolate is melting, lay out your popcorn on a baking sheet lined with wax paper.

3. Drizzle the white chocolate over the popcorn, sprinkle on the candy hearts and top with the sprinkles. Let cool for 15 minutes.

4. Break up the popcorn into pieces and enjoy or store in an airtight container for up to 5 days. <3

My thesis is OVER and I go home in less than a week. I cannot wait! I’m trying to pack these last few days in with some holiday activities and last minute Christmas shopping in between jobs. I have to say though, working in social media is kind of fun around the holidays and incorporating  holiday cheer into brand messaging is much more enjoyable 🙂

Anyway, enough about me! Today I’m bringing you a super easy, healthy holiday treat to make it through this last full work week before the holiday break. It’s small batch too, so you don’t need to worry about indulging too hard before the full-on Christmas cookie madness begins! But, if you’re like me, you need a little somethin’-somethin’ after dinner to satisfy your sweet tooth, know what I’m saying?

4-Ingredient Dark Chocolate Peppermint Truffles

(makes 5 large truffles)

1/2 cup unsweetened cocoa powder

1/4 cup unsweetened applesauce

1/8 tsp peppermint extract

1 tbsp honey

powdered sugar to coat (optional)

1. In a medium sized bowl, combine all ingredients.

2. Mix until the ingredients are well-combined and all the cocoa powder is moistened. This should take about 2 minutes, so keep going even if it doesn’t look like anything is happening! Feel free to add an extra teaspoon or so of applesauce if it’s not coming together.

3. Tablespoon by tablespoon, roll the cocoa mixture in your hands until a ball forms. Continue until the mixture is completely rolled into truffles.

4. Roll in confectioner’s sugar if desired and freeze for at least 20 minutes before eating or store in the fridge for up to a week in an airtight container.

I don’t know about you guys, but over here in LA it’s still occasionally in the triple digits, so fall is nowhere near. As depressing as that may be, it’s giving me a chance to keep on eating summery things which is more than okay. I got creative this weekend when making a dessert for an Emmy’s party since I was not about to turn on the oven.

I whipped up a batch of my healthified banana pudding a day early (best for letting the flavors combine and the nilla wafers to soften) and it did not disappoint! The entire recipe is just 4 ingredients and takes maybe 10 minutes from start to finish. Then you pop it in the fridge, let it do it’s thing, and dig in! Simple and satisfying.

Guiltless Banana Pudding

1 package fat-free, sugar-free vanilla pudding (NOT banana!)

2 cups skim milk

2 ripe bananas, sliced

~2 cups reduced-fat Nilla Wafers (I used about half the box)

  1. In a large bowl, whisk together the vanilla pudding and skim milk until combined and smooth.

2. In a small pan, evenly layer the Nilla wafers. Top with the vanilla pudding in a thin layer, then the sliced banana. Repeat until all the pudding is used and top with crumbled wafers.

3. Cover and store in the fridge for at least 6 hours or overnight (the longer the better!).
