What I Ate in the Outer Banks (and a Vlog!)

Somehow, two weeks in the Outer Banks for our annual family vacation came and went even faster than ever before!

I miss it already, but writing this helps me remember all the wonderful memories we made, despite this year looking a bit different than other years! this trip usually lends itself to “social distancing” anyway, since we mostly just cook, hang by our pool and go to the beach! We did dine outside once at our favorite restaurant Metropolis, but otherwise, there was a ton of grilling, takeout, and making meals at home. It’s safe to say I ate like a friggin’ queen, with a few green smoothies in between 🙂

Trust me when I say I ate my ~bodyweight~ in bagels #noregrets. Lighthouse Bagels is my absolute FAVE, like no joke, even better than the bagels I get in NY! The line is long, but worth it.

One night, Alex and I made the Skinnytaste Chicken & White Bean Enchiladas and they were an absolute hit!! Definitely going to be making these again back home in LA – I’d just recommend doubling the recipe for the filling!

I know that’s not the greatest picture in the world, but we made toaster-oven s’mores and they were PERFECT. And so easy! You basically just layer on the first half of the graham cracker, chocolate and the marshmallow, then “toast” it at 350 for a couple minutes. No need for a campfire!

I went to a new place called the Juice Jar one day when I was craving an açai bowl! It was a little expensive but SO good and hit the spot on a hot day. It’s in a little area called Corolla Light Village with some other cute restaurants and fun shops!

We couldn’t go to OBX and not get our favorite ice cream from Big Buck’s!! I tried the salted caramel pretzel and it was so freaking good.

There was also a LOT of fresh fish eaten – it’s always so freaking good down there!! We’d have ahi tuna, salmon, swordfish and crab with grilled veggies and brown rice or couscous. Delicious and healthy!
