I apologize for the late post today, I actually broke my elbow rollerskating at an event Tuesday night and my week has been a bit thrown off ever since! Thank goodness it was my left one and not the right, otherwise I’d be totally screwed (I’m a right-y)! I’ve got about 5 more weeks of down time, but the pain isn’t too bad, it’s mostly just annoying!

Now that we’ve got that life update out of the way, let’s get to the good stuff! It’s the start of a long weekend here in the US and I’m soooooo freakin’ excited to have an extra day off! My best friends from college are in town about an hour away, so I’ll be spending time with the, at the beach, and hopefully laying low!

Here’s what I’ve been reading this week:

Sheet Pan Hawaiian Shrimp & Rice – Since I won’t be in HI anytime soon, I think this dinner might be a summer staple in this house!

5 Zero Waste Kitchen Swaps That Are Totally Doable – Ok I OVE these, I’m trying to live a more green life and these really are so simple.

The Ultimate Guide to Essential Oils: Uses, Benefits, Extraction and How To Use Them – Do you guys use essential oils? I don’t but I’m about a hop, skip and jump away from buying a cute diffuser…

Balsamic Grilled Vegetables – Because balance. Grill some veggies and then pair ’em with a burger (veggie or meat, your call?), some coleslaw and maybesome french fries for good measure.

The Best Memorial Day Sales to Shop This Weekend – Plz pray for my wallet?

Memorial Day Recipes and Easy Grill Tips from the TIU Girls – I would listen to anything these two say but the recipes legit sound amazing!

The #100SquatChallenge – Since my elbow is putting a major damper on my workout plans, squats and lunges are about the only thing I can do right now! Who wants to join me in this?!

    Ahhhhh no! I’m so sorry to hear that you broke your elbow. Getting injured is the MOST frustrating. But like you said, bring on the squats!
    I love the zero waste swaps. Ben and I have gotten SO much better at being aware of what we use and now only use glass in our kitchen and are obsessed with glass jars. We store everything in them!
    Those veggies look delicious. I need to mix it up because I’m hitting a veggie rut and this is perfect!
